hello everyone welcome to my channel in the kitchen with rosie i'm your girl miss rosie thank you for coming along with me on this journey and thank you for subscribing yeah you thank you [Music] baby [Music] do today's recipe is sauce which is traditionally made from pig's feet it's also really good using cow's food which we call bull foot and that's my favorite but the traditional way is to make it with the pig's feet so come along with me and i'll take you through the ingredients and the recipe now the first step is to wash those pigs fit so i run some cold water squeeze two limes in the water and give them a good wash down thank you [Music] just tell me do i'm adding some pig's ears to the cells and that's completely optional i'm giving them the same treatment as the pigs feet by washing them in the lime water [Music] i've added all the meat to the pot now i'm adding some onions i've cut about two onions and i'm just gonna let it cook in there i'm also going to add some salt and it's a little more than i would normally add if cooking meat but the water is going to get thrown out and i'm going to wash them so it's not going to be salty those are the ingredients for the sauce parsley scallions celery onions hot pepper and lime traditionally those are the ingredients that would be used but i'm also adding some bell peppers red and green bell peppers and yellow as well as a cucumber cucumber does add another level of flavor to the sauce i have minced the onion scallion and hot pepper sliced the bell pepper and cucumber add in cold water to it sauce is made traditionally using cold water but some people prefer to use hot water [Music] now for a very important part of the sauce add in some lime juice two things that would make sauce not right for me is not having enough lime or enough hot pepper or too much of those two things i can't tell you how much you add that will depends on how much you're making how much liquid you have in there remember you can add but you can't subtract so start off small taste it and add more as needed the same thing goes for the salt add salt depending on how much liquid you have be sure to taste before adding the meat make sure it's not over salted you can always add more salt if you need to start i have washed and removed any excess fat from the meat and clean them properly before adding to the mixture now it is very important not to use the same water that you cook the meat in to make the sauce you don't want it to be like a gravy you want to use fresh clean water to make it that's why it's called sauce and not sauce [Music] [Music] baby and there you have the finished product it goes very well with bakes or johnnycakes roasted or boiled breadfruit bread and especially well with potato salad or all by itself so thank you for watching i really enjoy making this recipe for you and i hope you enjoy watching and if you did please leave us a thumbs up and if you haven't already done that subscribe to this channel by clicking on the subscribe button and turn on the notification bell by clicking on that bell for more videos and i'll see you next time in the kitchen with rosie where the secret ingredient is always love [Music] you
