welcome to the end of chicken week where today the boys go head to head to head to come up with the ultimate fish to win brownie points and of course the theme is chicken let's get it on now the times we all have with chicken is the fact that sometimes it is the most basic recipe on a menu in order me to make this the ultimate winning recipe I have to use all the cooking techniques to make the most incredible scores cause when I gave you chicken and mushroom pie and it starts by making a pastry which I'm terrified of which flour butter eggs and two herbs in a food processor I know what you're thinking and yes I'm making salt babe chicken James and I might have had a slight disagreement I asked for salt baked chicken he developed some baked chicken but it's exactly the same thing we're going to make salt bake to stage chicken with fondant potatoes and a beautiful goat's cheese salad boys I'm gonna sprinkle this all over you my thought process was start small and work your way up so I'm going for a chicken sandwich it's pulled chicken I'm going to dip it in as you just going to have saffron in it and it's going to be layered with basil mozzarella the loads of great stuff it's going to be delicious but it's not going to be as hard as making a pie now when I said simple I meant simple I'm doing a lot of reducing so I'm reducing down some pork to make a flute and I'm reducing down to a chicken stock open pan and take about an hour right my dough is nearly done they'll bring it together in thinking film and into the fridge to let it rest so they wouldn't need any salt for their recipes wait wait wait wait wait salt it's being caught or made to do this elbow there oh yeah can you - yeah ultimate salt man yeah there we go look at that look it gone the kit for my salt make sure I'm looking to make something the kind of feels and lives a little bit like wet sand that's going to be the most amount of salt that you've ever seen mixed with four egg whites some herbs some lemon zest some onion powder some garlic powder and it's play you must get such eternity in boxing I can't remember the last time I wash my elbow I am about to attempt a technique has never been achieved here salted foods by any of us all been Apple I'm about to do skinny chicken now cut around the entirety of the breast and its entire back I now have to peel the skin away but you can inger cooking I'm just about to be mine this is getting poached in my poaching liquid one to that what are you working on it I don't want to eat that now I've got my skin on a tray now going to salt and pepper it and then stick on a bit more grease with people on top another trying to top of that to keep it flat in the oven it's in the oven at 180 for about 45 minutes but keeps checking on to your house get on oh oh why give me you're so proud of yourself aren't you a day to find something anything [Music] and now to pay order the rest of the salt over my chicken feel it in you are you poking your chicken your butter yeah may guess what I'm doing waiting your chicken and butter you got it but I got it Brandi oh look at my hat all right it's fine pressures where you going to marry Jake I'm worried about him what what the hell are you doing now what is it we just were making a slow chicken right all the butter and then all the salt on all the chicken dropped up sorry it was a recipe he's run this recipe by changes us you know your show no I bet when he says he's run it by said the next up very much like Mike I'm poaching my chicken I've got some butter melting down there but with some fresh herbs like a go into that and a clove of garlic and it in my in my legs and let it poach for about 40 minutes yeah chicken it gets more mental every time I turn around once your igloo is built put it into an oven for an hour and then let it rest for 30 minutes okay you offer a week weeks worth of them chicken week yeah did you ever find our walk home first yes digit chicken the chicken came back and came first check in then the chicken grows the egg inside the chicken yep and then you put in the oven covered in salt yeah okay exactly yeah I'm making what oh yeah there was an egg lying around and so we put it back with its family did you put the egg back in the chicken when you can you roast a hot pan sauce off get it foaming love it a little bit what's still foamy in Mia mushrooms get a splash of brandy watch out oh my god oh oh hey hey it's sorbet and flambe Oh pad un-clutch there you go you missed my really pipes or the funny joke then you didn't listen to a joke I was confident in the flat the arrows like it was funnier than that what in a minute to go with my sorbet chicken I'm going to serve potato fondant and a watercress and goat cheese anat my potatoes I'm going to peel them cut them into disks and then try them off in some butter before adding some thyme and some chicken stock and then they all reduce down and all the juices get in it then we like xo9 I'm going to pull some chicken and yeah [Music] now it's time to combine this is my reduce down pour this is my reduce down stock I'm adding the port a little bit of time having a taste until it tastes good my poaching liquid is a chicken definian is now being reduced back down I'm going to take all of the crap out and then I'm going to put the chicken back in the first erster Co tik tok tik tok tik oh yeah mmm yummy I've rolled up my pastry nice and thin then allowing that into the tin pushing it into all the corners then trimming off the top of a knife then I'm going to dock it I'm going to line it with some blind baking beans but into a fridge for about 50 minutes before I give it a go at cooking it would you reckon it looks well as I'd expect yeah what do you do now well I've got to plate up my fundable Tytos are going to make a quick watercress goat cheese salad and then we're going to get the chicken onto the plate as well maybe take some of the crust off I don't know yet still there it was shrunken back too much now I've got a brush you make you're backing up and hope another five minutes while the pastry bakes I'm going to make a sauce around the mushrooms and kick in with flour cream and stock next up roll out my lid now it's time for the start of the shot here is I've got all I can that's now going into another for 20 minutes and hopefully it's worth [Music] this is it I'm going to take the sandwich I'm going to slowly dip it in the shoe put the lid on and in the steam it's going to rise up inside the lid and the chicken sandwich is going to take on all that flavor so you're going to have juice on the bottom and things you from the sides on top I've never seen anything like this before my life I thought this is unnecessary then that's perfectly clear hang let's see let's see what's in that Oh [Applause] you that was battled yet I'm intrigued by this can we go here though okay so Jonna dust it off and we'll try some chicken I think the thing with salt-baked is it's never going to look the most appealing it's always going to be anemic however the theater of cracking into which we've already had and the flavor should be spectacular they will see while you're doing that I'm going to take fun of the satyrs because front plates are one of my faves but online it's covered in so much butter mm-hmm and it is so delicious mm-hmm if we're doing a potato battle you'll be winning right now that looks like dang good chicken he's damn good chicken very good oh holy crap that's the best place to chicken I've ever had in my life what hey what am i sorry think about what you're saying just bit sorry just plain plain chicken a slice of chicken so it's a plain is chicken I've ever had in my life you're right no that's about fashion volition as just as like this little is nothing else to that it's just chicken yeah very delicious what I love is poached chicken I love the flavor of saffron in fact the last chicken battle you won with a saffron mayonnaise and fried chicken so you've got very safe to go back to the same thing oh that is delicious of sweetness of the tomato and the the Julie porch eNOS is even though straight it feels like make the optional is because the basil interesting chicken is only one part of that whole dish but together is important to the sandwich whereas that is like we're judging chicken this is like we're judging a whole combination of amazing flavors that together balanced making incredible chicken sandwich is one hell of a service okay you have shown a lot of skill a lot of different technique things like the chicken skin I don't even need to cut into it to note that if they clever great idea and that it's held together the pastry is not cooked I want to cry oh you really didn't really want to get together that should go mushroom filling is phenomenal the chicken skin on top is genius it could have just done within a few extra minute line baking and a few extra minutes or slightly high heat offered okay that's annoying because I came to this table thinking I had a winner and that surprised me and the page she wasn't quite there as I am at a soggy sandwich however all three tastes incredible Jamie : this if Sammy wins this you can't win it look in Brandon point has to go to Jamie for still basically I would net your idea from stocks which I would never have thought of still making an entire chicken that's magical they're all great but that's magical that's only my decision though that's only wear one branding point is going you guys do get to say we love to hear up in every single week there was a poll on YouTube to go and vote for who you think would be your favorite fat tastes amazing ten more minutes and cooking and that's would've won that's the surprise that came from moaning to be honest I can't quite believe things this one's do chicken wings but you want to get in recipes a go we even adjust Series timings a little bit this pastry so that is a winning pie no that is a delicious pies that everyone will want to create at home definitely and why not use four different scenes of yourself what's that that's not a sentence do it anyway
