butternut squash soup is one of the first soups I make every fall and I'm showing you how to make it from scratch fall is peak season for butternut squash it's in the same family as pumpkins and acorn squash so the base of this soup will only cost you about four or five dollars it feeds a lot it goes a long way and it's good for you I can't sugarcoat the peeling and cutting of a butternut squash I'm sorry it's just one of my least favorite tasks in the kitchen so sometimes you can already buy it peeled and chopped it's going to be a little pricier but if you can afford it more power to you of course you're going to get the best flavor from a butternut squash when you peel it and chop it yourself hasn't been exposed to all that air so the flavor is all intact for me I like to cut it into two workable portions before I peel it so I kind of cut the long neck off and then cut the ends off so that it sits flat while you can use a vegetable peeler sometimes I find it's a little easier to just use your knife if you are a little clumsy with your knife a peeler is going to be a little bit of a safer way to go you want to peel through any green or white and just expose all the bright orange the flavor of a butternut squash is not quite as intense as that of like a pumpkin I also love adding butternut squash to my chili it's like a little less sweet than a sweet potato but it's like a good balance to the spiciness of a chili in the end this soup is going to be like super creamy but you will notice there's no addition of heavy cream to the recipe that's what I love does it taste indulgent but it's fine alternatively you can use your knife to kind of shave off the peel this requires a little more elbow grease but it might be a little bit faster you do this similar to how you would do a watermelon or a cantaloupe the large part of the butternut squash at the bottom is going to contain some seeds just like you would see in a pumpkin so you're going to want to cut this in half and then just scoop it all out once it's peeled and seeded the rest is cake you just want to dice it just like you would any other when you're prepping your ingredients for the soup they don't have to be perfect at the end of the day it's all going to get thrown in a blender and processed until it's silky smooth all done another vegetable that's going to go into the soup is potato is of course super inexpensive and another good way to kind of stretch the soup and it also adds some of the good fiber dice this up and then everything comes together one pot on the stove super easy this soup really is one of the easiest soups you can make starting by melting a little butter into my pot and then I'm just going to saute everything together in the bottom before I add my stock it's going to kind of help develop the flavor a little bit and just like any good soup it starts with mirepoix a little onion celery and carrots let that go for about a minute I always like the onion to just kind of release the first flavor and then just straight in with my butternut squash and the potato I'm just going to cook this all together for about five minutes hopefully it'll take on a little bit of color so now when I add my stock it's going to kind of lift that flavor up if you wanted to customize the flavor of the soup by adding apple or some herbs like thyme or Rosemary maybe you want to make a curry butternut squash soup this would be the time you do that now I'm going in with chicken stock you can use store-bought or homemade you want to pour in enough liquid to where it just covers the vegetables you don't want to add too much liquid because you can always add more but it's real hard to take it out and we're looking for a nice thick Rich creamy soup you don't want anything that is too loose or runny so this right here looks like the perfect amount I'm just going to bring this up to a boil and then reduce the Heat and let it simmer covered for about 40 minutes or until everything is super bartender oh yeah hot steamy tender it smells incredible all that's left is to blend this up until it's thick smooth creamy perfect if you have an immersion blender you can just hit it right here while it's still in the stove makes your life a little bit easier but I'm going to show you how to use a regular blender because most everybody has that all right you may have to work in batches with this unless your blender is just gigantic but it's really easy and it happens in literal seconds you want to get about half of all the veggies and half of the broth if you're doing it in two batches you definitely need some of that broth in there to help blend it up you don't want to fill your blender too much that can be dangerous all right that's about half very important whenever you're blending anything hot take the center piece out so that the steam can escape otherwise that could blow up in your face use a little towel to help guard it and start let this is one of those soups that I love like completely smooth you know there are other like broccoli cheese or something like that that it's okay if there's a couple little chunks in there but for this one I like it smooth as velvet for the final step I'm going to return the suit to the pot just to season it and check the consistency the consistency looks perfect the reason why there may be some discrepancy is based on the size of your butternut squash if it was too thick you can just add in a little more stock cream water if you need to fix the consistency at all just return it to the stove top add a little stock you're good to go ours is perfect so all I have to do is season with salt and pepper let's give her a taste shall we pretty dang good a little more salt and we're good to go soup's on my favorite way to top it is very simply just a hint of freshness from some chives you can also use green onions and then some creme fraiche you can also use sour cream I just love the creamy tanginess paired with the little bit of fresh bite from the herbs so good it's so velvety smooth it's so comforting it's warm it's just perfect I would serve this to my family on a regular weeknight but it's also elegant enough to serve company it's got that kind of restaurant quality vibe to it I also love that it can be a whole meal in itself you can pair it with a salad and some crusty bread or serve it as a first course to an elegant dinner I hope you'll give this recipe a try this fall and when you do forget to tell me anything else
