hi i'm harper ciao i'm eva we're here today with a very special video you might be wondering what this veritable cornucopia of food is behind us did harper and ava just do their monthly shopping did harper and ava just do their weekly shopping nay these ingredients behind us are actually for one meal not even really one meal one dish to give a little back story the other night we were watching a movie called big night is a fantastic movie especially if you love italian food and we highly recommend you check it out but in the movie they make a very special dish called a timpano or a timbalo right see is the same it's like how can i describe it the dish looks like uh drama and we have a pie crust outside and inside we will find a layer of pasta and tomato sauce and cheese and fried meatball and sausage and it's basically a lasagna on steroids more or less let's say that is ten thousand times heavier than a lasagna we did find some other people who have made it here in the u.s you should check out the channel binging with babish they made the dish from the movie as well but from what i understand the dish in the movie is not exactly an authentic recipe in italy we have two kind of timbalo one is from campagna the other one is from sicily and what they made in the movie was combine these two timpano we decided to play this on tradition so we are going to do the campania version the dish takes a long time to make and uh it's uh it's definitely an involved process so we better get started i think that we are also late okay we start from our sofrito then we will brown our italian sausages we will add our tomatoes and we'll let it cook sounds simple i bet it takes at least three hours to be ready i said sorry look up to the onion so okay our ragu is cooking away on the stove and that means it's time to start making the pasta breeze or the crust right yes we chose this giant that was go big or go home we need this pie crust let's call this like that that cover all this it's gonna be huge i know but i told you do we have enough counter space maybe [Music] so the pasta brisay dough is chilling in the fridge what's the next step we need to boil our eggs so i need a potato a pot here alpha we're gonna need a bigger pot it's the best smell in the world peas and pancetta are you making a gordon ramsay carbonara no so correct me if i'm wrong ava but it looks like it's time to make the meatballs it's meatball time i will use half ground pork half ground beef eggs parmigiano pepperino garlic parsley and the bread [Music] [Music] whatever [Music] now it's time to take out the sausages already a natural division of labor is occurring ava cooks while i continuously clean the dishes that she's using [Music] so now it's time to cook the pasta is this pot big enough it's the biggest we have we try to do our best you start to feel the pain i always said that cooking is the best workout with this dish seriously i'm 90 sure we've burned more calories today than that is going to be in this entire timbano the next is this enough so in the movie uh when they make the timpano they make the pasta by hand they make some beautiful garganelli pasta like this which we made last week however uh apparently the neapolitan recipe calls for ziti which is a pasta that nobody makes by hand as much as we love making handmade pasta we're going with the dry stuff is this the most pasta you've ever cooked at once no in three minutes this pasta is ready because we don't need to cook it completely because then we need to bake it and because we don't want the pasta be too mushy we need to keep it very very alternative this time okay so i'm thinking this one's for you and this one's for me it's enough i think it's enough no because we have some more if we want we have more [Music] we cooked our ragu we cooked our eggs our meatballs our sausage uh the pasta what am i missing the peas and the pancetta so we basically have all the elements to go into the timpano but now we've come to the most difficult part what do we have to do next ava now we have to prepare our pasta bruise to cover our pot where all the pasta and all the things will go and it's a little bit a challenge because it's based on butter and because it's not cold it's enough hot butter and hot weather doesn't go very well together so we need to do this very very fast hoping that i didn't make any mistake what happens if the pasta breeze doesn't come out perfectly all the time we look for okay so this is really important this is fundamental [Music] that came out pretty good as we say in italy [Music] good point oh [Music] oh i feel like we're making an episode of epic meal time this ain't your grandma's lasagna me [Music] um seven hours later and this bad boy is ready to go into the oven how do you feel ava now i start to feel tired and i don't want to see anything mallow at least for 20 years in my life well wait till you taste it maybe it's worth it fingers crossed we're putting it in the oven and guys it's evie come on now this time now we have to let it cool down at least for 30 minutes 30 more minutes at least if i waited 9 hours so far i think i can wait 30 more minutes and i hope that it came out good so we got to figure out how on earth we're going to flip this thing my part i did because i had to do all so now it's your turn okay the dough rises above the surface of the pot which we didn't really think about when we assembled this and so i can't really put a cutting board flush on top of this um i think i have a workable solution it ain't gonna be pretty but hopefully it works okay so i know this seems weird but i'm going to do this with the lid i trust you that's good because i don't trust me okay it's heavy it's pretty heavy something happens what happened i don't know it's like we have also this [Music] [Laughter] [Music] oh mamma mia look at that high five [Music] it's just breaking a little bit at the bottom look at that my command is anyways a good job it's a good job this is by far the most epic meal we've ever sat down to here and it feels pretty good we started at 8am this morning it's now 6 30pm it's been quite the journey and it has better be good it was a long day it was but the result is amazing for sure it looks unbelievable good because it's it's beautiful it's something that when you look at it you say yes i want to eat it but then there is a problem what's that and we should understand if it's also good because well let's try it the the while the whole timpano has held up very well this piece has fallen apart a little bit but we'll see how it tastes uh please you did a lot of cooking today go ahead and take the first bite [Music] there are so many components to this dish that you can't get a bite with everything in it but i'm trying [Music] is it good is it as good as it looks [Music] i don't want to say any words i don't want to either i just want to eat this oh forever it's so good it it was one of those dishes that i thought was gonna look more impressive and in the end i thought it would just kind of taste like a lasagna not that a lasagna doesn't taste good but this is on quite another level has nothing to do with the lasagna it's it's rich it's creamy is good [Music] brava well guys thank you so much for watching i hope you enjoyed coming along on our culinary
