[Music] please [Music] hey everybody it's harry from celebrate daddy barbecue the youtube channel that teaches you how to master barbecue so you can spread barbecue love you guys really like my ivca chicken recipe and i showed you how i did a competition chicken that has won first place many times some of you said that is a great recipe but that's just too complicated you gotta go into injection you gotta scrape the skin you gotta use transglutaminase the blue so you do you have an easier recipe well i'm glad you asked because in this episode i'm gonna teach you harry's championship chicken the shortcut recipe wait i have a chicken here i have my rub my first place usa rub and then in some sauce we're gonna show you guys how to do a brine with just water salt brown sugar and a little baggie we're gonna create a championship chicken harry's version shortcut style [Music] let's uh go ahead and brine the chicken and before i do that let me talk about some signs about brining so you guys can do this at home and understand what are the mechanisms of brining so the idea for brining is to create a salt solution for those of you who have ever tasted ocean water that's an important point for me to point out because that will allow you to calibrate your tongue ocean water is about 3.5 percent salt and in order for me to do this quick chicken brine i want to create a brine with the salinity that will penetrate the chicken approximately in about four hours for competition purposes so uh i'm going to show you guys how we calibrate the brine if you make a brine the way it works is one percent salinity on the brine will be that one pound of salt in 100 pounds of water that gives you one percent salinity so the ocean water around the world is around 3.5 in this particular example i am shooting for something a salinity of 8 percent because that's calibrated to create championship chicken so these are black belt tricks that i'm kind of teaching you that essentially took hundreds of hours to perfect but i'm doing an eight percent brine i have four tablespoons of salt and this is just regular salt that you find in the kitchen this is not even kosher salt because i calibrated it by weight i did not calibrate the salt by volume so there's four tablespoons of salt i have four cups of water here ready to go i'm gonna put the salt in there this will result in about eight percent salinity or eight pounds of salt in a hundred pounds of water i'm gonna add a little bit of brown sugar to sweeten it up here about probably a quarter cup or half cup not so not so critical the sauce is very critical but the brown sugar is not i'm gonna stir it up make ourselves a little eight percent salinity brine pour it into the chicken bag here can you add other things now yes you can you can add some herbs you can add peppercorns you can pretty much do anything but this is a super duper simple championship chicken recipe that i want to show you you're gonna get absolutely fantastic results even if you're a backyarder you just do what i'm gonna show you we just salt brown sugar and water the chicken is going to be phenomenal when you're done this is a 8 solution and this will sit for about 4 hours in the refrigerator just be careful you don't puncture the bag because the bones are kind of sharp so you notice there's the tip here i put the kind of the skin side down i left the bone sides up so that in case there's any puncture it's not going to leak all over my refrigerator i'm going to put this carefully into a tray like so so that in case it leaks it doesn't drip all the way your refrigerator and you want to let it rest for about four hours we're gonna season it up with the slappy daddy chicken wrap and then gonna cook it into the pit and at 275 degrees [Music] taking out the fridge and it's been marinating for about three hours let's put the rub on and cook it getting ready to go [Music] let it dry a little bit before i put a rub on you can also put the wing back like so and then you can untuck it after you finish cooking some more sweaty rub on it all right we let it sit uh for another about 45 minutes to let the rub settle in and we'll put it in the fridge and we'll take it out and cook it on a 275 degree pit [Music] we're 275 and it's coming up to about an hour getting a nice color now so at the one and a half hour mark the uh crust isn't fully set yet but uh it looks a little dark so here's the little tip you just give your little chickens a cover with a little foil and it helps to make sure it doesn't get too dark so that you look absolutely gorgeous we are coming up the two hour mark and the chicken looks absolutely gorgeous beautiful crust now we're going to put in a pan take a look at this absolutely gorgeous chicken it's been about two hours and we gotten it to the beautiful stage where the crust has set the way you test it you touch it if it doesn't fall off that means it's ready to go to the next phase we're going to move to the foil face next get some butter on it spray on it just get it nice and tender and we'll put in a 275 degree oven for about another 45 minutes or so get it nice and tender you can do this in the pit if you want but btu is btu is bt so i save money by using the oven it's been about 45 minutes that we put it in the foil phase ready to saute it now add a little bit of sauce here [Music] [Applause] [Music] looks really good and uh just the thigh also looks pretty good i touched it here so the mod finish a little bit let's try this piece of breast so juicy moist great flavor here's a piece on the pie definitely good chicken if you want to do this at home not that hard to do now that i've had a chance to try a little bit now is mr bean's turn all right beans i
