[Music] hey there rec tech family how are you doing today chef Greg here cooking from home office in beautiful Augusta Georgia we got some great recipes for you today first one up beef jerky who doesn't like beef jerky so today we're going to show you how to do some really easy homemade beef jerky we're going to smoke it at 180 degrees for about four and a half hours or so so here we go making the marinade first off we have a tablespoon of onion powder garlic powder red pepper flakes and I use a smokehouse pepper blend it's got some salt some pepper some garlic some good spices in there so we'll go ahead and use that we've got a cup of brown sugar if you like your beef jerky a little on the sweeter side you can feel free to add a little more molasses honey all good flavors we're going to go ahead and add two cups of soy sauce a cup of teriyaki sauce now make sure that's the teriyaki sauce not the teriyaki glaze the difference there the glaze is really thick and gloopy we want more of the the one that were simple soy sauce and then a cup of Worcestershire sauce so today we're going to make in our beef jerky with flank steak right so you can make beef jerky with just about any kind of beef just want to make sure you cut off a good bit of the fat and when you slice it there's a couple tricks to it so one we've got our meat here and we put in the freezer for about 45 minutes to get a little bit icy makes it much easier to cut and then when we cut it when we're cutting a like a flank steak for fajitas or just you know dinner in general we slice it against the grain with jerky we want to slice it with the grain and especially when that meats raw it's real easy to see the the lines of that meat so we'll go ahead and slice it about a quarter-inch thick nice long slices you can always ask the butcher at the grocery store to do this for you I think it's kind of fun to do it yourselves so in just a matter of a minute or two all your slices are done one of the best parts about making beef jerky at home is one it doesn't cost an arm and a leg to you get the flavor at how you like and three gives you an excuse to cook on your wreck Tech well slice that in half to make it more manageable pieces we'll go ahead and lay that in our marinade we'll give that a mix we'll let this sit for about 12 to 24 hours in the refrigerator and we come back well we'll get it on the smoke so we just pulled our flank steak out of the fridge it's been in the fridge for about 12 hours now we're going to lay that on our grill net and then we're going to do is we're going to put it in the wreck Tech and 180 degrees when you're positioning the grill mat in the smoker you want to make sure you avoid about the first inch or so of the mat if it gets in the way of the air gap those pieces will get a little overcooked so we're do is we're going to lay this out over a drip pan here and just give a little bit of space in between each piece of meat and you can see how nice and thinly that was sliced this will take about four and a half to five hours there's no need to flip it over and the test to see what it's done is the meat will kind of be a little brittle when it's folded in half and again when it's sliced like this it'll take about four and a half five hours or so if you're using an I round it's a little leaner of a cut it'll actually dehydrate a little bit faster but again the test is every after about hour three and a half or so just give it a quick check every 30 minutes or so lay a couple more out here I don't know about you but I'm getting kind of hungry right now all right so let's go ahead and load this up on the on the wreck Tech so it's been four and a half hours our beef jerky if you look at it nice and brittle so it cracks as it bends in half it's still warm so it's a little soft but mmm delicious flavor nicely smoked absolutely fantastic homemade beef jerky on the wreck Tech go get you some [Music]
