thanks to simply save for sponsoring this video welcome back to severe everything guys today i am cooking a wagyu eye round after such a hard time trying to find this piece of meat i finally got it check it out i have a long history with iron i've tried so many different types of experiment trying to make this incredible i mean i cooked it for a very long time i've stuffed some expensive fat inside of it and i mean i even went as far as slicing one entire japanese wagyu a5 and putting in there and rolling it up to see how good it's going to taste and every time i run crazy experiments like this you guys always ask me google we want to see a wagyu iron well here it is it was not easy to find an f1 wagyu iron and after searching it for such a long time i finally have it in my hands after removing it from the package and putting it on my cutting board this is what it looks like to say that i am excited is an understatement i have been looking forward to this video for such a long time and i cannot wait to find out how it's gonna taste with all that being said an eye round is an eye round i am not expecting anything crazy but i really hope it's much better than the ones i had before like every eye round the first thing we gotta do is some cleaning usually there's some silver skin and oxidation that has to go for that i just grab a sharp knife and went to town making your eye around nice and clean is a step up to making it awesome so always spend a little bit of extra time to make sure you cut all of this out and i mean as i did check out i can see some incredible marbling oh man i'm getting excited but once i was done with the trimming here's what it looks like as you can see i did leave a quarter inch of fat right on top and if you ever get one i highly recommend you doing the same now since i have a big piece i'm going to be doing it two different experiments one of them i'm going to be cooking as a steak and the other one has a roast so the first thing we needed to do is to go ahead and slice it open and as i did oh take a look at this that looks like there's fat in there trust me i have cut so many irons on my life i've never seen any fat and being able to see this intramuscular fat gets me really pumped at the same time i cannot wait to find out how it's gonna taste but now that we've finished with the butchering the next thing to do is to go ahead and season them and for that i wanted to keep it very simple so that we can taste the flavor so i started seasoning with a little bit of salt followed by freshly ground black pepper and garlic powder and as always make sure to season it well but now that i'm done with the seasoning the only thing left to do is to back them up vacuum seal them and get them ready for the water bath that was perfect because it allows me time to go ahead and make an easy and simple but delicious side dish and i'm talking about some smashed potatoes now even though they might not have the best presentation i'll tell you one thing they taste incredible and here's how to make them you can use any type of potatoes for this recipe but i chose these as you can see we have a variety of colors that should make an interesting combination of flavors the first thing i had to do is to go ahead and boil them for 8 minutes however depending on the size of your potatoes this may vary as long as you can poke a fork through them and they go nice and easy you know they're done as it was boiling it was perfect because i went ahead and make a simple sauce and everything started off with some butter i threw it in the microwave so that it can be nice and soft then i added a little bit of garlic paste followed by some parsley and mixed it well and that is all there is to it i told you this recipe is easy by this time my potatoes were fully cooked to smash them you can use anything i'm just using a glass now that is nice and easy now to give them a nice crust i like to move them to a baking sheet and remember that we have not seasoned them yet so for that i added a good amount of that butter we just made followed by freshly ground black pepper and a good amount of flaky salt you want to repeat this process to every single one of these potatoes because once you're done you should see something like this and now the only thing left to do is to go ahead and throw them in the oven at 450 degrees fahrenheit if your oven does not go that high just put them as high as possible because after about 15 minutes this is what you should be left with these little crispy bits on the potatoes is incredible and i'm telling you this is the easiest potato recipe i've ever made to take them to a whole new level add a little bit more of that butter we just made as we all know butter makes everything better to finish them off after adding a little bit of more butter i threw in parmesan cheese followed by a little bit more of parsley and my potatoes were done that is as easy as it gets and let me tell you like i say they don't have the best presentation but they come in with the flavor so i highly recommend you giving this one a try if you are in a hurry but now going back to our wagyu eye round i'm going to be cooking everything at 135 degrees fahrenheit the steaks i'm only cooking for two hours the roast on the other hand i'll be cooking for 24. that way we're gonna find out which way is the best way to have wagyu eye round i don't know about you but as soon as i sliced that wagyu eye round i was actually surprised there was that amount of fat in between the muscles intramuscular fat to be specific remember i cooked everything at 135 degrees fahrenheit which is my perfect dentist for steaks and roast at the same time but now i say we are hungry it is ready and it's time to take it out let's do it i'll tell you what if smells tells you if it's going to be good or bad they smell the same exact way that all other iron i've ever smelled now here's the plan i round even though it is a wagyu i feel like it needs a little bit of butter all right so i am going to be basting it a little bit with butter and i will also be using my flame thrower so that i can get a nice hot fast and quick to find out if these things are going to be good bad or ugly so now i say i know my wagyu eye round don't look that good right now but watch this [Music] before moving a long time amazing for such a long time you guys asked for you already know all the story i'm not going to get into that now here's the deal so we got the steaks first and then we got a roast look how juicy that roast is for at night right now it's looking really good i never seen anything like it everybody normally you cut that thing as an eye round it is as dry as the sahara desert you know what i mean the only way potatoes are around was because of the fat guys because they didn't put it on the top right right and obviously we got a little side dish for us to try no no no take it easy go ahead mama go ahead go ahead but like it is like but but but that's these are just mashed potatoes but let's try the steak first yeah i'm excited i can't wait this time mom this time i want to go before you as expected perfect medium rare it looks insane i know it looks exactly the same the difference is cooked for two hours cooked for 24 hours let's see that's it you ready i'm salt of it here right this one i can't wait i'm excited for this one you ready for mozzie let's do it all right let's do it cheers everybody i'm still chewing let's do chewy hmm it's very soft yeah but it's very gummy yeah it's like a gummy bear it tastes good still chewy i'm still chewing as well that was interesting this was interesting it's a little bit difficult to explain because it is extremely tender it's very soft if you put it on your mouth and it's like wrapping your the meat is falling around your tongue right but you start to chew it and it starts to break down but you're still chewing it yes because the i guess the the fibers between connected to the connective i don't know what it is but the connective tissue is kind of weird didn't break it down because as you take a bite but it tastes good it tastes amazing don't get me wrong it tastes good but at the same time gummy you got it yeah that's how you describe it it's just gummy you know what i mean but it tastes good but this was only for two hours all right so not that much expectation i'm excited to find out the roast i'm gonna try the side dish first too cleans our pellets yes mama i'm not gonna complain about that cheers mouth take it easy that's good the potato is good that potato is good okay enough monsieur let's try this um let's try the ira oh it's more tender you see that let me just be clear this is not a japanese you a5 eyebrow i did notice there's a little bit of a different difference on the texture the outer it's a little bit softer than the middle yeah i agree but uh let's see how it feels on the mouth let's see that's all that matters cheers everybody oh that's what i'm talking about oh yeah that's soft that is extremely tender very flavorful and it has nothing to do like the steak grab the steak and give it to your puppies whatever one you have if it's a little one doesn't matter they're gonna enjoy it for you and your family you make the eye round like a roast yes um like a roast and you could make a beef wellington with this that's how soft it is that would be amazing amazing beef dweller and it will be cheaper than a regular chateaubriand and this will work just fine it's so tender it's so tender it has a lot more flavor naturally on you know what i mean if you ask me google is this better than the chateaubriand i think so anyway guys these are the results i do have a few
