there what are we cooking i feel like this is a huge huge huge huge huge huge deal oxtail you guys we have been waiting for the time that we were going to bring you an on the stove oxtail walkthrough tutorial we had it on instagram and then we looked at each other and we were like wait hold on daddy's kitchen youtube okay so today we are making oxtail jamaican style oxtail and you guys just prepare for the ride all right day so how are we starting wash wash okay we're washing our hot still all right so when you're washing your oxtail what do you got to do to wash it daddy what do you do you use vinegar pour vinegar in the water also some people use lemon and lime too you can use both at the same time or you can just use vinegar to wash but you got to make sure you wash wash wash right yes i'm going to wash it three times do you wash it three times every time yes okay you guys see it nothing's ever gonna change gotta wash your meat and daddy watches it three times so do with that information what you know [Music] you can do it put your back into it [Music] maybe all right daddy so here are the ingredients now we're gonna put that in the ox table okay so these are all the ingredients that we're gonna be putting on the oxtail today as you can see we are washed and clean so fresh and so clean clean okay all right daddy so what we got going on seasoning salt and i heard mommy saying to you i heard mommy saying to you earlier that this is the only seasoning that has salt in it and everything else is um salt free is that right mommy okay i purple seasoning all-purpose seasoning garlic powder garlic powder black pepper black pepper [Music] your favorite flavor rice and you've always done it pimen i'm gonna put it okay inside oh you're putting it over here okay onion powder onion powder okay uh do you want some more seasonings with your onion powder seasoning and you've never used this before and you're only using it because gifted by natasha has gifted you this so in the package she actually sent these so are you just trying it out today yes okay so you guys don't necessarily have to use that but we are adding it today to the mix and i will be the judge of how that turned out don't put too much not too much okay right okay so and obviously the reason why we're talking about salt guys is because you know how we're you know more health conscious about like what we're having and what we're taking in and the sodium and someone was making fun of me in the comments before saying that um yeah they beat me up in the comment study good yeah they're beaten it's okay i was made for this um they were talking about how they don't know what i'm talking about because i always say uh that salt is uh we don't have salt because of or we don't cook with salt because of cholesterol and they're like salt has nothing to do with your cholesterol what is this woman talking about mommy what is it again is it blood pressure your salt has to do with yes giving up your blood pressure it is too much okay so it's blood pressure yeah they're like okay guys i'm sorry i'm not a doctor all i know is that too much salt is not good okay that's all i know but yes sista maggie is going on the oxtail okay i mix up all these together [Music] louder for the camera daddy your family can't hear you mix up all the seasons together okay on this workstation okay daddy this is gonna be the best oxtail that you've ever made right yes yeah nice and brown and delicious what you can do you can season your accent from overnight okay make it much more nicer okay [Music] guys are you kidding me like is it is it isn't it it's crazy to me how he confuses something raw and it looks good already like it's supposed to be already looks like you notice i didn't put any peppers onions garlic in it yet okay when i put this silly part let it brown let me get this color then i had my peppers my onions my garlic i know something okay so there's levels to this you're saying yes good catch because yeah usually like if it's chicken or stuff guys don't you realize there's always like the onions and all that stuff thrown in there too so good move daddy thank you for pointing that out because we would put everything in there and it would have went south not too much okay so part's on what's the heat at maximum and not too much oil you said right okay just be following daddy around the kitchen guys i'm trying to shut up a little more often so these funny ingredients gonna go in okay onions peppers tomato garlic okay a piece of ginger okay so scallions tomato onions garlic and some ginger okay so pot's heating up okay so we so you gotta wait until it's like ha ha ha ha ha before you throw it in yes okay sorry guys and there's no discrimination on this channel yeah we love everybody right but um axe still not for white sorry sorry sorry sorry actually brown brown and nice sweet so we're just going to make sure that that gets hot hot hot hat before we put our exhale but it's hot you can't see this smoke okay oh you see the smoke guys see the smoke that took a tan let me back up let's put it right down here [Music] it frequently you get grown colors then you have all your veg you season into it a little water and make it cool well luckily we're here watching you to see it all get done you're hooking it again or you need more water you can literally why don't what if you're cutting that's water so you keep keep boiling the cold water that's gonna cut it down right back down temperature all right well some people got to see it so let's see it all right daddy we're doing our first check how long has it been in probably what like five minutes five minutes max see the difference there's a difference guys the aroma when he opened that so how so is it the cooking is it what is making it not be at the same tough okay and then it's gonna get softer and softer right it's not gonna remain tough okay and so the heat right now what is the heat on still on high okay all right liquid it's gonna dry it out okay and then let me start to get brown okay more water a little more water you're throwing it it's cooking and it's grounding at the same time okay so once this water goes down completely you add more water a little bit just a little more water then you put in your seasoning the all right let's let's scale back to where right where we are right now so right now we just did our first check it's only been five minutes since we put it inside the pot the water is kind of going down we're waiting for it to get to a certain point so we can add a little bit more but it's browning everything is browning right now keep stirring keep stirring right okay smells so good all right so now our second track i hear that oh i hear that all right and i also see the brownness at the bottom of the pot [Music] can only imagine what one [Music] [Applause] [Music] they don't have to be afraid of the pot looking brown like that at the bottom right because i would think that i was burning [Music] [Music] everything's gonna get [Music] okay so it's like caramelized at the bottom so you want to kind of as you put the water in there you stir it and like kind of spray oh my god guys i wish you guys could smell this holy crap this smells so good i want to eat it right now daddy man oh you're so bad man oh you're so good at work with me can i work with you amen yes it's a partnership okay so we are doing our third check right now is on medium okay you just turn it down on medium okay oh my god i'm burning it not realizing that it's actually caramelization and you wanna mix it in [Music] sometimes these hot stains are very tough so you got to know what you're doing let it cook and touch color first and then you have it yes so that's why this evening's not in there because it has to hook and soften out first but if you're not really want to catch a brown color let it get brown without the seasonings in there because they'll burn yeah [Music] they said no they said no that's that's kind of meal there's a meal that takes patience and you have to know what you're doing you have to cook with love all right look over here guys veggies chopped up and ready to go but daddy's calling me over the pot [Music] okay [Applause] because it was my favorite and now i'm reminded of everything daddy why are you so violent wow look at that guys look at the difference but you see how it's like little by little like each check like you see it gets darker and darker it's like a tan it's like it's going through its stage of getting a nice tan so now oh really okay so once you see it get to this level of browning you guys i guess that's when you know you can put your veggies in how long do you think um the oxtail's been in the pot so far not ready about an hour now okay this will take time certain drinking meals oxtail especially some of these things take time and i think it's beautiful that it takes time because i feel like it's a testament to the love that goes into the meal it's not a restaurant that's why your food's not tasting because you're trying to rush it and trying to have like a instant type of food then you have to take time good things take time [Music] daddy and then you put it back up to high okay do i okay that and it's going to get even better than this even better if you could smell this right now oh i feel so bad for you guys like i feel good that you're learning but i feel bad for you that you can't have it right now all the way up this time okay so this is the gravy cooked down here turn into gravy at the same time we're gonna add some ketchup to it and you know i like to cook my beef like steel roast whatever it is without looking red wine okay all right guys so this is the real deal now done browning but now it's time to cook okay that's why by now they should know ketchup is a staple in these meals okay he's gone to go get the red wine y'all let me uh try my hand at stirring i don't like my hand i drink it are you a poor it's not are the food i drink nuts that's favorite people so daddy just used mog and david as he always does remember the jamaicans and their kosher wine [Music] okay you just leave that to cook okay and the heat is back up on high right yes especially because you put the water in there because it slows it down when you start to boil up under the journey about the medium okay so we're waiting for it to boil then you guys don't worry the rest of this tutorial is on its way i know you guys want to punch me [Music] but it's coming okay right then all right daddy so what do we have here officially it's been cooking will not ever smell it let it open you're so quiet just because you know because you know it's just buddy time okay after testing me first let's see okay how are you going to test it by eating it yes can you touch it i'm cooking y'all home cooking show me that'll come more [Music] like it's cooked but it needs to soften out more people this is good good is an understatement i can smell it i know it's more than good but i need to get it at least 21 20 minutes more 20 minutes more so are you gonna put the lima beans in it before the 20 minutes no you're going to make it 20 minutes and then you're going to do the beans after 15 minutes okay let's go for five minutes okay guys you heard you heard the boss you heard the chef you heard the book you heard daddy he said 20 more minutes to soften it out but within 15 minutes we're putting the llama beans in i love my lamb will make it thicker right you know why you're grabbing this nice okay yeah come right back in 20 minutes y'all all right what do we have going on here now oh guys it's just getting better [Music] show them the brand before you throw that second one in buddy second one i remember that from the last hat the beans just make it just the beans just set it up i feel like anyone who doesn't know culturally how this works would be like oh the beans really but oh gosh once the beans soak up the gravy yeah kiss teeth okay straight kiss teeth giant you guys you guys that's my ex that is your accent this is my accent yes okay and we love your oxtail
