hi i'm harper perhaps the most requested dish we get is lasagna we've been wanting to do a lasagna video for a while but that raised a question a problem which is which lasagna should we make tell em ava because actually in italy we have a lasagna that is proper uh from bologna and the lasagna that is uh from napoli we decided let's do both which is why we have an insane amount of ingredients behind us i also found out that the lasagna that ava typically makes for me is sort of a combination of the two it's her own recipe so i haven't even had a proper northern lasagna and a proper southern lasagna and i'm super excited not only to find out what the difference is but to taste them these dishes take simply forever to make them so we need to get started like now go let's go for so we start to make our ragu and it will take at least here three hours and an hour four hours to be ready [Music] requires egg fresh pasta and now we are going to do it ava that looks like spinach do you trust me uh yes you will see [Music] [Music] this is definitely going to be the first green lasagna i've ever had see are you familiar with dr seuss no please this green pasta is seriously blowing my mind right now it's beautiful look at that can you make like just normal pasta with this see we have in italy what we call paleo pieno which means a part of italian white normal and the other part bolognese style lasagna assembled and ready to bake which means it's time to make the southern version we're gonna have to do that through a little uh movie magic time travel thing though because that one actually takes significantly longer to make which is why we started it early this morning so we're gonna rewind the clock and show you how we've been working on that one but first a quick word made by different kind of meat actually they are pork and beef and the difference with the bolognese ragu is that the meat in the napolitanian ragu is in pieces not ground meat and also we need to add a special meat that is what we call broccoli is a roll of beef meat stuffed with some ingredients and they cook all together for at least six seven hours [Music] so [Music] maybe this can be a surprise for some of you but in the traditional version of the neapolitan ragu they use lard instead of olive oil [Music] so are you sure we have enough meat actually we missed something but let's say that this is a a lighter version of the nepali tender what on earth could we possibly be missing we miss the pork rind pork rind we missed the pork rind because usually the original version requires also a piece of pork rind i went to three different butcher shop but it was impossible to find a piece of pork rind [Music] so [Music] okay right now our is cooking since uh four hours ago so it's time to take the meat out we take the meat out i see all better because we need all this meat just for the flavor so there's no actual meat in the lasagna yes that's why we need to cook more meat [Music] [Applause] [Music] [Applause] [Music] i'm really curious about this brushola uh so we're gonna eat it can i i was about to say this is so far worth the effort that we put in all day [Applause] [Music] while the lasagna from bologna use fresh egg pasta the lasagna from napoli use normal dry pasta [Music] northern versus southern lasagna i'm super excited finally after i don't know 10 hours of cooking it was a long day of cooking it was a very long day but after all this time come on they are amazing both of them let's talk about some of the differences here because they were even more drastic than i was expecting uh number one the northern one uses green pasta kind of blew my mind this is the traditional way and then there is the ragu a la bolognese bechamel parmigiano and that's it it's relatively simple which is not saying very much because uh the southern version is pretty crazy it's pretty crazy because inside it has everything that you can imagine when we made our timpano uh i was joking that it was kind of like a lasagna on steroids um but this is like just as over the top as the timbano frankly one thing i really noticed was the difference in the ragu so the raguela bolognese which we've made before i've had many times before it pretty much tastes amazing instantly as soon as you get all the ingredients in there it doesn't even need to cook very long before you could taste it and be like wow this is incredible the uh neapolitan ragu it was hours and hours of cooking and i kept tasting it and just being a little disappointed just sort of like really it's kind of bland like there's not much there and then at hour eight when it finishes it needs that time because as hour eight rolled around it just turned into this explosion of flavor and it's not that either one was better but it the the neapolitan version needs that time that's when the magic happens he cleaned the pot i i did i did the neapolitan ragu is my new favorite soup okay so we should try let's try here's the big moment should we try the bolognese version first ah it's up to you let's do it let's do it let's try the lighter lasagna first my very first green pasta bon appetite okay that is definitely the best lasagna i've ever had in my life it's oh man what the bolognese bologna when we talk about fresh pasta and lasagna is like you can understand why it's so famous taking the extra step of making fresh pasta for lasagna is really worth it which is why i'm a little skeptical of the the the neapolitan one to be honest but and now we should try the napoli version look at this thing when southern italy used to be ancient greek colonies and it was called magna gracia uh there's a wonderful saying that the greeks had about that region there first of all we're speaking about the temples that they built and they said that they uh they build like they'll live forever but they eat like they'll die tomorrow and that's what i'm thinking about knowing what went into this lasagna you know what yeah calories from the south are not real calories that's true they disappear that's true bon appetito okay first of all they are completely different dishes they're completely different see they are the taste is different but come on i don't know which one is the best this is a much more um smoky meaty flavor you know what's odd the neapolitan version actually feels lighter it's not but it kind of does i think it's the bechamel in the bolonese version makes it feel heavier because you have that dairy in there oh it's so good though it's like having the doors to two different paradises in front of you luckily i can go through both haha guys we're gonna hop off here because we've got some lasagna to eat we have to work a little bit but thank you so much for watching we
