Hmm, I kinda want this but I’ll skip the mac salad and maybe even omit the burger since there’s already ground beef in the “hot sauce”.

try not to be put off by the name ladies and gentlemen but we're making a regional classic from upstate new york the garbage plate story is that a greek restaurant owner nick tahoe years ago started creating this plate filled with all kinds of stuff i think the college kids ultimately dubbed it a garbage plate because they'd come in drunk late at night and they'll give you that play with all that garbage on it hence the garbage plate it takes a few different forms it's essentially two starches in our case we'll be making home fries macaroni salad i hate macaroni salad so i'm gonna try and make one i like there's a very loose kind of meat sauce i think they call it hot sauce there will be a burger patty with melted cheese there will be a sausage there will be onions and probably ketchup and mustard you know that expression whatever it is it doesn't matter it all ends up in the same place when you eat it kind of looks like that to start a little bit i mean that in the nicest way possible i'm excited about this never had one had to do a little research and i think my version while perhaps not a hundred thousand million percent true to nick's in uh rochester it's gonna be damn good we got a couple things to do so shall we get going boys let's do it wait wait wait one quick thing one of the implements we'll be using today is a cast iron pan but not just any cast iron pan it is the sam the cooking guy 12 inch custom cast iron pan oh snap please don't swear in the presence of the pan oh snap and check it out first edition 2021 and you can't even buy them yet because they're all not here they made us a few because we got to take pictures and get excited and start playing with it and we have a cast iron plan it's so thrilling it came i almost peed myself okay there was no peeing involved but i was very excited very excited all right that said let's get going we've got um we've got the home fries to make we've got the the the the the what the hell is it called the the meat sauce to make and then the macaroni so it's all good cast iron pans on the flat top so into the sam cast iron pan we put some bacon and if i put it on the heat a little earlier it would be sizzling the bacon will do two things for us today it's going to leave some grease in the pan that we can cook our home fries in and then the bacon itself once it's a little crispy we'll come out and we'll go into our macaroni salad this is my desperate attempt to make macaroni salad that i actually like what is macaroni salad macaroni salad is just cold macaroni that's been cooked cold macaroni that has celery and mayonnaise based kind of relish and like that in it let me just get that going oh look how nicely it cooks in the stcg cast iron pan 12 inch custom with a lid oh boy it's gonna be good in our other pan put a little of our favorite chosen avocado oil and some ground beef we'll go with about three quarters of a pound now this we want to get sort of a decent sear on [Music] this was my grandmother's cast iron pan sitting beside her grandson's cast iron pan all right everything's just gonna do its thing bacon we want just to the point of being crispy not too too crispy if it's too too crispy it tastes burnt to me i don't like it and this we do this we're cooking this through we've got stuff to add but we need this to the point where it's got its color kicked out of it first the beef we want to really be chopped up into little bits we're making like a loose chili so big chunks are not what we're going for so break this up you're gonna have plenty of time to be able to do this but a couple cloves of garlic go into our beef a tiny bit more avocado oil you know i like to do that let that start to do its thing get back in there when it smells like amazing garlic you mix now we can add our seasonings again i don't know what's traditional i know what i like and i'm gonna go with the following i have to resave that because max made a clump with his chair so let's go with a little cumin we want this flavorful some cayenne some smoked paprika you know i really use very often the same lineup and a little chipotle chili powder i'm sure there's raw chester ins what would you call somebody from rochester raw chestonians yeah there's probably rochestonians right now pissed off by this version of spices but hey isn't that what cooking is isn't it about making it your own now if we want to richen this up a little bit and we do put in a little tomato paste like that perfect let this burn its way through a little bit oh the smell see now i'm really getting some delicious toasty smells coming out of this from those spices now we'll help this along with a little beef broth like this and it's going to suck it up right away but we're going to want it a little loose not watery but not thick and chunky so we'll continue to add our beef broth we'll probably end up with about a cup or so cup and a half i'm going to turn down the heat here a bit and let this simmer away help the flavors build up oh it's going to be good gonna be good turn that down let's check our bacon see where we're at okay this is good this is good almost too much for me i took my eyes off it so let's just do this we'll let the grease run down and we'll just take this little container and put the bacon right in here [Music] perfect next are potatoes they're diced potatoes already done the difference between standby okay not that way making your own home fries is not complicated you take a potato you peel it you dice it up you put it in boiling water two or three minutes and then you get this or you open a bag and you still get this so these are going to now go into the pan we want to go a single layer because the single layer is gonna let us get them crispy and beautiful on the outside and color means flavor and we want that so while they're in there doing their thing we're gonna take our lid put it on top glass lid you get to see what's going on we're so thoughtful aren't we and we're gonna let it do its thing for five six minutes and then we'll give them a little stir so the other side start to their magic look how great this looks another little hit of the beef broth okay that's just gorgeous straight gorgeous isn't it yes gosh this thing's gonna be dope as you kids would say because dope to a guy my age either means stupid as in he's a dope or let's do some dope words that never ever escaped your mouth no no i didn't say that i did not say that i did not say that i was a good kid all right it's time to crack on with our uh macaroni salad see if we can do something decent with it all right to get us started with our macaroni we're gonna chop up what goes into it and that's gonna be some celery some red pepper some green onion some serrano pepper for a little heat pickles and a couple hard-boiled eggs [Applause] impossible i'm old apparently is what i am and a couple hard-boiled eggs so we'll take a quick look while we're here that see that crispy potatoes yes yes yes so do more of this do more of this leave it let it get like that that's what makes these things amazing we're going to give them one little splooch avocado oil just do a little bit of this to get the oil around happy to put the lid back down and carry on with our macaroni salad and our mac uh of course it's already been cooked you can't buy it like this i don't think i can't remember what this shape is called i have no idea it's called uh i have no clue all right here's what we're gonna start with some mayo and before you freak and go holy crap dude that is just a [ __ ] ton of mayo well it's macaroni salad everybody so deal with it i'm gonna use chansey and my new favorite stirring garlic looks like a lot but this is a lot just give this just a start of a light mix we'll probably add more mayo but i like to try and get the garlic part mixed in before anything else all right now we can start to add so let's do this we won't put everything in yet but we've got our celery we've got our red pepper we've got our green onion love it we've got our serrano for a tiny bit of heat we've got our pickle love love love love the pickle and our egg so great this is so great now we mix oh we forgot our bacon beautiful i'm forgetting anything gorgeous macaroni salad never been a fan hopefully today it's actually looking not too bad maybe a tiny bit more of the mayo what definitely not enough mayo oh you think it needs way more no i'm saying that's the last thing i would say we need more of but you could see it was a little dry salt and pepper like that a tiny bit more and i'm gonna put a little smoked paprika in because i'm a super fan of it i've said it before if you're gonna buy paprika just buy this smoked one it's so much better and now we mix you don't want dry macaroni max okay that's not wet it's perfect i know a little taste some of everything a little bit of everything looks perfect to me crunching from bacon from celery little serrano heat okay damn it i could actually eat kind of a bunch of that all right macaroni is done our uh our our beef gravy i don't know what to call it that's us our grief our beef hot sauce thank you max it's done potatoes done i need to cook a sausage make a burger patty and cook that boom we're eating big super unhealthy but delicious all right our proteins of choice today will be a burger patty that looks like this i'll season it and i'll put it down we'll let that do its thing and the other thing is a sausage a little grease i butterflied it down it goes and we'll get some extra color by just giving it the weight on top and once these guys are done we're there because everything's looking beautiful let's have a quick look at the sausage [Music] that's lovely same rinse and repeat burger's ready to flip let me give it a little seasoning and over we go nice crust texture you'll feel that that's what you want and i threw my two cast iron pans back up on the flat top to warm up my beef what'd you call it max my hot sauce my hot sauce and the potatoes and this is gonna be soup herb take that off we're going to add some cheese to that burger patty in a second we're ready for cheese on our burger i'm going with white cheddar all right so let's give it the the old cover help it melts and we're ready to go boys let's hit it the crazy thing is the plate of choice is a paper plate they're always round i couldn't do it i had to get an oval one all right but let's start with our potatoes so the way this sets up is you take the home fries or look how beautiful and crispy they are you do home fries or fries or whatever your carb of choice is on one side beautiful a few more okay lewis and then the other side gets the macaroni like this trying to keep this nice and neat i want to do them proud even though i've already jacked it up by doing things that they don't do but really isn't it about how it eats now we come in with the burger we go like this come on don't fail me now kid beautiful and our sausage like this and now you know what comes next boys the hot sauce the hot sauce maxi exactly and the hot sauce is going to look like this oh this is perfect oh my god how do we do here everybody's happy three more things now comes obviously with a fine dining meal like this you need fine dining other stuff so let's go with some ketchup this way and in the other direction or as we say in canada the ultra direction mootard and he gets a final glorious sprinkling of some raw yellow onions in honor of greg rampi and that ladies and gentlemen is your rochester garbage plate good and now i've got i've got perfect timing i've got like three minutes i think to win an ebay item another garlic press i've been buying them we're gonna give them away man so let's have a look this side shows the burger better the sausages or hot sauce the mac never had one i'm excited all right so let's just do this just try a bite of these great home fries with some of the meat sauce on top of it you know what i like about cooking the home fries like this you've got that gorgeous crispy outside and a light fluffy inside [ __ ] that's really good all right little mac and it's hard to completely do this because everything's sort of covered but that's the idea so you're going to get a little mac with the sauce again somehow that works i'll tell you what i like is the heat from the smoked paprika and the chipotle chili powder in that meat sauce it's really interesting i don't know if their version is like that because i've never had it so i'm going to cut a bite of here i'll do it backwards for max's camera some sausage now let's try to garbage this bite up with macaroni some of the meat sauce and the sausage all at the same time that sausage was sweet onion or sweet pepper mmm really nice contrast with the spicy meat and then one one bite of burger just because you got to have all of the oh can i know if you can see can you see in here still a little pink and gorgeous damn hey folks don't overcook your meat please unless you like it well done and then what you like it well done i don't even like mustard and i'm liking this i was fully convinced i was gonna hate this whole thing i say what you do you have all the components ready let your friends put it together they can have as much home fries or macaroni or the sauce anything they want they can build it the way they want yeah that's really what i think this is all about oh it's dirty the nikiri knives today's friday go to the link in the description get your name on the list
