do the house sausage I got a barbecue shoes on go down to the house the sausage a cop welcome to barbecue pit boys calm get your grill set up for some indirect heating because we're gonna be doing some chicken sticks on the grill all right I've got some bacon and I've got some boneless skinless chicken breasts there's our half chicken breasts right there you can find them most anywhere all right let's put this recipe together it's real easy to do first thing we're gonna do is gonna make a marinade and we're going to start with about a cup of good oil you can use extra virgin olive oil or good canola oil and to that we're gonna add a couple of lemons we want the lemon juice out of that and now if you don't have any fresh lemons you could substitute some lemon juice but a couple good lemons like this give them good squeeze now of course you can use your own marinate whatever you prefer for a good chicken marinade but you don't have one handy you definitely want to check this one out real good all right now now here I've got some cilantro and if you got it handy you want to chop up maybe a half a cup just roll right in there now if you don't like cilantro that's fine you can just leave it out maybe add a little bit more lemon now if you haven't had chicken sticks done on the grill before definitely want to make a bunch because kids of all ages standing in line for these it's real good all right now to this marinade we're gonna add about 3/4 tablespoon even a tablespoon of granulated garlic here I've got some chili powder we're gonna put about maybe one tablespoon of chili powder and here we've got some ground cumin and we're going to use about a teaspoon even two teaspoons of ground cumin here I've got some ground cayenne pepper I want to throw in about a half a teaspoon to a teaspoon depends how hot you want here I've got some that Louisiana Hot Sauce I'll put about a tablespoon in there then we'll give it a good mix now you might be thinking these are gonna be some hot chicken sticks but they're really not gonna be cuz we're only gonna be marinating for about an hour no more than two hours clean off the board I'm going to show you how to prepare these chicken breasts it's real easy to do all right so I want to do is a trim them up a little bit you have a little excess fat and cut them off but want to make about 3/4 to 1 inch thick strips you just take your knife and cut them lengthwise now most all of you have had these chicken skewers before they cut up their chickens into small cubes 99% of the time they dry out not worth much you do them this way and they're gonna come out moist juicy every time you just cut them in long strips like this you show you one more just kind of square it up a bit and then cut them lengthwise now let's put the chicken on some sticks which happened to be these wooden skewers now you don't have to soak these wooden skewers backed up it's a bunch of malarkey just using just like this in fact anybody says you have to soak your skewers before put them on the grill just tells you they probably don't know much about grilling at all now you grab the chicken lengthwise and insert the chicken skewer right up the middle it's real easy to do and if you do it this way you don't have to worry about stabbing yourself just like that all right move this video along here because you know how to do this now good enough okay now let's marinate and get self good container you can even use a bag because like I said we're gonna marinate this for about an hour maybe two hours at the most throw your marinade on then we'll let it marinate in the refrigerator cool there you go now we're gonna make another batch we're gonna do this differently we're not gonna use a marinade but we'll use a chicken road so we're gonna make a bunch more of these skewers up here I've got some chicken rub and then I've got some MA we've got some seasoned but you want to choose the chicken rub because of rub has a lot less salt in it because it's gonna be salt in the bacon that we're gonna use just want to use a rub it's predominantly sugar we don't want to make these chicken sticks to salt when you take your rub this here it's an off-the-shelf rub or you can use your own and you lightly sprinkle each one of your skewers yeah we got the charcoal gone we're gonna heat up that grill good and hot at first like I said this is the seasoning I really don't want to use a seasoning on this it's a little too much salt all right now here's the good part you're gonna take some of this american-style thin cut pork belly bacon you're just gonna take a strip wrap it right around hey that's a thing of beauty right there all right you've seen enough of that let's get these chicken sticks on the grill now again I have this grill set up for indirect heating got the charcoal on one side and we're going to place our chicken sticks opposite two hot coals and this will allow our bacon to slowly cook and it will marinate these pieces of chicken just like that Wow we're going to have about a 350 degree grill going on here about a medium grill right about 10 minutes is gone by the only thing you want to do here is gonna move the chicken around just a little bit get a little more even cooking going on man getting angry or what put the cover on maybe another ten minutes or so all right now while we're waiting we're going to take our marinated chicken sticks here I'm going to wrap these and bacon as well now this bacon is the magic to these chicken sticks they're going to come out boys tender did you know where I'm going with this I'll just show you wrapping a few more of these nor I could know now let's check on those chicken sticks all right good they've been cooking now about 20 minutes and here we're going to move them directly over the medium coals because we're going to cook up this bacon a little more crispy just before we pull them off the grill all right now over the indirect heat we're going to put on these marinated chicken steaks whoo-wee I you smell that it smells good with the cover on for a couple more minutes of course you want to clean off the board for the food police all right now these uh chicken sticks with the rub you're done it's time to pull them off the grill got that bacon crisping up if you got that girlie-man fingers then you can use a pair of tongs remove these but this works real good just pull them off may life is good around app it doing up some of these chicken stick all right look at that put a little bit of foil on there keep them warm before we're serving a money now these marinated chicken sticks coming right along and again get some even heat and we'll just move things around a bit gonna make some sauce grab on lay baby show you who's boss got the seed in my hair baby I don't care gonna try another ten minutes all right just like we did rub chicken sticks I'm going to take these marinated chicken sticks I'm going to move them over to direct calls I I'm totally gonna be making a lot of these you're gonna be no left alright let's put them off the grill gonna grab the chicken you shoes on it's action-packed as always I'm just gonna
