Hey whats up guys Danny from Danny Macs kitchen great to see you as always I'm feeling really jolly and giddy right now because the holidays are right around the corner And I get really really excited like a little kid and you know for the holidays I like to make my friends and family something super super special so for this year I decided on making a rockin roasted rack of lamb it's like a tounge twister actually rackkin rockin roasted rack of lamb try saying that after a couple of drinks whooo anyway this is super easy to make don't be intimidated by this recipe I'm gonna show you how to do it and the presentation at the end of this recipe is gonna be off the charts so lets get started what I like to do when preparing this is first French the bones now what does Dan mean by Frenching the bones I'm gonna take a really sharp boning knife or grab a knife similar to this and basically just remove the meat from inside the bones because this is whats going to make for the stellar presentation at the end so against the bone just go right down ditto on the other side and then just cut right over we are going to do that for each bone we can remove a little at the top if we want this additional meat that I'm cutting off you can actually save that and it is useful or good for making a really nice sauce for this but I'll show you how to do that at a different time because I'm not doing that today so you can freeze that if you want season both sides of this with salt and pepper and fresh herbs pack those herbs on there flip it over do the other side I've pre-heated my oven to 450 degrees and gotten a pan super super hot with 1 Oz. of olive oil as we are going to sear the rack of lamb right now on both sides for 2-3 minutes and get a really delicious golden brown color really really important cause it seals in all of the flavor lets flip it on over see how we are looking that is beautiful this is what your looking for perfect golden brown color really amazing lets just do 3 minutes on the other side and were going to throw it right in the oven on a lined baking sheet transfer the rack of lamb right on to it I want to bake this to a perfect medium rare which is going to take between 6-8 minutes so at 450 degrees depending on your oven 6-8 minutes should be just perfect so go ahead and throw this in the oven and well check on it in a second we have a few minute lets make a really rockin crust 1 cup of bread crumbs lots of fresh parsley a drizzle of olive oil I'm just gonna pulse this all together or not this is what your looking for set it aside transfer it to a seperate bowl we'll be using it in about 4 minutes I'ts been about 4 minutes I removed this from the oven at this point brush dijon mustard on the back get a good amount and we are going to top this with our seasoned bread crumbs and after we are done with this we a re going to pop it back in the oven for an additional 3 minutes and we should be good to go so total cooking time for this was right around 8 minutes ovens vary i want med rare it's nice and firm so it's not to soft but I know it's not rare so lets cut this up and make a rockin presentation Oh also I allowed this to sit after I took it out of the oven for about 3-4 minutes because it does carry over cook if you do cut it right away all of the juices will spill right out and thats not what you want so lets see what we have got going on here Oh yeah thats going to be beautiful all right lets do this I'm gonna garnish this with some scallion oil that I threw together what you need to do to make this is take 1 Oz. of olive oil and a bunch of scallions and just pulse it in a food processor very simple now thats what I'm talking about guys enjoy! rackin rock roasted rackin lamb rack roasted I give up guys the plate speaks for itself the plate looks sensational I served it with fresh ratatouille which is really really easy to make you can learn to make that by clicking here it goes together with the dish really beautifully so if you like this recipe guys share this with your friends and family no better yet make this for your friends and family because I know they will love it just as nuch as you do!
