welcome to the Wiis kitchen today I'm going to show you how to make something from our rules it's called sows let's get it going I'll be in the kitchen just fixing something to even out my recipes to take the seeds out of here you know we got dumb limes lots of them cucumbers salt pepper corn complete seasoning and we got the pork beautiful let's get it goes let's go ahead and prepare our pork like that I've got my pot boiling I'm gonna add my pork in and this pork was clean you know me I keep my stuff clean that it ends just with some water are we gonna boil this we want to get this meat nice and tender get that meat in there okay now I decided to get some first time which I don't have in the beginning two ingredients but just a little handful of time I'm going to throw it in there I'm added a little bit of salt not too much complete seasoning I'm gonna take my garlic smash it I'll just throw a few clothes in there I'm gonna use for I really know about a measurement tonight cuz I'm just winging this when you make this self so you make it with love so there's a lot of tasting in between so it's all how your tastebuds go and how much flavor you're looking for and we're just gonna let that sit and boil for a bit till it's nice and tender are you gonna check in in about 20 minutes to see how that goes now I'm gonna get all of this stuff cut up so that we could prepare our pickle I got everything chopped up if you see I got the cucumber is nice and diced I'm gonna go ahead and add I'm add in my green onions and my parsley as you can see you just lots of it [Music] add my peppers got some habaneros and some red peppers to have paneros I kept the season here to give us that heat I got about a quarter of the onion then now we're just gonna top all of this all for nothing but line you gotta ask salt for taste and then we're gonna wait for our meat to get done put everything together they're gonna start squeezing online you can be using a lot of line here [Music] [Music] okay while I do this all right finish up those limes go ahead add some stir add some salt like I said there's really no measurement to this is just your taste gonna have to taste it stir a little bit more touch a peppercorn now I'm going to taste it and in here okay you need a touch more salt a little bit more lime juice [Music] and then when I add that meat I'm gonna do the same thing stir it in there because it's gonna have to soak I'm gonna taste it and then you you add to it but you have to if you have to been about 20 minutes 25 minutes or so let's check to see if our pork is good if it's nice and tender take a fork and went right to it so I think that's good yeah I definitely clean it that's done let's turn that off [Music] all right my pork is cooled off I'm gonna get it in this pickle just gonna go in here and throw it all around get it in there throw it all around get it in there get all the juices on there do you usually do this before you usually do this with pig feet but you can use chicken pretty much whatever you want to use these days they don't rip they pickling everything with this recipe they also serve this traditionally in Barbados with black pudding I'm not too much of a fan of black puttin myself but black pudding is very good for I know a lot of people that like it it's just not my cup of tea also they serve some bread fruit to the side slices of bread fruit so we gonna get this meat in here make sure everything is nice and covered we can get in the fridge for a minimum of two hours overnight is even better because that's when you get all the seasonings all the Jews everything's soaked into that port this this dish is also good for those those hangovers you know you guys that go out and party I'm too old for all that right now did you block that a party double hangover this is a perfect perfect dish to knock that out all right I'm gonna continue doing this get this in the fridge like I said for minimum two hours and then I'll show you how to serve it been pickling soaking whatever you want to call it for the last two hours and I'm ready to eat and this looks very good take a look at it now here we go we have this pork pit bull Salas is what we bagans call it it's not all the way authentic it's pork but it's not the pig legs but that's okay because it tastes just like home and I'm telling you this is how
