what's good everybody hey listen i ain't gonna over target you see this cat next to me you know who he is if you don't i'm gonna let him introduce himself but we about to show you guys how to make an excellent hey this is really us being on a philly cheese steak not authentic but this is our spinach talk to him nephew yes sir so i just had to catch a flight from virginia to get here to sunny california with my uncle av so we can make some cheese sticks for you guys let's make it happen let's do it [Music] okay look so we figured to go over these ingredients it's not a whole lot of ingredients right so look i'm gonna start off by showing you guys this meat right here check this out this is traditional we're going to go ahead and use that ribeye steak look at that thickness right there and i want to let you guys know that it's been in the freezer we put it in about it's been in there about an hour and a half you know i mean so to make it easy for us to slice it we got one bone in and this one down there is boneless over here we got mozzarella we're gonna put some parmesan in it then we go with the peppers as you can see right here we got green and red right that gives it a nice you know multi-colored look we've got some provolone cheese of course we have our hoagie rolls white onion a little garlic and then look i know you got something over here look you just had to have that i gotta add a little spice to mine kick it up a notch it will throw a little jalapeno in there and then last but not least we'll kick it up with a little black garlic sauce all right so we're gonna start by prepping our veggies there's no right or wrong way to do this guys but this is how i prep my uh peppers i like to cut the top off put it down like that and just cut around that core that way the seeds stay intact makes for a little bit easier clean up keep your wife or signif significant other off your back there we go get that out of the way do the same thing with the other pepper go ahead and prep these up again man you know what this is why i love working with another uh chef because look everybody got their own way of doing their thing you know what i mean absolutely then we're gonna add this jalapeno just add a little bit of spice most of the spice though guys is right here in the middle where the seeds are at so i like to remove those seeds these black gloves come in handy when you're doing that because you don't want to touch your eyes after you touch these seeds you'll be crying like your girlfriend left all right guys so again no right or wrong way to do this we're to make some slices going in one direction there we go i like to leave them kind of long what about you though you know that's perfect all right so we'll do the same thing i'm going to dice up the jalapeno though so i'll see how you do that usually i take mine i cut them down like i have them celery but you got a decent oh okay okay i thought you just want to go for that raw dog right here like that i like that big chunks in there big chunks hey pause chop those jalapenos up get them in their own little corner and the same thing with the peppers we're just going to cut those into strips like so i like to have a little bit of crunch on my uh my peppers and onions on the on the cheese sticks now look why are you doing that i'm gonna go ahead and just start putting a little bit of this oil on this griddle right here just move this around you know just start getting everything heated up all right so we got our flat top nice and hot we're gonna go ahead and start on these onions and peppers and then uncle abs will start shaving that steak i'm going down with a little bit of this cooking oil throw those white onions right on top and then we're going down with our peppers hey all i can think of right now is what you always say no i can think about that too but i'm thinking about looking good hey i love the color yeah that's why i like to use the uh red and the green pepper because it gives it a nice color but guys you can use whatever you want because they taste about the same now what i'm doing right now is i'm making sure that i've got no jalapeno over here i can't tell the difference between jalapeno or there's green put something on it no no no no no okay so look now while he's doing the veggies what i'm gonna do is i'm gonna go ahead and start they say shaving but what we want to do is we want to cut thin slices and i've already had this in the refrigerator i mean in the freezer for about an hour and a half since we moved out here to get next to the griddle i got a refrigerator right underneath my cooktop so i'm gonna take it like this we just want to get it super thin just like you see right there right that's fine we just wanna thin as possible if you get yourself a bunch of these little thin cuts like that look at this right here and look at the marbling inside of there right that right there make a whole lot of flavor now this one right here obviously check this out we got a bone in here right so i'm gonna go ahead and finish this i'm gonna cut this little piece off right here you know what i mean this is okay but i want to go ahead and get some of that meat right so i'll take it press my knuckles like this run this just the way i can see it give me a nice little thin chop slice and then we go from there there we go we just want to keep going like that now i'm not gonna bore you guys i'm gonna finish this one the one that has bone on i mean the bone in then i'm gonna go ahead and i'm gonna get myself you know this other one over here which is boneless and we're gonna cut this down and we're gonna get ready all right guys so right now we're just trying to tenderize these veggies a little bit get some color developing you can see they're starting to brown up a bit now is the perfect time to start adding a little bit of seasoning so we're going down with a little seasoned salt a few dashes of that w sauce about a teaspoon or so and about a tablespoon of garlic paste you use fresh garlic for this mix that in nicely and let them keep cooking down a little bit [Music] so take a look at this right here look at how thin this is this right here this is what you want real bond shaved and ready to go nephew you ready yes sir that must be a nice knife we got right there yeah sure all right so i'm gonna make some room for that perfectly shaved ribeye steak slide these veggies over to the cool side allow those to keep cooking now i'm going to go ahead and bring this over here let's spread that out like this right here look look i want to touch on this part right here notice how when you come off of this this right here is the cruise on right but i have kind of like turned the fire off of that because i like to be as low as possible yeah meaning so when this starts to melt everything stays here and it cooks i don't want to hurry up and cook all of this i don't want to sweat all of the flavor out of it right so we do it nice and slow all right so right now it's smelling amazing out here we we're cooking one side of the steak it's about time to hit with some seasoning you got something special over there hey check this out that's just branching vine look this is that this right here this that black garlic salt hey this right here is how we level up some things so i'm gonna go ahead and just put a little bit of this on here this is gonna take a few pinches just to get it right because you want to get it over here because i think matt liking the way it's looking it's gonna start to brown and then he's gonna want to flip sir i'm liking the way it's smelling too oh yeah so again you kind of want to just press down just a little bit to make sure it's making good contact with that skillet we want to see a nice nice dark sear on that steak gives it some texture also some flavor all right so we're going down with a little bit of onion powder here just to add a little bit more flavor to the party and it's time to flip this over i agree with you or not about that onion powder i love onion powder hey as you say looking good yes sir [Music] nice color developing on there oh man this is gonna be good youtube needs smelly vision hey i'm working on it bro now i know if you've been following me you know how i get down right i got it everybody gonna hit me down to the section below and be hitting me up talking about dudes uh what's the other place hey yo dude hey give me another name though they got dudes what else all i know is dude hey check it out hey best foods homie so look i'm gonna go ahead and hit this with this little mail you know why cause we're gonna put this on the griddle too we're from the toast fish now i know y'all can hear that in the background you hear matt over there working his magic with that meat hey let me go ahead and pause all right now after that we put that there you got a place for me to put this down sir all right here we go all right so guys we're gonna make a real quick sauce to go on to our cheese steaks so i'm going with about a half cup of mayo probably a quarter cup really only making a few about a tablespoon of w sauce tablespoon or so of garlic paste just a pinch of sugar just to balance everything out and some ketchup about a tablespoon or soda as well and then whatever your all-purpose seasoning just a touch of that break out the whisk and mix to combine that's going to be our sauce that will throw right on site onto the uh cheese sticks i ain't gonna like i ain't gonna lie folks i can smell that from here and hey my mouth is already water let's give it a good mix basically like a good garlic aioli that we're gonna throw on there you know what since we're doing garlic how about we add a little black garlic to the party there we go man that smells good incredible all right guys so what we're going to do now is go ahead and take these veggies from here add them to their friends over here it's about time to melt some cheese on top and make us some sandwiches oh oh man that's smelling good you got some provolone for me yes i do look at those colors that's why i like the green and the red pepper because it just gives it that good look seasoned perfectly got a good color on the steak okay so i'm just gonna go ahead and just start adding these like this load it up load it up and because we're not doing nothing like traditional right you know we got some of this mozzarella over here too all right so we got our provolone melted nicely we'll go ahead and mix that up and just because you can't have enough cheese we're going in with a little mozzarella as well [Music] oh what do you think about that right there i think i'm ready to eat all right so look these are done too there you go you can hear them a little bit of that black garlic aioli i'm a both sides of the bun kind of guy all right so you guys can see oh we don't want to lose none of this this right here is what it's all about right i'm gonna go ahead and just grab myself some like this we don't wanna hey you know what you wanna look at that i got you we need all of that yes sir so i'm gonna take some of this look at that there folks oh yeah we're just gonna take it get it in here just like that you can see that cheese pull the whole shebang wipe it order up now you can put this in one of them on a styrofoam you know three compartment bins and this right here folks this is what you get if that ain't fire folks you gotta tell me what it is i think we call that a money shot yeah sure all right so look now you see we done we got four of these we got four people two behind the camera me and my nephew hey it's time to get it here oh man i'm going up for another one damn i think you got one word for that fire bro hey the onion powder the truck bro hey nephew this right here is fire i can't say enough about that that onion powder look that garlic salt hey just everything about it and then look low key pull the slide that over here slide that over here get it started hey check it out y'all this right here might just be like you said at the start of the show hey i just want to say hey thanks nephew thanks for coming out putting your touch on this i say we put this on the side of that trailer and let everybody know we got this we got some fries and we got a big 20-hour
