[Music] today i'm going to make sicilian style beef bruscho this is the way my mother used to make it you see either round or flank steak for this recipe take the pieces of beef and place it on a piece of wax paper [Music] place another piece of wax paper on top of the meat and flatten it with the mallet to tenderize it flip it over and do the other side once you've done that salt and pepper both sides of the beef next saute a coarsely chopped onion and then set that aside to cool [Music] then chop some parsley and set that aside also coarsely chop 3-4 hard-boiled eggs next prepare a basic tomato sauce into some olive oil saute some chopped garlic and basil add in one can of chopped tomatoes if you have some wine open add a little splash of red wine also add in a half a teaspoon of salt and simmer on low next you can begin to fill your beef slices in a bowl measure out one cup of seasoned breadcrumbs to that add a little olive oil and mix that together just to moisten the breadcrumbs [Music] distribute the breadcrumbs evenly over the meat [Music] do the same with the sauteed onions [Music] and then next add the chopped eggs [Music] then generously add grated pecorino romano cheese [Music] and if you like you can add some more cracked pepper [Music] finally add your chopped parsley [Music] once that's done you can begin to roll your brush holes first lightly press down the filling then take one of the ends and begin to roll it up tucking in the sides as you go along [Music] secure the meat with the toothpick use several if needed then tuck in the ends and do the same thing pushing in the filling and folding over the meat secure it using several toothpicks [Music] [Music] [Music] [Music] [Music] so [Music] take your stuffed brush all and place it into a frying pan brown them on all sides using a little olive oil [Music] once you have browned to brush all take them and place it into your tomato sauce [Music] [Music] [Music] if you like you can deglaze your pan and place that liquid into your tomato sauce cover your pot and simmer on low for about three to four hours until the meat is [Music] tender when the brush all is completed cooking take them and place them on a dish and allow them to cool slightly [Music] then remove all of the toothpicks slice and serve your brush all [Music] [Music] [Music] you
