thanks ray shadow legends for sponsoring this video as far as beef goes this is the best thing you can find take a look at this marbling that is something you do not see every day we're talking about the wagyu short rib marbling score 9. it is a piece of heaven on earth and today we're gonna be having somebody try this for the very first time but when you get them they look like this you see since it has a lot of intramuscular fat we must remove the outer one this way it allows us to season it properly and if you've been watching my channel for a while you know that salt does not penetrate fat so removing the top one is a must but once i was done take a look perfectly trimmed exactly the way i want it to ensure that my seasoning is not going to fly all over the place i transfer it to a tray then as a binder so the seasoning will stick i used worcestershire sauce just a little bit not too much for the seasoning i went with salt followed by freshly ground black pepper and garlic powder one of the most important things is to make sure that i season it properly and by the looks of it i did notice that i also did the edges now i have two of these short ribs and we're going to be cooking two different ways for this one right here i'll be smoking it so i set my camshaft smoker at 250 degrees fahrenheit and throw it in there i'm letting it smoke for four hours this will give a nice smoky flavor for the second one i'm doing the same exact thing and this one looks just as good as the previous one or maybe even better however this one i'll be doing a more traditional version let's just imagine you don't have a smoker at home and you want to cook a short rib like this anyway and here's how i would do it the first thing to do was to split them and as i take my first slice oh man take a look at this that marble is something you don't see every day in short rib it is perfection friends so i went ahead and cut out all of the other ones and as you can see this thing is perfectly marbled it looks phenomenal now the next step is to put a sear on them since they're going to be cooking for such a long time they'll be extremely tender in the end so i went with the best option we're talking about my good old flame thrower he never lets me down i don't have to do any dishes when i'm done and most importantly does the job quick that is always a plus on my book because once i was done take a look perfectly seared they even look like they're fully cooked already but trust me it's completely raw inside but hey that's why we're gonna use a sous-vide just like the previous one we also need to season it and keeping it the same so the only difference is smoke i went ahead and started with a little bit of worcestershire sauce threw in salt followed by freshly ground black pepper and garlic powder i also made sure to season both sides and the edges now that they're done the only thing left to do was to throw it in the bag vacuum seal them and they are ready for sous-vide and that's perfect because it allows me time to go ahead and make an incredible side dish take a look i've done many side dishes on this channel and on my google foods channel but this one might be the easiest one of them all and to make it it's super easy and here's how the whole key ingredient is this cheese to be specific brie you can find it anywhere now brie goes perfectly with some type of sweetness for today i'm going to be doing two different versions the first one i'm gonna be putting grape jelly yes a good amount for my second one i'm using bell pepper spicy jelly a little bit of savoriness should go well with this thing well that's to find out real shortly because even though i had many combinations i never tried this one as you can see once i was done we got a good amount of toppings right on top as now the only thing left was to cover the whole thing with puff pastry you should be able to find puff pastry just like this on your frozen aisle on your supermarket as you can see once it was done everything was evenly wrapped that is how easy it is to make this to ensure that we're gonna get a nice golden brown color i applied some egg wash you can also score it right on top if you like using a fork or a knife whatever it is that you like is up to you i also decided to throw in a little bit of flaky salt that special crunch right on top will be perfect because as far as preparation that's all you got to do throw it in the oven at 400 degrees fahrenheit and cook it until it's golden brown just like this as you can see i had a little bit of leakage so make sure you learn from my mistake and wrap that thing tightly and i'll tell you one thing be careful because this thing is addicting as this will be perfect with any meal talking about that by this time my smoked short ribs are already and this is what they look like after 4 hours of smoke you can see the mahogany color that is a sign that we have a smoke ring but most importantly the smoke penetrated into the meat which is exactly what we were looking for the only thing left now is to throw it in the bag vacuum seal it because it's ready for seven i'll be cooking all of them at 185 degrees fahrenheit for 24 hours this will cook them to perfection and they will be extremely tender and i cannot wait to find out which one is gonna be best [Music] short rib let me know in the
