this is a lasagna bolognese yes we are in bologna searching for the best lasagna so when you come to bologna you can have a fantastic experience and this is the pasta latina all the way from new york the best lasagna bolognese in bologna what is this place dinner this is a fresh pasta shop that can sell pasta to take home and cook okay or they can heat it up for you and you can eat it on the streets there's a church over there you can eat it in the pizza in front of the church sounds good and you can go to a cafe or bar and buy some wine and sit at the bar and have your pasta oh and they allow you to bring the lasagna so this street is basically they all collaborate and work together but it's real i like the lasagna and it's it's well done and you know it's rolled by hand here guys so special because it's uh i love when when we do the lasagna we we don't mix too much uh the hard cream and the ragu okay okay wait it's like a just a delicate chocolate so when you can eat it you can you can see the flavor of the hard cream and the ragu it's not a mix of it all so in bologna you would never use uh dried pasta like you know you go to the shop you find the barilla dry no it doesn't exist in bologna okay maybe but if you do it here you go to jail yeah [Laughter] okay tina uh you ordered some wine okay i'm gonna take you to the church why because the piazza is gorgeous i want to eat i can either the church you can sit in front of a gorgeous church in the piazza on a bench okay okay let's go let's go let's go [Music] see one thing i there's bechamel and the ragu in a lasagna bolognese and some people mix the two and i like it when they're separate because i want to feel the bechamel which is what he was saying in the shop you want to feel the ragu and the bechamel separately in my opinion otherwise no mozzarella no no it's just parmigiano-reggiano cheese nope coriander as you can see here there is no ricotta on top yeah there's no sauce not much sauce i would say it's a little bit there's no mozzarella like that's the traditional lasagna that's how it's made you put layers in the layers you put the filling on the top i see people adding ricotta ribbons in the sauce the mozzarella it's just too much you want the flavors in the middle if you don't put the flavors in the middle you guys don't enjoy you know you don't have that beautiful this is a experience subtle lasagna you know so tina what are we expecting from this it's delicate and luscious and rich but it's balanced it's not too much as you say it's not like a pound of cheese yeah i like the cheese but it's beautiful so it's easy to break and that's because we cook the pasta i guess first right yeah you have to blanch it first oh boy that's a bite that's a nice bite that's a big bite there you go here we go let's taste it wow it's a must this the green's full of spinach vodka and you can taste the nutmeg in the bechamel sauce some people put a little nutmeg in there the ragu is not super strong extremely extremely delicate so the bechamel is a good compliment and they made them right they take the i think they put the right amount of marshmallow in there but it's a nice ragu the green spinach lasagna shade is the is the king yeah and it's not too thin too thick it's i like i really like their lasagna i think i can have this for i can eat this for breakfast lunch dinner i'm going in our first stop today a life changing experience i think um claudio was amazing showing us yeah how to make tortelloni but this lasagna guys it's gonna change your life honestly what's the next place we're visiting we're going to an osteria which is a more laid back kind of place to eat not more laid back than a tartaria so it's old school they're really warm and friendly and let's go it's a good spot um [Music] so tina what's this place it's called the osteria this is the via broken doso so it's a simple eatery that's uh casual cooking very nice area here yeah and you kind of step down the stairs so it's kind of cozy and they have a back room also so it gets full and and we have lasagna yes come on let's go ahead and explore this australia and don't forget i have to keep my shirt clean wow this is very cozy isn't it really style yeah this is like australia yes what's the difference between australia and restaurants it's usually more laid back even though [Applause] it's laid back it's even more you know rustic and it tastes like home cooking it's not fancy it's just simple but they're usually warm and it can be louder and more boisterous which i like i think we're the loud one at the moment probably probably the manual is rustic as well yeah i think uh if you have the menu underneath your plate you never stop ordering uh-huh yeah there's so much to choose from today we're here for the classic lasagna bolognese because the pasta believes here is one of the best it's a good good place so let's see look at these guys this lady goes around the tables serving parmigiano jonathan the bowl wow oh here we go oh so yes parmigiano please thank you say you put the cheese right on top top quality parmesan original come on tina you ready to eat delicious very different from the other one again very good i think this one is a bit creamier i put the chamois here the parmesan on top it goes very well with the cream this little glue tastes more tomatoey don't you taste more tomato what about the layers tina so you name every layer every layer when i make it has ragu bechamel and parmigiano and again you mix all together mix it together but i don't like it that way because i like tasting the separate things myself and this one here has been done separately yeah you can tell i got the vegetables it's just kind of more interesting when you taste it separately you know you can taste the piece of the meat and still have that concentrated flavor of the meat and you know and then the vegetables all creamy so creamy and again here we don't have any mozzarella no cheese in there that's the parmigiano i think i really like the parmesan on top at the end i really like it do do you ever find lasagna here in bologna made with a yellow pasta shape why do we have to not not this kind other lasagnas yes but this is usually made with a spinach lasagna i don't know why a friend from bologna you make traditional bolognese lasagna i've only seen it once in eight years so the average is within the flavor pretty much very different i mean spinach pasta and it's pretty too it is pretty so when you smell it the smell is the same for the taste no i think i prefer the other one but it's a pasta shop so i probably am biased because you're a pasta but this one is uh more rustic it's nice though like i like the ragu i know what you mean i know what you mean it's kind of satisfying with that extra tomato in there yeah it's kind of nice that if you want to come to bologna and taste this it's not available every day in all restaurants which is another reason why i told you to come here because i know they generally have it every day so call ahead because not every restaurant is going to have it every single day that's why i showed you some pasta shops too do you think you tell me how you always find it it's a it's a dish that i guess it takes takes more work yeah a long time to make so yeah you do want to plan plan any of the advancements or go from one of the one of the pasta shops that i recommended because they'll generally have it if they haven't run out of it yeah yes we've been eating so much in the last two days in bologna i really don't have any room left in my belly but i cannot eat this it's so it's beautiful good today i think i've changed the way i eat lasagna yeah oh there's room for all kinds thankfully yeah there is but but this is something that i think people should try because it's so different from what they're used to super yummy i mean honestly and so full yeah but i can't leave this in the plate i know this is this is hard for me to stop eating look how kind they are here those area broke in those yeah the brothers tiramisu to taste as a present you know it's a gift yeah now we can have this beautiful tiramisu with a beautiful seasonal strawberry yeah so thank you see this is a nice touch yeah not bad it's creamy it's really good we must have bonnet no cream and i need to pick me up and now we can go and add another lasagna after this with some energy that's all i want another slice of lasagna hmm guys at the second restaurant this is what happened i've got tomato sauce here so i didn't finish the day with a clean shirt we got one more restaurant to go to and there is a chance this shirt will become red [Music] okay here we go almost there yes so tina what's this place it's the restaurant you like this place i do because they're really nice and it's look at that it speaks for itself it looks like heaven we're about to order this the third lasagna of the day yes that looks worth it yeah let's do it isn't it pretty there's like a little design on each yeah at the top of each column where you can hang your code that must be uh yeah i like the wood great selections of wines and they're very sweet [Music] this is happiness in a plate that smells amazing the fresh parmesan melted on top oh it smells so good can you notice here they actually melt the parmesan on top yeah can you see that just before you serve look at that it's really sensational the best smell yeah you can imagine i wish chanel makes a lasagna perfume oh [Music] so here let's cut some peanut butter what do you think of this very moist so good you don't really need a knife no you don't oh my gosh i'm gonna spread it all over the plate these lasagna hey look at that that's a that is gorgeous layers the bechamel it's also the bolognese has it been mixed together no this is the way i like it a little bit all the time oh my god very moist stuff to say yeah extreme but it's holding together so they're literally easy [Music] is there more question man in there what is the cheese in there i think it's an extra cheese is it extra cheese it's not just the parmigiano there's something else is it a surprise yeah there's something in there something extra that makes it richer in flavor creamier too what do you think of this lasagna it's different it's good definitely i think there's less beef it tastes more like veal because the meat's more delicate don't you think yeah 100 what i like about this is they actually melted the parmigiano just before it was parmigiano served like it was placed on top just before serving and then maybe yeah put it under the broiler yeah just burn melted this is the most delicate one i think we've had at the same time very rich yeah full of [Music] no sorry i was swearing in bologna it's uh it tastes like it's mozzarella do you agree i don't taste better i think it's because the ragu is so much lighter i think there's like you taste support and meal not as much beef so it's a lighter it's really rich but it's lighter at the same time they're all different they're one more beautiful than the other this one it's really this one's gorgeous to look at this one is really amazing [Music] extremely full of this is red hot with flavors and this is what a mom would do in the sun i think really really good right i like all three of them tell us in a few words the first one we had what can you say about that what's the specialty about that you know it was rolled by hand and you can tell and it was the flavor right and and the separate flavor of the bechamel with the nutmeg in it and the ragu it just melded together really really well what about the second one that one was more robust i feel like it had more tomato and maybe more beef or something it was just more comfort food more homey and this one is luscious and well the first one was too they're all luscious so i think this one i think this one's more it tastes richer and delicate at the same time i think that they don't look uh they don't count the expenses what they just put in there i mean look at all this yeah it's just yeah i think it's a more delicate
