How to make Natchitoches Meat Pies from scratch

[Music] hey what's up everybody I'm Shelly and today I'm gonna be showing you how to make my delicious Nacogdoches meat pies this recipe makes up to about 20 or more individual medium-sized meat pies and it's perfect for any type of party or gathering you may have and it is also one Louisiana's most popular foods so let's get started here is all what you will need to make your Nacogdoches meat pies you will need 1 pound of ground beef and 1 pound of ground pork and this is a lean ground pork that I'm using you'll also need some all-purpose flour salted butter at room temperature shortening at room temperature canola all for your seasons you will need one yellow onion bell pepper garlic and for your additional season you will need some salt Tony Satter is Creole seasoning now if you don't have this you can use as a dorrance Creole seasoning but a slap your mama Creole seasoning you will also need some chef poppadoms poaching magic cayenne pepper and some black pepper for your tools you'll need a rolling pin and a pastry blender and there you have it chopped 1/2 of a yellow onion make sure you move the core out of the center of your bell pepper before you chop it chop a half of a green bell pepper here I have four cloves of garlic we're gonna chop that up and tell us minced now let's get started with our pie crust add three cups of all-purpose flour 1/8 teaspoon of salt 9 tablespoons of salted butter at room temperature and nine tablespoons of shortening at room temperature using a pastry cutter cut the butter and shortening into the flour and this is how it looks when we're done it's gonna be a nice creamy texture exactly what we're looking for add a half a cup of cold water stir all your ingredients together you're gonna stir this until it becomes the dough now you can start using your hands like I'm doing here now at first the dough is gonna stick to your hands but once it's done the dough won't stick to your hand anymore as you can see here now what we're going to do is we're gonna let this still sit out at room temperature until we make our filling so let's get started with that pre your fire to medium-high heat add your ground beef at your ground pork using the spatula fold the ground beef and the ground pork together now as you are combining the ground beef and the ground pork together use the ends of the spatula to kind of break some of those larger pieces of ground beef and ground pork now you're gonna let this saute for about eight to ten minutes it's been about eight to ten minutes now and our ground beef and pork mixture is now done turn your fire off add your ground beef and pork mixture into a strainer with a pan underneath it to catch the drippings now I want to let this cool for fifteen minutes and I just want to show you all the grease that has drained into the pan look at all that grease we don't need that you can discard the grease okay we've added our ground beef and pork mixture into a food processor now we're gonna blend this for two minutes now the reason why we're doing this is we want to break down those larger pieces of ground beef and pork okay and this is how it looks when we're done as you can see that's a little bit more of a fine finer texture okay exactly what we want pre your fire to medium high heat in a medium sized saucepan add three tablespoons of salted butter spread the butter along the bottom of your pan let the butter melt add one cup of chopped yellow onion 2/3 cup of chopped green bell pepper and 2 tablespoons of chopped garlic stir all your ingredients together you're going to let this saute for 10 minutes while stirring every 2 minutes add your ground beef import mixture stir all your ingredients together now what we want to do now is we want to brown the meat so we're gonna let this saute for 10 minutes while stirring every two minutes it's been about 10 minutes now and as you can see our meat has browned and that's exactly what we want let's add some seasoning sprinkle 1/4 teaspoon of salt 1/2 a teaspoon of Tony acessories Creole seasoning 1 teaspoon of Chef Hallford own sporty magic 1/2 a teaspoon of cayenne pepper 1/2 a teaspoon of black pepper and 1/4 cup of all-purpose flour stir all your ingredients together turn your fire off for the final step add a half a cup of water stir all your ingredients together the flour and water is used as a thickening agent that way your filling will hold when you add it into your pie shells and our meat pie filling is now done now you're going to let this come to room temperature before you add it into your pie shells you can also make this a few days ahead of time flour the surface of your table add your pie dough onto the table press down with your hands forming a square using a rolling pin roll the dough into a 23 inch long by 16 inch wide rectangle and this is how it looks when we're done as you can see this is not perfect but a to cut the dough here I'm going to be using a clear plastic container now this container has a diameter of four and a half inches which is exactly what we need to cut out our circles now if you have a large cup or biscuit cutter that work too as long as it has a diameter of four and a half inches and there we have it we've cut out 14 circles now we're going to remove the excessive dough from around the circles you're gonna take the same dough that you are moving from around the circles place it on to your table roll it out and cut out six additional circles of dough bringing your total to 20 circles all together now on to the fun part here we have a circle dough we're gonna take a small amount of our ground beef and ground pork filling and we're gonna add that onto one side of the circle of dough now we're going to take the opposite side and we're just gonna fold that over you're going to take your fingers and you're gonna press down along the edge of the dough creating a seal using a fork press along the edge of the pie shell and there we have it now we're going to take this and we're gonna place this into a pan now you can actually bake this if you don't want to fry it you can preheat your oven to 350 degrees and add this into a preheated 350 degree oven for about 30 minutes and you'll be all set free your fire to medium-high heat in a medium sized pot add one quart of canola oil let's all get hot for 10 minutes now if you're using a deep fryer just preheat to 350 degrees and just let the oil get hot for about 10 minutes it's been about 10 minutes now we're gonna add our pies into the all now usually nacogdoches pies are usually fried and peanut oil but today I'm using canola we're going to let this fry for four minutes it's been about four minutes now and as you can see our pies are floating to the surface at all that lets us know that our pies are done so we're going to remove those from out of the oil and place them onto a serving dish lined with napkins now you're gonna let this cool for about five minutes
