hold on to your shorts because we're making one of my favorite old school chinese recipes sweet and sour chicken round of applause gonna love this i love this it's the juxtaposition of the sweet along with the sour that makes it so good and then there's the crispy and then there's the delicious and the sauce and the whole thing and we're doing something special with the sweet and sour chicken at the end if max hasn't already teased it and have you would you have teased it yet no no okay you're gonna like this so here's the plan we quickly stir fry some vegetables take them out make a sauce let it simmer prep the chicken boom dinner on the table less than 30 minutes it's a 30-minute meal what did we call it dinner on the table dinner on the table in 30 minutes or less no i'm not rachel ray what the hell was her show called oh 30 minute meals why did i do that why do i feel like that about her i don't know her is it her success that makes me want to go am i jealous that she has a dog food company that all the money goes to save dogs no i should like her what didn't she is she the one that was yamo yeah she was yummy maybe it was maybe it was yummy maybe it was yumma i have no reason not to like her other than my own basic insecurities let's throw those out the door right now rachel i'm a fan let's get to loving this though by the way i i once dressed up as rachel ray for a uh for a video not an attractive one but definitely a version of her and before we do anything else hit the subscribe button if you haven't done it notification bell and that just brings us to you you they don't make this anymore well i've been collecting them and i've got a bunch and we're going to be giving them away do we know how to subscribe everybody to subscribers we'll figure it out but coming to a thing near you soon you've cornered the market on vintage silas garlic presses here we go we need some veggies in this of course we need some veggies in this not a ton so let's start with our red pepper we'll just take this little membrane piece out and we'll cut this guy into little squares oh fine just a little more just in case we need it all right which we probably won't same with the green bar that's enough of that and let's do a little onion beautiful break that up all right these guys into our hot pan that's waiting first in a little bloop of avocado oil and then the vegetables our goal is simple we're just trying to soften these guys so this is probably five minutes doesn't need anything else just needs heat a little tossing and we're gonna be fine okay so this is ready just gonna take it out put it in this bowl and then in this pan we're gonna make our sauce and into the same pan we go starting with about a quarter cup of ketchup yes ladies and gentlemen our regular everyday french fry sauce is an important part of this we need rice vinegar you could use apple cider vinegar you're welcome to use a little sploot or two of soy that's maybe two tablespoons a little dash of sesame oil remember a little sesame oil good a lot of sesame oil takes over it's bad a little brown sugar a little white sugar some sriracha i kind of like a spicy version of sweet and sour and where's my garlic where's my garlic here it is my garlic press this one that's a big boy garlic clove oh my gosh then you go buddy and we mix so you want this all nicely mixed together so this is going to take a couple of minutes you want this to start to simmer a little bit so just let it do its thing oh it's got that distinctive sweet and sour smell already yum or as my new friend rachel ray would say yummo and when it starts to bubble away beautifully like that we're going to add a little thickening help in the form of a tablespoon of corn starch mixed in with a couple tablespoons of water i'll go about half mix this in beautiful now we're going to turn this down let it simmer a bit and while it does we'll begin prepping our chicken wow this is going to be amazing and there we go you know what that is max your lovely thighs they're not my thighs they're chicken thighs but yes so here's what we want to do we just want to cut these guys up into little bites then we'll just throw them back in this bowl okay nothing nothing crazy just like bites you know what a bite is a bite looks like that to me okay like that to me like that so just just do this just listen to what i'm saying cut them into bites think about how people are going to eat your food you don't want to give somebody a piece of chicken like that that would be ridiculous i imagine you might be serving this in a bowl with rice in the vegetables and stuff and it's a chopstick proposition not a giant piece like that's crazy so cut all these up then we move on to step two all right and when you're done everything's just gonna go back in your bowl like this spread it out we're going to give it two things so one is a quick little seasoning of our lovely combo salt and pepper like this next up is a nice dusting of cornstarch this is going to help make a little crispiness to this when we fry them oh my god you know cornstarch is just like you just can't control it okay so once you've done this this is what we're doing we want everybody to be coated nicely in cornstarch you could use flour and cornstarch you could use flour you could use rice flour i'm a fan of corn starch for this i think it's easier one ingredient everybody's good all right and when this is done and you feel that your pieces are nicely coated it's time to fry i want to tell you about rakon earbuds you know how this as a shallow fry situation we love our deep fryer so we're going to use it just drop the pieces in individually we'll make sure they don't stick after and we'll probably do this in two sessions because we don't want to overcrowd because when you overcrowd max what happens you lose heat that's it baby that's it all right so we do that give him a quick check nice everybody staying separate look they're small the oil's at 360. these are going to take about four minutes ish i'm so happy we're doing this it's been a while since i've had sweet and sour chicken and it always puts a smile on my face and by the way for anybody that thinks this is a mainland china kind of thing pretty certain this is an americanized dish but who cares it's delicious and we're there so just let them drip a second drip drip drip drip drip see they're not getting brown like fried chicken but they're getting crispy on the outside and that's what you want and the brown doesn't matter because they're getting coated in that sauce so when they've dripped enough take them off throw them on a baking sheet with a paper towel or a plate with a paper towel hear that like little rocks put it back and drop in the rest ow be careful it splatters and when it gets on you you won't be happy so look i might have glossed over it too quickly put a half an inch of oil in a pan a cast iron pan or a little pot or whatever you have you can do the same thing you're going to have to turn the pieces but you're going to end up in the exact same spot without using a big old deep fryer thing and hello gorgeous same treatment we drip we drip we let it do its thing shake shake then they join their buddies on the baking sheet now we do our thing so here's our sauce gorgeous warmed up nice the just the perfect thickness i love this so in a traditional version of this you take a handful of the chicken drop it in add some of the vegetables like that and now give this a toss and just look how gorgeous that is now this gets served on a plate it's fantastic but i have another idea for it and now what's it need you know everybody knows what this needs now it needs a little bit of this and a little bit of this and that now is unbelievable wow i want to eat the [ __ ] out of that and here we are wow look at that look at that [ __ ] by the way that was f-u-p-p-e-r for anybody keeping score son of a gun the chicken the gorgeous sauce these veggies in here damn it time for a quick bite right right no we could argue about that so let's make it that one shall we yep damn lucky lucky you know the first thing you get you get that that rice vinegar but you know there's sweet coming um and uh that like couple tablespoons of sriracha crazy good all right this on some rice in a bowl sticks in front of the tv watching handmaid's tale or something amazing unless you do what we're about to do to it boys ready ready ready let's make something badass and we begin with a big tortilla you know what that means right burrito burrito time okay so what can't we burrito burrito [ __ ] everything so we make burrito a verb a layer of rice because why not because who says this can't be a thing a thing okay right everybody good with that alan don't say this can't be a thing alan because this can be a thing alan now we want to do a couple things to it and give it a little extra sriracha because we like that i want to do an extra little layer of some seeds ready for what's next chow mein noodles baby the old school kind just nice little bed of them because this crunch is gonna be fabulous in here and then the start of the show ladies and gentlemen the sweet and sour chicken which by the way could be shrimp could be pork could be pretty much anything right it doesn't have to be this tofu for those of you that are not meat eater fans which i'm guessing are not too many in our audience based on what we do on a regular thrice weekly basis all right i think it's just time to do this now oh boy oh mother hold on nobody move nobody move i'm talking to the chicken in the burrito good lord let's bust it open all right so here's what we've got we have what we think is gonna be crazy delicious yes that's what i'm talking about is right so i know how this is going to be every part of me knows how this is going to be it's going to be freaking amazing i forgot green onions watch i got an idea okay ready for this we're ready here's how this works you put your green onions down like that then you pick up your sweet and soft chicken burrito and you go like that yeah super normal just what everybody wants just a casual amount of green onions holy crap man let's do this dinner on the table in 30 minutes dinner in my stomach in 30 minutes it's it's the play between the sweet and the sour and now the spicy the extra sriracha that makes this so much better i really want you to make this you don't have to go crazy with the burrito though i'm telling you it's something you should do and by the way the rice was just one of these little packs that goes in the microwave for 90 seconds and boom you're there all right thanks everybody for hanging with us sweet and sour chicken or shrimp
