hello this is chef john from food wishes comm with sloppy joes that's right the cafeteria classic i mean where you gonna go out and buy one of these if you want these you probably got to make them at home but that's good news because this recipe is unbelievably delicious alright we're going to take 1/2 an onion and a pound and a half of extra lean beef that's right extra lean when's the last time I told you to use that in a cold saute pan ice cold turn down medium and then start a cooking in a crumbling because that's a secret to sloppy joe all right you want to start in a cold pan and keep stirring and mashing it and you will get what we call in culinary school complete crumble ization all the beef has to be crumbled down into small bits that's what gives it that really great texture alright so once that happens we're going to add some fresh garlic give that a stir add a diced green bell pepper give that a stir and we're going to saute that for another 2 or 3 minutes and then we're going to add a cup of water and that's basically going to deglaze any meat juices from the bottom and believe me there will be meat juices caramelize down to the bottom so you want to deglaze those with a little water for the rest of the ingredients we have ketchup all right we'll stir that in we have brown sugar we have a mustard Dijon or yellow a little bit of wish' sure some black pepper some salt the exact amounts so crucial so make sure you go to food which is calm to get the ingredients alright I'm going to add one more cup of water which is unusual but that's my secret bring this to a simmer turn it to low and simmer it until the waters gone and you have a thick succulent beef paste alright it's going to take about a half-hour to 45 minutes but eventually the water will evaporate and you'll just be left with that amazing sloppy joe filling I mean it sandwiches a sandwich but this stuff is a total meal because I paraphrase a very old commercial all right so once it looks like this you're getting close you want to taste and adjust the seasoning a little salt maybe a little pepper maybe you know because it's me I'm going to go with a little cayenne pepper because this is kind of a sweet filling I think the heat works perfectly and that's it how you know you're done well first of all the water will be evaporated and you'll have like a thick mixture but it needs to stand up on a spatula if you put a big huge mount on a spatula like that and it stays on there you're good to go and the true test of course is if you bite in to your sloppy joe it's got a sort of stay together it's got to be a little sloppy because you know it's called sloppy joe it shouldn't be super sloppy just sloppy enough so anyway slap that on some hamburger buns sesame seeds optional what is an optional service next to some tater tots what's the last time you had tater tots probably about the same time you had your last sloppy joe anyway I hope you give this retro classic a try it really is delicious and fairly healthy because we use the extra lean ground beef so anyway go to the site all the ingredients are there and as always enjoy
