The Refried Bean Secrets Mexican Restaurants Use – 3 Stages for Tacos, Tostadas & More

I used to own a Mexican restaurant in the Rio Grande Valley and the amazing chefs I worked with taught me the secrets of refried beans these refried beans are sometimes called runny sticky Fritos which means refried and refried and the first secret is that it all starts with a good and simple pinto bean recipe today we're going to show you Terry's favorite bean recipe this is the one we use the most in our house it's real simple easy to make and delicious and I think you're gonna love it for Terry's favorite pinto bean recipe we're going to use two and a half cups of casserole pinto beans these are our favorite brand of beans two strips of thick cut Hickory and Mesquite smoked bacon about half of a j b salt pork you can use a little more or a little less of each of these ingredients to your preference we're also going to add two teaspoons of apcog which is your salt pepper garlic you can salt to taste later the cooking process for these is super simple in the crock pot no soaking needed you just need to set it to high to get them simmering check it every hour or so with a little stir depending on the crock pot these should take about four to five hours and bonus in this video we're going to show you what I call the three stages of refried beans stage one is what I call the runny Bean perfect for scooping up with a Mexican spoon stage two is the a little dryer Bean cooked with a little lard perfect for spreading on a tortilla or a plate the flavor is great oh baby stage three we had a little more yummy lard and take them to a little toasty finish incorporating all the yummy crispy goodness from the bottom of the pan I love these for chalupas because they won't make your tortillas soggy and the flavor oh baby the flavor is several notches above the other two we're going to put them in the crock pot we're gonna go outside and drink beer all day and then come back later and eat Bean I'm just kidding all right we're gonna take two and a half cups that's about two and a half put them in here go over here and rinse them big question a lot of people ask is do you soak your beans overnight or for a few hours we never soaked beans we've tried it I think they just cook better and taste better if you don't soak them but that's my opinion you do the beans the way you like so in this crock pot with two and a half cups of beans we used six cups of water I like to get the water in the crock pot with the beans first while I cut up the other ingredients we're going to put these two garlic cloves in here at the beginning this is clove number two that goes in there as I mentioned earlier Terry likes to use two strips of bacon I'm going to pile them up and then I'm gonna just cut them up into small pieces I like these tiny pieces because when they cook they shrink even more so you get some delicious bacon with every spoonful of beans and yes I know if you fry the bacon first it adds another wonderful flavor but this is just a simple crock pot recipe that is still very delicious I'm going to take a little bit less than half and cut that up into the crock pot it goes now we need two teaspoons of OG this is salt pepper and garlic I like to put it in at the beginning give it a nice little stir mainly you want to get the salt the garlic and the pepper kind of stirred up with the water all right we're going to put our lid on it all right you see with the crock pot you don't need to pre-soak the beans this has been an hour into the cooking process and they're still not even simmering just give them a stir come back a little bit later about every hour give them a stir all right it's been three and a half hours they have a really nice color you can tell they're cooked but they're not quite as soft as they need to be so we're going to give them another stir and give them about another 45 minutes to an hour from here they're very versatile and you can do a lot of different things with them when the beans are done you want to turn off the heat let them sit for about 20 to 30 minutes at least we noticed that the richness and the flavor of the bean comes out into the broth as they rest and start to cool off and it kind of reminds me of a steak when you cook a good steak egg you always put it on the plate or on a cutting board and you let it rest a little while we're going to put some beans in my little Bowl here now everybody's a little bit different we like beans with a lot of broth at least I do you know I gotta have some of my homemade salsa in my beans that should do the trick all right friends let's give these beans a taste test they're very hot so I'm just going to get a little bit um [Music] very very good they need a little bit more salt we only put two teaspoons of the apcog the salt pepper garlic you always want a salt to taste at the end yeah buddy we're going to show you three different ways you can enjoy your beans after they're cooked and after they're cooled the next day like for breakfast for a snack or for a really cool dinner so y'all stay with us follow along we're going to show you the three different stages is what I call it of refried beans just got the beans into our little pan here we're gonna season them up with a little bit of OG so we're putting a little bit of salt pepper and garlic all right now I call these the runny beans so I'm gonna put a little bit of water in here now remember we have bacon and salt pork in here so there's little chunks of bacon and salt pork in there the only thing we added to this little batch is water they're starting to warm up I see a little Sizzle going on here so we're going to go ahead and start smashing them oh boy if you guys were here and could smell the aroma they look a little white as you can see part of that is because we have a little bit of bacon and a little bit of salt pork in there all right these are looking really good they're smelling even better wish you were here these are just about done folks we got them all smashed up they're looking good and this is what I call runny refried beans look at that if you leave the lid off and you keep cooking them at high heat like I have right now they will dry out as the water evaporates you'll see a little steam coming out and whatever but that's a different stage of the refried beans get a little plate here we have a couple of breakfast eggs we're gonna take some of these runny beans and just kind of serve them on the plate just like this that's some really good eating right there this is the Mexican spoon right here the flour tortilla with some runny beans in it yeah buddy all right friends we're moving on to stage two of refried beans whenever you go to a Mexican restaurant and you wonder why their beans are so delicious and what is it that they do to those beans the secrets right here my friends it's lard we're gonna put about a tablespoon of lard in here remember we already have bacon grease in there and we have some of the grease from the salt pork so we're going to let that dissolve and cook it into the beans if you don't have lard or you don't want to use the lard you can use butter that really really kicks up the flavor of your beans we're going to add a little bit more OG like we did the first time all right we've got some heat going on here let's start smashing away so we're gonna smash smash smash so our Lard has melted when the beans are kind of light colored a little wider looking it is usually because of the lard we're going to let them cook and dry out a little bit you want them really nicely smashed all right now while that's going on you want to get a little spatula like this and you want to get the beans from the side you want to all get in there and incorporate together see where they're starting to toast a little on the bottom look at that that's what you want to see right about now that's what we're looking for in stage two all right friends you see how they're starting to dry up they're steaming off all that water this is the perfect texture for a bean and cheese taco like I'm fixing to make right here we're gonna put some cheese on here and yes of course some of our needs fresh homemade salsa gotta have that friends this is stage three look what happens to the beans now you got all this yummy goodness down here you want to scrape all that off you want to let them continue to get hot and cook you want to get all of this delicious yummy stuff off the bottom here let's put a little bit more lard in here all right we're going to incorporate that lard in here let them continue to cook with a little bit more lard again like I said folks you can use butter the butter at this stage tends to burn so it's really better if you use some bacon grease or some lard you see all that brown crunchy delicious yummy stuff from the bottom this is some really good flavor on beans all right so there you go friends we're in stage three beans and they get nice and dry they just slide around just like that we're stage three refried beans you can cook them a little bit longer if you want you can get some more of this yummy good stuff off the bottom here but you don't really have to at this point we're done all right my friend our chalupa is made with those super delicious stage three beans I like to shake a little while it just adds another wild flavor just really good of course I gotta have a little bit of salsa on everything that I eat Mexican food wise so we're going to put a little bit of that in the middle there now we're going to go ahead and take this a nice big bite of this delicious looking chalupa ah we're gone man my friends those stage three beans they're delicious on a way other level many notches above a plain refried bean um wow we had a really good time
