hi everyone I'm back and today today I'm going to show you all how to make ox tails here's what you will need you will need ox tails try to get the most beautiful ox tails that you can find I was lucky and I was able to go to my meat market and find some of the most gorgeous ox tails there is ok and what I've done is I've trimmed off some of the fat and I've left some of the fat on because a lot of this fat here will render right off and what render is is where that fat will just start to melt okay so I've trimmed off what I didn't want you will need some vegetable oil ok and I'm going to use this to coat my ox tails you're going to need line you will need vinegar and cold water to wash your ox tails you're gonna need more Sala cooking wine you will need a can of petite diced tomatoes and I just might use two cans we'll just see and that can is a 14.5 ounce can of diced tomatoes you will need red beans okay and that's gonna be for my rice that we make and you will need Gundu lace or you can call them green pigeon peace that's gonna be from my rice as well you will need a green bell pepper and a red bell pepper you will need a onion you will need a habanero pepper now this habanero pepper is definitely optional you don't have to use it okay but if you use it I can show you how to use that habanero pepper in such a way where it's not gonna burn the daylights you know just not gonna burn the socks off of people okay and you will need green onions as well as well as black pepper let's turn that way you're gonna need black pepper garlic powder sea salt and I'm gonna give this slap your mama a seasoning a try okay you will need Kitchen Bouquet on what Kitchen Bouquet does is it's a Browning agent and what this will do is we're gonna marinate our ox in this browning seasoning and it'll help for your meat to get nice and dark brown you're gonna need rice and you'll also need coconut milk as well as Lipton onion soup or any type of onion soup mix that you would like to use there's two packets that comes in here we're going to use both packets as well as you're gonna need beef broth and I like to use the whole 32 ounce container of beef broth we're gonna use some Maggi poyo those of you that know me you know I love to use Maggi poyo so then and I'm gonna use my wok here and you can see I have some vegetable oil in the bottom of the pan all right so first thing that I'd like to do let's come over here to our sink and I've claimed my sink all right to where my sink is impeccably clean and you want to make sure that your hands are impeccably clean we're going to put our ox tails down into the sink and I'm going to show you all how I like to clean my ox tails with the line and the apple cider vinegar and cold water if you don't have line you can use lemon if you don't have lemon just use vinegar salt in cold water okay so the first thing that we want to do is let's go ahead on the end okay everyone so what you want to do is you want to give your ox til it's a nice rinse with cold cold cold water okay and then you want to take your lime and kind of push down into it just like this and you're gonna take your lime and you're just gonna go at that bad boy you're gonna squeeze juice onto it and then you're just gonna scrub your ox tails in this manner okay and this is gonna give it some flavor absolutely this is gonna make it nice and tender and nice and clean I love to use lime or lemon when I'm cleaning my meats like I said it gives it a beautiful flavor and it also keeps it very nice and clean okay so we're gonna do just this we'll take a knife and pull that piece off right there I don't want on there all right let me get that off so I don't forget to take it off any unwanted pieces just have kitchen shears or your knife with you you can take those pieces off just like so keep keep on scrubbing just like so in this manner now those of you that do not have patience I don't think this would be the dish for you but if you can have patience in that kitchen and you love a hearty stick to your bones meal to have on the weekend then this is the meal for you all you have to do seriously it's get up early in the morning start this dish early and by late afternoon your dishes done you hear me absolutely like I always like to say hey listen here if you can have patience in that kitchen you're gonna have you some good food you hear me absolutely you will okay just keep on scrubbing just like so I am so pleased with the size of these ox bills they are absolutely beautiful and so what I'm gonna do is I'm just giving them a nice rinse okay in the end I'm gonna go in with some vinegar feel free to use white vinegar if you don't have white vinegar use apple cider vinegar like I'm using today there we go and just pour you some one how much just put you some on there baby you hear me and then ruble and then rub it just like so get that vinegar all over oh yeah these are gonna be nice and clean and then we're gonna give them one more rinse and then I'm gonna show you how to prep these I'm going to show you how to marinate these now when you're marinating oxtails you definitely can marinate these for a half an hour but it's highly suggested that you marinate yours for owned about three to four hours three to four hours would actually be suggested okay because it'll give you the most flavor the longer that flavor gets to sit in there so you know the better they'll taste okay this is gonna be my last rinse just like so all right I'm gonna press pause and I'll be back I'll get my bowl out I'm gonna show you how to fix our marinade meanwhile I'm gonna clean our sink out anytime you do something in your sink or you clean meat and your sink you want to clean that sink out right away okay everyone I've cleaned my sink out my sink is impeccably clean now I'm ready to show you how to marinate our beautiful ox tails guys I am so excited for these ox tails do you hear me when we did our last live I think yeah I think it was when I did my last life I was so excited you all got to talking about ox tails and recent Richardson was on there and she was talking about make the ox tails and put and make them curried and I thought oh my gosh like I want some ox tails this weekend so here we are in a Young's house making oxtails tonight and I'm so excited I'm gonna chop these vegetables up and I'm gonna show you how to marinate these beautiful ox tails aren't they huge right I know you guys are like where where are you finding this beautiful meat at right okay so the first thing that I like to do you're gonna go ahead and take your vegetable oil or your olive oil and I like to put that oil all over my ox tails and what that will do is that will assure that your ox tails are nice and juicy and also it will help for your spices to a hear to these beautiful ox tails okay and you're gonna need that oil to go along with your marinade okay that's why I put a little bit extra in there okay rub it in all just like so all right and then start off with your spices let's go in I want to take my ring off let's go in and start putting our black pepper in just like so get you a nice amount in there don't be afraid to season okay any season is just fine only seasoning you have to worry about is that salt okay get you some black pepper all in there we're gonna season both sides all right this recipe is so much fun so easy whoo we get that garlic powder on there just like so get it in there baby get you some sea salt as well and not too much like I said be very gentle with the sea salt just like so I'm not gonna use sazzle today because I don't have any and which is just fine if you don't have satsang don't worry about it but if I did have some sales on I'd be using it so today I'm gonna use this slap your mama um seasoning that I got from the Washington family Thank You Washington family and then we're gonna go in with some Maggi for you all right hold on guys I need to open this one up it's a new bottle you did take the top off as well okay got the top off sorry about that there you go get you some Maggie polio in there just like so okay and then we're gonna turn these over just in this manner and we're gonna season the other side okay and see how your seasonings will stick right into there once you put that oil on there look at this this mmm this looks good already and there's some little ones that I have down in there you want to make sure that you season those as well okay I'm not gonna put any more sea salt in I'm gonna go in with a little bit more garlic powder oh yeah baby put you some more black pepper just like so all right get all in there and marinate into that meat and make this meat so flavorful you hear me spices get in there just like that now second thing that we're gonna do is we want to take our green bell pepper and our red bell pepper and put that right on top of your beautiful ox tails okay if you have orange and yellow bell pepper that's just funny balls okay any color of the bell peppers would be just fine to use I like to use the green onion because that green onions gonna give off so much flavor and actually it's a different it's a different flavor than the white onion that we're going to use okay so I like to use the both alright we're gonna go in with our can 14.5 ounce of diced tomatoes juice and all okay that juice is a part of our marinade that mix perfectly with the oil that we have in here in our vegetables and the vegetables are going to start to break down and you'll see the juice that becomes of this marinade okay and the juice will form at the bottom of the bowl we're going to mix everything in get everything mixed in just beautifully clean I'm just gonna go in with my hands guys sometimes your hands are one of the best tools that you can use okay if you don't want to use your hands hey that's just fine okay no problem there you hear me just always make sure your hands are impeccably clean all right and let's mix these up just like this get those vegetables underneath in the middle and all over these beautiful ox tails and boy I tell you one thing this smells so good right now oh we get those little ones that are at the bottom brought up to the top mixed all the way in with everything and you make sure these ox tails are coated with the vegetables just like this okay and then let me wash my hands off and we're gonna put some browning seasoning so make sure you wash your hands before you open up something new because you don't want to transfer bacteria okay so now what we're gonna do is we're gonna put our browning seasoning this browning seasoning it has absolutely no flavor but what it is gonna do is gonna give such a beautiful color if you wanted to use some more of the potatoes and I just more of the potatoes I just might use those I'll let you know if I decide to what I'm gonna do I'm gonna grab a spoon because now I don't want to touch it cuz my fingernails and my fingers will turn black from the Browning seasoning I'm gonna get a spoon I'm gonna stir this and we're gonna let this set in the refrigerator for three hours okay ever you want to stare this up as well as you can just like so get all that goodness in there oh yeah mix that browning seasoning all the way down to the bottom okay and we're gonna let this marinate for three hours if you don't have three hours hey a half now it would be just fine okay but if you want the benefits from this meat soaking in this marinade try to marinate it for three hours okay and see what you get oh yeah baby soak this right down in there just like that I'm gonna put a Lumina moil on here let this go in the frigerator and after three hours I'll be back and we'll get started with our beautiful ox tails look at this guy's isn't it beautiful and you couldn't even imagine the smell right now oh yeah this is going in the refrigerator and I'll be right back three hours later okay everyone our ox tails have marinated for three hours and let me just show you something look at where our liquid is see how high up our liquid is oh yeah that's all of the liquid extracted from these beautiful ox tails from our beautiful vegetables breaking down and those spices my goodness these things are gonna be so flavorful and so tender oh yeah so now here's what we're gonna do you're gonna take your ops tails first thing I need to show you I'm using my wok you all didn't know me you know I love to use my favorite wok for absolutely every dish that I make and I have some oil in the bottom of the pan I'm turning this wok on to a medium-high heat because we're gonna need to get a nice sear on to the oxtails are we trying to cook them right now no or not we're not trying to cook them but we just want to get a brown sear on both sides before we actually cook them and what that'll do is it'll it'll seal in a lot of that moisture in that flavor okay so turn your pan on medium high if you don't have it on already all right let me fix my camera beautiful picture there so you're gonna take off most of the vegetables that's on here okay kind of give them a nice shake and then right on into the flower okay give you just a real gentle toss and the flower and then we're gonna sear these okay let's do a few of them in the end we'll let the others keep soaking in the marinade until we're ready for the other ones so we'll probably do round about four at a time I don't know exactly how many I have but take off as much vegetables that you have on there that you can and if there's still some vegetables on there hey don't worry about it don't make it a worry okay do the sides as well just like so just a little bit of flour that's all you're gonna need on them okay just like this baby oh yeah all right grab this one and do the same thing very simple recipe mm-hm I cannot wait I absolutely can't wait see this that's what you're wanting alright now that we have three done let's see let me grab a little one this is a big little one but we're gonna go ahead and Flowery MUP okay I don't want to flour on too early because I'd like from the set and the marinade for as long as possible okay so it looks like I can fit three and that one let's see if I can find a small one if I can find another small one we'll go ahead and flour him up just like this one okay beautiful all right let's set that aside and then we want to make sure that our oil is nice and hot so we can start the process of searing our ox tails hope you guys are ready because I have a great recipe for you all do you hear me okay my oils let's see let me check my oil just to make sure it's getting there it's not quite where I want it so I'm gonna let it heat up for a little bit longer okay everyone our oil is nice and heated up let's go ahead and gently put your ox tails in okay just be careful because you don't want to splatter any oil on yourself or anyone else that's in the kitchen okay very gentle and put those two little ones in it doesn't matter if you stand them up if you lay them down as long as we get them nice and beautifully seared okay so once they start to turn a nice golden brown at the bottom I'll show you we'll flip them and then we'll do the others that's in the marinade and then I'll show you how to make our beautiful sauce that these bad boys are gonna cook in be back okay everybody so our beans that we're going to put in our rice these are our red beans and inside of here you can see that I have also the Gundu lace can you see you I think you all can see them okay so inside of here I have drained and rinsed my red beans and drain and rinse my con do lace the pigeon piece I'm gonna put a little herb nut aluminum foil guys not aluminum foil I'm gonna put plastic wrap on the top of this and then I'm gonna heat these in the microwave for around about four minutes until they get nice and steamed okay because with these with them being canned they're already cooked okay so you want to do is heating them up really well um but I'm not gonna do that until my rice is almost done you all that know me you know that I love to use boiling a bag rice so I'm gonna use that boil in a bag rice and what you do is you just literally you just pop the bag of rice in your pan and I usually use two bags um pop the bag of rice in your boiling water with a little bit of sea salt and you boil it for 11 minutes after 11 minutes your rice is perfect you never have to worry about it being smushy it turns out right every time and all you have to do is just pick that back up out the water drain it and hey you're set but what I like to do is right before my rice is done and I'll show you the process okay right before the rice is done is when I'll put that coconut milk near oh my goodness you hear me okay so we're gonna do that and right when I put that coconut milk in my rice is when I'll heat my beans up and then we'll mix that all together now some of you might say bajina is that your is that what you call red beans and rice no it's not I have a red beans and rice recipe and I want you all to check it out this is just a rice that I like to make on the side of oxtails and it gives you kind of that island filling because you have that you know you have that gonna do lays beans in there and you have that coconut milk and it does give you an island taste but no that's not my red beans and rice video if you want to see that type in ripping some rice with Gina young and you'll see that video okay let's go in and check on our oxtail okay let's take the teeth and they should be nice that's exactly what's your warning now the inside of these are not going to be done but you still achieve that beautiful brown color that we're looking for to sear in all of these beautiful juices and flavors okay [Music] okay the oxtails are coming out that's what your are they done no they're not done okay but they have that crust on them that's going to assure and I know I keep stretching it but it's gonna sure that you have nice juicy fall a party juicy fall a party does that sound right hey that sounds right to me juicy fall a party oxtails you hear me oh yeah baby now let's do these and these aren't gonna take long same amount of time maybe a little bit quicker because that oil is extremely hot right now okay I put these little ones in whoops while I make a mess don't make a mess like I am mm-hmm okay and we're gonna get these nice and brown we're almost to the finish line okay let's go ahead turn these over about another minute or so on this other side that's about all we're going to need let's get down to the nitty-gritty so what you want to do if you haven't done this already you want to make sure that all of that oil is out of the pan because we don't want any extra oil we don't need any more oil for this dish okay so now what we're gonna do I want you all to go ahead and put your ox tails back into the pan okay I have my ox tails on a medium heat just like this and you can fill them all in because now they're gonna start to stew okay now we're making the stew here's those ones just throw them right on in it doesn't matter where they go okay just get in there baby oh yeah baby beautiful [Music] let me get that off of my alright all of this marinate not all of it half of it put half of it in okay now only half because we're gonna use the other half for later towards the end of the cooking process okay absolutely because these vegetables right here what's going to happen with these vegetables is that these vegetables are going to kind of cook down so much to where they're just going to disintegrate into flavor land all right and then these vegetables that we have over here we're gonna use those but we're not going to cook those vegetables down so much to where they disintegrate we're going to be able to see these ones we're gonna be able to taste these ones and fill these ones in our mouth like I said these ones right here gonna turn into smush and flavor all right so now that 32 ounce beef bro hey shake it up and put it all in there if you have chicken broth chicken broth is fine too if you're that person it wants to use vegetable or veal broth that's really up to you okay just get you 32 ounces in there right now one of my favorite recipes now what you're gonna do is you're gonna go in with your onion powder and I like to use two packets okay okay and I feel like they all taste the same just put you some in there honey and sometimes there's a mushroom onion and a beefy onion I just always like to use the onion soup mix okay but feel free if you wanted to use two beefy one or a mushroom one that'll be just fine no problem okay now we're gonna go in with the spoon give it a nice stir we're gonna put a lid on this bad boy we're gonna let it simmer for well we're gonna bring this up to a soft boil on a medium heat for around about a half an hour and then after that half an hour we're gonna let these simmer with the lid on for around about three hours and actually I'm going to be honest with you all this might take longer than three hours but like I said hey if you can have some patience you're gonna have you some good food you hear me trust me when I tell you this so we're gonna make sure this comes up to a boil I'm gonna let it boil soft boil for just a half an hour after that I'm going to turn it down I'm gonna put that lid on and then I'll tell you if you're that person that would like to have this habanero pepper and with your dish I'm gonna show you how to use it to where you don't burn the socks off of everybody what you're gonna do towards the end of the cooking process where when our ox tails only have about maybe a half an hour to 35 minutes left we'll put this down in our sauce we're not going to cut it we're not gonna do anything but we're gonna let it just steep and it's just gonna steep down in there and some of the flavors will be released very slowly into your ox tails okay but we're just gonna let it steep and when you stir it don't go in and accidentally hit this with your spatula or your spoon because you'll tear it and then you will see some people run crazy jumping up and down because your dish is too hot okay be careful when you're steering around if you decide to put this in um myself and my ten euro we're not really fans of hot things but I find when you just let it steep for a little while without poking any holes in it it's it's a it's a heat that you can stand and that's honestly really good so that's what I'll be doing towards the end of the cooking process okay and then now we're gonna go ahead and put some marsala cooking wine in okay I only have a little bit left and I'm just gonna use that little bit okay it's gonna give a beautiful flavor is it gonna make it taste like alcohol no not at all yeah promise you what will happen is alcohol will cook-off and you're left with a beautiful flavor that it gives okay remember to keep that other half of that marinade that you have over here because we're gonna use that towards the end of the cooking process I'm gonna put the lid on this and we're just gonna let it go everybody for half an hour on the boil and then we turn it down on low with the lid off be back okay everyone my water has came to a boil and I've put in sea salt in my water I'm gonna use two bags of rice and just get them in just like so and then I'll show you when I put my coconut milk in I'll show you that process and I'll show you when I mix my beans in okay everyone you can see that my rice is starting to boil vigorously so then I'm gonna go in with the whole can of the coconut milk and just let that coconut milk soak down into that right oh yeah right and the coconut milk because it's not heated up it might cause your boil to stop which is just fine because we know that our rice is almost done all we're aiming for is for that coconut flavor to get down into that rice you hear me oh yeah baby now see this bag has holes in it and the holes us in the bag will allow for that coconut flavor to come through so now what I'm gonna do is I'm gonna go ahead and take those beans plastic wrap on them so they can get nice and steamy and hot okay everybody remember I was talking about putting some curry powder in what we're gonna do at this moment is I wanted to let you know that I've put some curry powder right on in and I put a teaspoon and a half of curry powder into our ox tails okay everyone let's take a look at our beautiful fluffy rice and look how nice and fluffy it is and I tell you what when you put that coconut milk in my word you hear me I'm not gonna use all of these because I have plans to use some of these beans for something else another dish that I'm doing tomorrow okay here's a little bit of juice came from the beans hate pour it right on in there okay but I'm gonna save these teens and use them for something tomorrow see you're just gonna do this just like so and I love the gun duel ace I love the gun duel ace beans the pigeon peas however you want to say it and I love the red beans if you wanted to you definitely can use kidney beans a lot of times I'll use kidney beans oh look at that that coconut milk really does it you hear me and put you some butter in here this is real butter and this is two tablespoons okay just let it melt down in there baby and you are set there's your rice that we're gonna have on the side let me show you oh yeah baby smell that right there Oh oh yeah see see see now I'm getting excited at guys now getting excited I can't contain myself okay everybody let me show you this beautiful nests oh and my house is smelling so good from upstairs to downstairs look at these hunks of meats my goodness look at this oh yeah baby okay so now that this is almost done it only needs another half an hour to cook what you're gonna do so we're gonna take that extra marinade because look remember I told you all that the other vegetables are gonna kind of disintegrate into flavor land well that's just what they've done and you see how you really can't see him you can see some but now we're gonna pour these right on in so that our dish can become nice and vibrant once again okay beautiful in color we're gonna make sure we cook this marinate for 35 minutes and then we are going to put the hub on that roll in put him right on top and don't when you stir make sure you don't bother that habanero like I said it'll start to seep out juice is very slowly into your dish now when I put my powder in I did sprinkle a little bit of allspice in there try you some allspice if you've never had it before hey this is the dish you want to put some allspice in so here's what we're gonna do look at this guy's oh my goodness I'm so excited I can't wait any longer we're gonna cook this thirty five minutes and then we're gonna give our dish a nice taste over the coconut flavored rice with beans oh yeah all right let's get to closing up early it cook this thirty five minutes I'm gonna let y'all know what this tastes like be back okay everyone our beautiful ox tails are done this has cooked for another 40 minutes in this habanero see how it's shrinking down in size let me show you I'm bringing a little closer you're shrinking down in size and it seeped off just enough spice but not too much so I'm gonna discard this if you wanted to save it absolutely you can mine and what I'm gonna do right now is I'm going to make a nice plate of these beautiful ox tails we'll give it a taste and I'll let you all know what this tastes like look at this guy's oh my word I'll be right back okay everyone here's our beautiful ox tails check them out this right here is how I like to serve my ox tails with beans and coconut rice oh my goodness my family is sure in for a treat tonight and you see how by putting those the rest of that marinade in later see how you can see it in this nice and vibrant again and
