good morning everybody Victor here Brookie behind the wheel we just came out of Hillsboro Inlet Florida and we were greeted by a beautiful calm ocean today so this is going to be our last fishing trip we can sneak in before a really big Mexico trip I'm super excited to share with you guys and it's going to be the first time Brookie and I travel with Dennis the cameraman so I know the footage is going to be Top Notch we're going to Mexico this week but we wanted to do a little local trip a couple days before the full moon Wahoo should be biting there was a lot of Wahoo's caught this week we got great conditions for it we got the planers out right now I got one rod on top fingers crossed let's put a zebra on the boat that's one of the local charter boats right there and pretty much everyone out of Hillsboro Inlet around the full moon will be doing what we're doing as trawling planers I don't think it's the most exciting thing in the world I think that Wahoo are exciting but the reason that people like to do this so much is because Wahoo are a fish that tend to be down deep and the only effective way to present it bait down deep is with a planer that planer gets your bait down deep so that bait strip and that sea which is tracking down there 50 feet underneath the water surface so all we're doing right now is trying to find the fish we're going in between 100 to 350 feet of water looking for any signs of light rips Birds pretty much anything we can find to kind of give us an upper edge with finding a fish all right this is good good speed all right guys first fish on on the Deep planer trying to pull so it's really important to have the boat in gear good morning to have the boat in gear because if you don't especially with something like a kingfisher Wahoo they start to swim at you you can end up getting cut off so you need them to be constantly tracking straight through the water so Brooks just got the voting gear we still got the other Rod out and she's making sure she's also not doing any crazy sharp turns so that way the two planers don't get tangled how deep were a win-wing got hit Brooke [Music] get it no I got it look at all the Seaweed off and here we got our planer that we're able to attach so that way we don't have to hand line it the rest of the way oh man uh we'll we'll see I don't know you're good oh it is gear yeah baby let's all her like that here I was saying it's probably a Bonita tuna all right guys [Applause] on the beach strips all right guys there it is first Wahoo of the morning so stoked for this fish and I was really surprised because usually these fish come up and they don't really stay down like they like this one did he didn't really pull much but it's tough for them to pull with all that dragon that 50 to really get your planer down deep but we as you guys see The Stoke is real a perfect fish to get before we leave for Mexico those razor sharp teeth there's nothing like them one of who hits the boat you guys see everyone screams everyone goes Wahoo basically they got these gorgeous Stripes just such a smart smart fish and hard to fool and that is why they are so dang prized just everything about these fish is just built for Speed stealth and just being a smart Predator they got that long streamlined body they sit there like logs during the day but then when they see a bait fish come by they just turn into a torpedo all right is it gonna fit yeah that is the question he'll say corner to corner yeah baby he fits if he fits he oh man well after 20 minutes of photos and videos you know us a new planer fish generally what people do is they have three things you have something called a sea witch a bunch of different people make them um it's mylar hair and a bunch of nylon hair you got some shiny stuff in there people go crazy with the colors and basically what this does it's kind of like a skirt that sits over your strip your Squid head and it kind of makes everything streamlined it prevents it from washing out and also gives your bait some body some depth right and then underneath that we have a squid uh skirt you know just like a little squid and I put a lead in there because my buddy Elliot said it's a big tip because as you guys saw Wahoo have teeth a lot of times you get cut off you want to make your leader as long as possible in terms of you want your mono to start as high up as possible so this fluorocarbon so by putting that lead head here let's say in case that Wahoo came up and struck right here my mono is protected with that lead head underneath my lead head I got a little lead head mylar this is just a bunch of flash so you can imagine that wall who our tuna sees it under water and it's just super shiny he sees it from a distance he comes by to investigate and we're really looking for a reaction strike here okay so you got the body of the lure the squid skirt mylar double 7-0 must-hat Hooks and a swivel swivel is important for a few things prevents your line from getting spun up and I also think it helps in preventing pulling hooks because when you have that Wahoo and he's doing all these crazy things since there's so much drag and tension on the line you want as much free rotation as possible so we have a swivel there and then this is what we caught it on perfectly streamlined [Music] yeah buddy all right second fish on I was actually just on the phone with Elliot asking him if he was catching anything because it's kind of slow I'm on horse and drag baby so like I said no slack you want to keep it as tight as possible you ready brick Slater's right here Queen more speed sorry I got to give us more speed you can't slack up on the fish all right so we got planers off man these fish are deep you know how I know that because both bites we've had today have been on this deep planer which is probably twice as deep as that other one so you guys it's another Wahoo no it's another Wahoo oh my God another wahoo your speed is perfect good job rookie oh man oh my goodness so the best part about this whole thing is we were just on the phone with our buddy Elliot who is the Wahoo Whisperer out of Pompano Beach and he said they haven't gotten a wahoo bite they pulled off one sail and one dolphin and it's usually him telling us yeah we got three in the boat and we got two in the boat today just goes to show some days you get lucky man you could be doing the exact same thing to someone else you know who's much better than you but you just happen to run over these fish and today these fish are meant for us the saying goes if it if it's for you it's for you today it was for us all right guys Wahoo number two Brookie with the gas shot look at how pretty that fish is when you catch a wahoo you really gotta appreciate the colors because they are never gonna look better than when you first catch them they lose all that I don't know it's how to describe it they really are like these pelagic zebras they got all this iridescence in them they just look so cool they got the little Mohawk of a dorsal fin razor razor sharp teeth and there you can see that's what he ate he ate a bait strip with that hook that switch skirt and that sea witch something not that fancy but these Wahoo they see that zooming by their head down deep and they just cannot resist it he's lit up yeah he's a gorgeous fish tell me if a fish with a prettier pattern than that I'd probably say that about every fish but every time I catch a you know fish we haven't caught in a while it's like you really can appreciate the colors and just the beauty of everything in this ocean yeah so a lot of times you guys see us come out here in troll planners and this is actually the only the second time we've ever caught Wahoo on this boat we have put a lot of time in trolling planners but sometimes you just gotta put that time in to actually see the results I mean some days we troll planners all day long and don't catch anything yep and some days like today it's not even it's not even 11 o'clock and we've already put two of them yep so some you just gotta put your time in to be rewarded with an epic fish like this yeah I couldn't have said it better anyone you think you couldn't get another one we got another one my buddy Elliot London out of Pompano Beach the Wahoo Whisperer he actually makes these this is his company they're called bait strips you guys can actually save some money I got a coupon code I'm gonna have it on the screen here you can find that linked below and this what this does is this is basically like your Bait fish invitation or the tail right so you can imagine this is putting off a ton of shine but not just that but this is flapping like crazy a million miles per hour like a bait fish would be in the water and we basically have the exact same thing on the other Rod just a little bit of a different color to see if it's making a difference this is the back side of the rod this is towards the Reel this lead sinks and as we drag this plane or what it's doing is the surface area of this plate is pushing it down and dragging against it and pulling your bait down so now my entire line is being dragged down and like I told you those Wahoo they just sit there like lobs just waiting for something to come by and then they come and Ambush it you can catch them on the surface but generally Wahoo are suspended deeper in the water column and that is why you planers are so effective at catching them so right now I'm getting all the leader out until I get to that Bridal system so here's my Bridal system and I got these swivels that are in line with my line and I put those half snap swivels right into those swivels all right [Music] a lot of seaweed which is not ideal because you don't since you can't see your lure on the surface it's not a surface lure you don't want to potentially have seaweed dragging on your bait and or your planer it's just not going to look natural so what you guys just saw me do is I lifted the rod up real abruptly and then set it down what that does is a great slack in the line and that lead part of the planer that I showed you it allows it to sink once it sinks and catches and now you can imagine the surface of that planer is dragging creating resistance driving your line down so the bait strips that I showed you they come in a medium and a large size so on that side of the planer or on that planer I put the medium one on we're going to do the large one on the other side on the DB so I'm going to take this wire I'm going to get real close to the edge and I'm going to poke a little hole and that is going to secure the top of this I'm gonna put that in the eye of the hook and then I'm gonna see where my hook point would come out so I line it up because everything about this is getting the right presentation especially since like I said you can't see you want to make sure everything is perfect before it goes in the water so I see that it would end about there mark it with my thumb go in with my hook thing all right Wahoo's all nice just re-rigged there it is bait strips this one's going to be the long like we've been doing and we're just going to repeat this whole thing because it's working today there's a really nice edge of blue water that needs green water out here the green water is all that Inlet fresh water that's flowing out of the inlets you can catch fish in it we've been getting a lot of bites in it but it's more towards the edge of the blue water so that blue water that's where these plagic fish live in most of the time to an adult with sailfish Marlin they don't like this freshwater it's just not as clean it's not what they're used to so when you get that green water that comes in real deep or that pushes out deep the fish push out a lot deeper when that blue water is in closer the fish are in a lot closer so we're trying to be right on the edge of the two because that seems like where most of the action's been all day that's it all right guys we just got our third bite 130 feet of water this one actually rips some line this is that far far planer so this is easy like [Music] oh my gosh [Music] we were just talking about the fact that we haven't really had any bike hatch today it's kind of crazy it's like what more could you ask for than two Wahoo and maybe this is gonna be a third one right here but this one rips some decent line when he hit Brooks got the boat just perfectly in gear maybe going like three or four knots these fish the hooks can pull out of their mouths so easily if you do not keep that line straight and tight um one important thing about this is you don't want to turn apart because you don't want to get these lines Tangled so one was out really far one was short this is the long one now so as he's bringing in that long one it's gonna get closer to the Short Line so if you turn hard that line is going to get crossed with your Short Line and you could get tangled and lose your fish so I had to turn real slow to get out of the shallow water because that cleaner will still be down deep it doesn't feel big but that's what I said about the first two all I can picture right now is our buddy Kurt from Alabama going we on fire oh trying to take some lime it's another wahoo I'm pretty sure it's another it's another one [Music] it's another one guys Rick you gotta keep it give us speed speed speed speed speed speed speed speed speed all right now you can back off the Speed so the reason I was screaming at her to do that is because I don't want it to go slack at all so I'm gonna walk back Rick's gonna Gaff it [Applause] oh baby you got another another one man how do we do this how do we go from Catching one while on the boat to three in one day this is amazing and that wasn't the exact same area it was shallower but in the same versus like vicinity of like where we were that one wasn't like 115 feet 120. I just I'm at a loss for Worse normally when you like travel to a distant location you always think the fishing is going to be so good there and it's like we like to make fun of you know good old Pompano but we got a lot of fish in our backyard when the stars align you got a full moon good North current not a lot of seaweed things like this happen every single one of these fish guys as soon as that Wahoo hit the boat they pretty much all get unhooked that's why we keep that boat as tight that line as tight as possible you heard me yelling at Brook speed up speed up because if he's shooting towards me and he shakes his head there goes your wahoo today was one of those days where you just could not stop smiling I mean three Wahoo in one day normally we roll up to the dock Brooks that is always out there greeting us waiting to see what we caught and guess what Brian we got you your walk [Music] oh that's a good looking cooler huh okay so this was the biggest Wahoo of the day I'd say 19 to 21 pounds it was funny we started off real big then we went to the mediums one and then we went to the smallest one Wahoo filet time using my favorite knives Dexter of course this is a seven inch Dexter flexible fillet and you guys can actually save 20 off oh it's extra knives use my code land shark so what I did is made a little cut right there by the tail and my favorite way to fillet Wahoo as well as Kingfish and dolphin anuplegic fish is to run up from the tail to the Head making sure my knife is on the spine we're gonna go right here around the pectoral fin okay oh yeah revealing that delicious Oahu okay so once I do that now what I'm gonna do is I'm gonna break the flesh that's just above the center line of him okay and well that's going to allow me to do is get on the other side of his backbone so I'm gonna tip tilt the tip of my knife down because you see how this backbone is raised if you don't do that you're gonna miss the meat just on the other side of it so tip of the Knife Down and then we kind of just work back up like we did on the other side and I don't want to say it's super fragile but just like a kingfish you know we were flying Kingfish yesterday you want to be really delicate with this meat especially if you're going to use it for sushi you see I'm not folding over the wall who are doing anything drastic I'm trying to keep it as flat as possible and um yeah because you don't want to tear this meat so right here above the belly okay and right here above the rib cage and there we go look at that say we did a pretty dang good job I don't think you can even really take a spoon besides maybe this little piece right here look at this that's Wahoo's uh Wahoo Sashimi at the flay table mm-hmm now Wahoo like Kingfish have relatively thin skin so I'm going to show you guys a little trick the best way to skin a fish with thin skin come over here Dennis on this side of me if I were to take this and go alongside the fish certainly you can do so but the risk of you tearing through the screen the skin really goes up because it's just such a long piece of fish and it's thin instead what you can do see if you want to divide your fish into let's say thirds so I'm going to start right here I'm gonna go down to the skin but not go through it okay I'm gonna swivel my knife and now I'm gonna skin this thing from the inside out and look at my left hand where it goes my left hand whenever I'm skinning a fish is right behind the blade at all times if my hands over here I can't feel what my knife is doing I can't feel if I'm tearing through the skin look well we just lift a little bit there but you see no skin in your fillet I'm telling you it is a game changer when it comes to Flying wahoo skin your fish in sections it will make your life so much easier super Stokes that we got to share this with you guys we're going to Mexico this week we're eating Wahoo tonight I just can't ask for I don't know just a better day it's just everything's coming together I will see you guys in the kitchen all right guys check it out look at that Wahoo glistening in the kitchen so I already hit these with a little salt pepper garlic powder coriander we're gonna keep it real simple and I'm just gonna do a high heat pan sear try to get a nice Golden Crust on these Wahoo but the fun doesn't end there because I'm also going to do a little sesame seared Wahoo try to leave it kind of raw in the middle so you get to kind of taste a fully cooked version of the Wahoo as well as you know when you think of something like a wahoo which is a really good sushi grade fish you want to enjoy part of that fish raw or have some type of raw component so that's where the sesame seared is going to come in so I chose kind of the blockier pieces because I'm always thinking of the final product so so when you sear this I'm going to cut it into you know quarter inch thick pieces serve it on everyone's plate and yeah so you want kind of like rectangular shaped pieces so I'm going into some mixed black and white sesame seeds I don't have any oil or anything on my Wahoo right now either it's dry sticking nicely and I'm going to do it on all four sides of our wall here okay so in here we're gonna do a little I don't know if you call it a salad or a slaw but I got pineapple I got corn on the very bottom of here some fresh corn right off the husk not cooked some red onion red bell pepper cilantro and I think that's about it the green cabbage on the bottom fresh and just vibrant little salad to go with our lahoo got some jasmine rice cooking behind me we're gonna go in with the generous amount of lime juice a little sesame oil as well as a little scallion oil from branch and Vine I'm going to do a little bit of soy sauce I'm gonna do a good amount of salt in here and I'm not sure if I mentioned it but this right on top here is pineapple so there you see that cabbage and corn that was hiding at the bottom look at all those colors man so you hear that nice hot sizzle and unfortunately I'm kind of forced to overcrowd the pan when I cook for so many people so it's just a nature of the Beast this is kind of what I'm looking for if you guys look see how you're getting that light golden brown you don't want it to be too much because you don't want it to burn but you want it to have some crust you know you want that caramelization to occur this right here that's the color I'm looking for not burnt but a nice little golden brown crust built the pan towards us let that butter kind of pull up and we're just gonna toss this on top of our Wahoo and yes you can afford to do this Wahoo is a very lean fish it's not like a salmon or tuna so you can afford to give it some fat this is only going to cook for about 30 seconds 30 to 40 seconds on each side see they don't need very long at all we don't want this to cook we don't want this to cook all the way through you just want to kind of toast the outside a little bit look at that see you just want the outside to cook because if you cook it too much as well you're going to get all your sesame seeds to fall off you want to enjoy this fish and it's true nature and one part of this dish is raw you're just cooking the outside to get a little bit of flavor [Music] look at that gorgeous fish and here's what we're gonna do everyone's gonna get a little bit of the seared fish right here just like that and then it's two pieces of that as well so we had a sushi night the other night and made some homemade yellow sauce so I can't let that go that way so people can dip there sesame seared fish in that eel sauce as well as let's see if we could do a little oh yeah look at that a little dollop of spicy mayo in the eel sauce how about that all right you guys ready for the entree presentation you got jasmine rice you got a little pineapple corn slaw a little sesame seared Wahoo as well as a pan seared Wahoo and of course we got a little eel sauce and spicy mayo to go with it enjoy it the all the things it's a treat we haven't had fresh water in over a year and it is an absolute tree the pan seared down like a minute that was delicious you know this stuff is wow as long as you say wow well we had an incredible day on the boat it is not every day that you catch a wahoo especially for us I think we've had the boat now for what eight years maybe we've had the vote now for eight years and we have gone to try to catch Wahoo a lot of times and we've only been successful with it twice so today was absolutely incredible to be able to catch three of them on the same day and we got in to be able to clean the fish clean the boat and have dinner on the same day it literally could not have been better I feel like I say that a lot that today couldn't have been better but today legit could not have been better the weather was perfect the conditions were perfect we put fish in the boat we had an absolutely amazing dinner Victor cooked it up for us in two different ways and it was delicious everyone's gonna go home with Wahoo we're gonna give some to some friends and probably maybe the neighbors so you legit can't ask for any better it was amazing I agree more and how about all those Gap Shots by Brooke three for three didn't miss a single fish we've had Wahoo like twice and when I got pictures today I was trying to think back the last time we had it and I couldn't remember so it's an amazing treat well I hope I don't have a sesame seed s it's so good I'm not really a sushi person but this seared um Wahoo is maybe better than some of us here in tuna I've had definitely a well put together plate I definitely prefer the uh the sesame seed seared that's one of my favorite ways to eat fish when it's a an option but it's it's pretty wild how we hardly ever eat Wahoo and everyone was so excited about Wahoo but when you have people who cook this well you get Wahoo and you're like wow like I was expecting it to like really blow me out of the like out of the water but it's when you know how to cook fish you can have a fish like Wahoo and it won't really stand up the way you expect it to because they can just prepare everything so good that Wahoo can kind of just sneak in and kind of just match the energy of all the other fish they cook but with that being said it is still on an amazing plate I would like to say
