good morning everybody and happy New Year first video of 2023 we're on a familiar boat we got Adam from moving weight up there what's up guys and we got the very famous chifo back there it's my buddy chief he part-time commercial fishes spent a lot of time on this boat filmed a lot of videos on here Kingfish mackerel Snapper grouper and Adam and chief went out yesterday and got into a really good Blackfin tuna bite we're gonna go out of St Lucie Inlet we got a bunch of poppers that's the game plan first thing in the morning we'll see you guys out there foreign [Music] yesterday Chief and Adam came out here and they were throwing stuff like this they were throwing poppers and Adam texted me and he's like dude you got to get out here black from Tuna on fire and you guys know how much I loved anything tough water that's a great way to start the day right there casted the topper for about 30 minutes and chief actually did have one blow up like when we first got here but we're not really marking anything not really seeing much action so I started dropping this guy right here must add Moon Riser jig right here Adam and chief they're working the top of the water column I'm gonna work the bottom to the top of the water column oh something real small boys we gotta get the skunk off the boat one way or another yeah it's a little Bonita you can officially say my first fish in 2023 is the Glorious false albacore you gotta start somewhere and uh this is where we started today oh baby we are on I don't know I hooked something really good on bottom it's giving me major amberjack Vibes but really yeah I'm just happy to be tight with my boys in 2023. well my rod just broke it's been a long time since I broke a rod this Rod broke my guys are sliding back and forth very suspect on the cross what in the Cobia Eagles okay well broke the rod but we got the fish greater amberjack so this is a greater amberjack good eating but not what we're after today really want to take some Tunas home or golden tile fish but guy put up a good fight beautiful fish I just love anytime I catch any fish I like I'm like a little kid and I don't know a candy store just like looking at all the different colors and the morphology of them and they're just such cool looking fish and this guy's gonna release really well since my high-speed jigging Rod is currently in two pieces I'm gonna stew a little slow pitch jigging and the only difference is as the name entails one is really fast jigging and the other one is kind of more of a methodical you're really working to get your jig to flutter as much as possible slowly on the way down come up with a drop off oh buddy do you like that hookup I don't know I don't think it's off that could be a black one right there oh my gosh it pulled hook dude oh no it's swimming up I was coming up and bringing up my jig really fast and it got hit it doesn't feel very big it seems like all the actions coming on the jigs today we have not had but one bite on the popper and it was the very at the very beginning of the day in the morning Jack Ford Two Jacks oh I've never I don't think I've ever done this before what that is some tomfoolery I'm gonna tell you guys see this look at that two for one special baby Chief this deserves a prize right here look at this oh my God I want to see what it's like down there when these things are eating it like they have to come and eat it at the perfect time or does one get hooked and then he's trying to eat the jig out of the other one's mouth if you guys look they look almost identical but the fish on the left right here if you look at this dorsal fin right there you see how pointy it is and you see how this fish is a little bit stockier and boxier this is a greater amberjack not as pronounced of a dorsal fin and a lot more slender and long this guy is way undersized so we're gonna let him go but this guy is not oh small alien man Adam and chief actually commercial fish for these guys right here and they fill up that fish box full of them and there's big ones out here but this right here that is a Vermillion Snapper super pretty real plentiful out deep all right guys we moved out deep we're in about 700 feet of water now what we're gonna do is I'm gonna drop this big old hunk of metal this is a slow pitch jig this is a Johnny jig right here 800 grams so under two pounds very heavy and we're gonna drop this heavy jig down there because you want to maintain a vertical line angle and we're going to be trying to catch golden tile fish so I hit bottom and when you're jigging in 800 feet with a two pound jig you're gonna get tired so I like to put the butt of my rod just right here come up and down up and down it's kind of boring it can be repetitive but when you get thumb from a golden tile it's so worth it I got one wow yeah I got one your cone around the bow I wasn't even jigging I was just holding the chicken tracking it up off the bottom you guys I was coming up off the gonna go to the bow because my jig was not doing what I wanted it to do and um I was just holding it there and flowing the holes I think we got our first golden tile fish on really nice one Vic yeah dude I mean he feels he feels he feels dense okay we got 700 feet of fun now foreign so now the most important thing you work so hard getting your jig down there works so hard to hook that fish not really because I was just literally holding the jig and um I'm just gonna play them easy because I have 700 feet for something to go wrong and I don't want that to happen so just nice and subtle with the rod you got a two pound jig attached to that fish and it's just going to keep ripping a hole bigger and bigger in that fish yeah I don't know this is not for me boys and girls this is a fly Fisherman's art I'm not a fly fisherman I'm about to go to the electric grill system squid that's all I can say not for me I might drop again though just and say just an honor of Victor I got color boys and girls huh [Music] nice all right Chief we're on the board let's go call this guys we caught him looking right there he was looking at the jig and he got hooked you see look at the the proportion of the size difference this is half the length of his body gorgeous golden tile fish some of my favorite eating fish I can't wait for this couch and cook with you guys I think one thing I really like about these guys they got like a little I don't know what you'd call it it looks like a doolop or something they got this funny little appendage right there and the big ones it gets huge kind of like an iguana has that you know chin thing but but so if you could picture him he's sitting there buried in the mud his eyeballs are poking out of his burrow he comes up Chomps on The Jig and what I always found really interesting is if you didn't know like if you were pioneering this fishery and you're like hey I'm gonna drop an 800 feet of water I want to see what's down there I would think that there'd be really dark and just not really pretty fish this looks like something that should live on a tropical Reef look at all the colors just in his eyeball right there me and Adam made two more drops but the current was just way too strong Adam's gonna explain to you guys what we're doing now and if you guys don't know Adam's got his own YouTube channel called moving weight fishing baby you guys can find that link below all right here's what we got going on boys and girls oops gotta have that hook like that we got some whole squid probably about as foot apart on each bait cut strips of mackerel we got six hooks let it go back behind the boat keeps them to keep the boat in gear and that's what you call the L Bar just so we keep our baits flush like this on bottom rather than straight up and down putting a 10 pound on here we're gonna catch some tile fish once we get this one out I'm gonna rig the other Rod up stand it up I mean and uh yeah we got a little deep drop light pretty simple rig to be honest [Applause] the boat and gear so we're kind of be slow trolling these baits around and uh just barely dragging them in the current find a tile fish he comes off his hole eats it hopefully you know we get two to three a drop sometimes it's just one to drop but we're fishing six baits because you'd like to have more than just one or two tiles of drop it's a long way down and up it takes 10 minutes it takes 20 minutes just to catch one tile fish sometime so if you'd like to increase the odds with more hooks more baits foreign that's mackerel yeah it's mackerel so mackerel macaroon squirts yeah big circle hooks so we just hit bottom about 800 feet of water now we just wait for the rod to just ever so slightly tap tap tap let him do that for a little bit and then you engage The Reel hook them bring them up I do he's on there them tiles are literally sitting in their hole doing whatever the heck they do waiting for a bait to come by if it comes by they're gonna eat it we got one on right now and uh we got a long way to go boys when Adam's talking about that mud you got two different types of bottom we got three different types you got sand you got hard bottom like rock and then there's mud and it's exactly what it sounds like so if you've ever stuck your foot in mud you know it's really sticky so when he's dragging that lead across the bottom it almost feels like you get hung up but then you apply enough pressure and it bounces out so you want to be in that mud as much as possible because those tile fish literally burrow themselves like a worm in the mud they keep their little heads out and they see that squid come by munch on it and then they end up in the boat foreign so if you guys are wondering why this fish's eyeballs are blown up his stomach is basically coming out of his butt fish undergoes something known as barotrauma when you bring a fish up faster than it can equilibriate its gases in its body so fish have swim bladders air bladders that help them stay blank depending on what depth they're in if you bring them up too fast they'll gas those gases expand and it'll push all his organs out like his eyeballs and stuff like this and uh the reason you didn't see it when I caught the fish on The Jig is because I brought him up a lot slower than these when you're fighting them on the jig he's able to let out those gases not gonna eat a dolphin but I'll eat a tile fish all any day of the week liquidy they can make dolphin taste good I think 99 of people can make dolphin taste good he's the only man in the world who thinks that dolphin are not a quality fish potato in the sea listen here's the controversial you just don't know how to make a baked potato maybe that's that's the thing you have to load the baked potato because it's a it's a plane it's almost everything listen let's just say like let's say like this imagine imagine a sweet potato delicious that's so much flavor by itself what is better I I'm willing to bet 9 out of 10 people would prefer a baked potato over a sweet potato then that's inbred rat activity Chief you got a bite already oh my God I do that was a big bite I'm [ __ ] over here sleeping talking about sweet potatoes listen this is all I'm saying sweet potato is like tile fish baked potato is like dolphin you got to do a lot to the baked potato you gotta do lots of the dolphin Tau fish sweet potato they got their own flavor that's it ended this end of discussion it's got to be a little wrap we have some dolphin that doesn't like your baked potato comment wow what do you guys say about that you might have a baked potatoes from behind the boat here soon enough I think I have to agree with Melissa on this one what yeah sweet potatoes I like sweet potato over baked potatoes like one nice one not too nice oh he's a rat I had to pull one off that tree that thing was stalling out that starfish was pulling that hard look at that just caught that from the depth as it were yeah when you're getting that bite you just see that Rod tip just slightly bouncing it's a balancing act of not setting the hook too early but not waiting too long because if they rip the squid off ideally you want them to just hook themselves with the tension of the weight and the line but yeah you're just looking for the slightest little tap in the rocket that's all it really is are you kidding me what is it it's tile fish oh my gosh that's unreality now Adam's favorite word is petite now that is a petite right there I think this is going to be our last fish of the day let's go take a look at this I think this is a another crab two crabs here we go back well I have never in my life seen this crap so if you guys know what this is comment below but the really interesting thing is look at all the I don't even know what these are they look like maybe it's oh dude it's a parasite you guys look at that I just pulled this off of that crab it looks like some type of spider crab or Arrow Crab but look he's got all these little it looks like shells on them but they look like there's worms or something attached to them look at this look at his back his entire back is covered in this weird growth his legs are covered in it he's got one long long pincher I've never seen a crab this pool before someone's deadline was down there and this crab got tangled in it this crab is actually dead it looks like all of the insides of them are completely in out so he was just decomposing down there I mean you could see there's no meat in them look at that foreign check this out guys this is one of the coolest things we've caught today I don't even know what it's called I think it's I think it's called a green eyed shark if you look in his eyeball it looks it's green it looks like a green marble and it also looks like he's got dude he's got like two sets of gills you see he's got one set of gills there and one set of gills there you know Adam doesn't appreciate all these fine specimens out here but I do so we're gonna let this guy go [Music] so right now what we got Adam doing is I told you guys that Adam and chief are going to sell these fish later depending on the species that you uh sell like certain fish like golden tile fish Snapper grouper you usually sell with the guts out of the fish and when you get your price per pound it's a gutted fish Adam what do you think you guys will get for these fish at Market all right a box all right eight bucks 8.50 I'll tell you what they're really really slippery look at look at all the freaking slime coming off these things but uh everybody wants to eat a tile fish that's why they're expensive eight eight fifty at the at the market and uh forty dollars on your dinner if you go and get golden tile fish at a good restaurant easy 30 40 a dish six to eight ounce piece of fish you do the math on that you get two of those dishes you're around sixty dollars a pound [Music] all right guys golden tile fish fillet time I'm gonna be using the seven inch deck stream cool thing about this knife you got your serrated edge right there and you got your traditional Edge right here so for scaly fish like tile fish Snapper grouper I can save the sharp side of my knife my Precision side and I'll use this serrated side to get through the scales and make my initial cut flip my blade over get on this vicious spine gorgeous neat I'm super excited to eat this guy tilefish have a really big rib cage and pin bones which I just broke through right there once I break through that get on the top of his spine point the tip of my knife down on the other side of the backbone all right all right so we got one side of our golden tile first fish I fled in 2023 too and if this fish was a lot bigger probably would have done something like a fish head soup or done something with the carcass but since this guy's on the smaller side they do have Head meat but not that much but when they start to get really big like the golden tile fish that I caught last year upwards in the 20 pound range excellent for using utilizing the whole head and jaw [Music] picked pretty good at flame fish I'll say so myself thank you that's not fake news that's real news nice successful day out on the water got our golden tile fish I will catch you guys in the kitchen a little announcement before we get to cooking the business we look forward to meeting you and uh hopefully you guys come in snag a lobster net but uh let's get to cooking so I'm trying something completely new today you guys see I got these bamboo baskets right here we're gonna steam some fish I've never steamed fish before and I think after six years on YouTube and cooking pretty much every single species there is to cook and every single different way to cook fish we gotta steam some fish so what I got here is our golden tile fish all prepped out and the first thing I'm gonna do these aren't going to get really seasoned with dry seasonings except salt you want to Salt our fish not too much because we're gonna do kind of like a soy marinade while they Steam and you don't want it to be too salty so I got my golden tile fish I have the white part of a scallion chopped right here as well as kind of like little matchsticks of Ginger so we got Ginger and scallion really fresh aromatic flavors and what I'm gonna do is I got some parchment paper here you could just steam this right in the bamboo but I want to really seal in all the flavors and the liquid I'm going to pour on top of the fish so I don't want it to seep through so that's why you see the parchment paper there trust me I am not afraid of making a mess so I'm going to go down with some scallion it's kind of like the bed for our fish some ginger and not only is it going to flavor the fish but you can eat this after it's going to get nice and soft and just super flavorful now I'm just going to go ahead and take our golden tile fish and place it right on top of our bed of aromatics and we're going to have to get a little crowded because I'm not going to be able to fit it all in there without doing so look at that beauty so in here I have some just white sugar and garlic powder and then we're going to go in with low sodium soy just a dash of sesame oil and then some sweet cooking wine which is acidic so you're going to get that acid pop in there okay and I'm gonna dilute it a little bit with some water quick Little Mix let that garlic powder and sugar kind of dissolve and incorporate in there now with the remainder of the ginger on top of the fish I think it's going to be a really good way to cook the golden tile because you're you're incorporating a lot of light mild very aromatic flavors but they're not like overbearing they're not greasy or super Savory you know they're very light and earthy now I'm going to take that soy mixture and I'm just going to put it right on top of our fish and our Ginger and scallion and this is the reason I have the parchment paper in there because if I didn't have it in there all this would just seep through the bamboo because the bamboo itself is perforated it has holes now I'm going to take the parchment paper and if you guys take a closer look see that like I said that bamboo has perforated holes we got to let that steam rise up I'm gonna just kind of try to suck it in like this foreign just like that so that way we can let that steam come around but I don't need to close it all the way on the top because we're going to have this lid that's going to seal in everything so now we're going to take this one and put it right on top and then we're going to seal it with this lid so that worked out pretty good actually I was really nervous when everyone came over I didn't think it was going to work but everything fit okay so saute pan water steam now we're going to put our bamboo Basket in here actually just like that so now that steam is going to come up that bamboo basket get stuck at this lid and that steamage is going to go all around that fish and all those flavors are going to come together I'm going to set a timer for 12 12 minutes to be saved this is the definition when you walk into someone's house and say what are you cooking it smells so good butter onions or butter and garlic so earlier I raised some cauliflower which is just a fancy word of putting it through a food processor I like cauliflower a lot so instead of doing like a grain or bread or you know potatoes we're going to go in with cauliflower cauliflower right into our onion mixture and I will season this with just salt and pepper okay so I got a wok right here some hot oil we're going to go in with a little ginger and garlic and what we're going to do with this is we're going to make some Chinese broccoli but first we're going to season our oil and get our aromatics in so we're going to flock we're going to fry this real quick oh and that smells no other word but heavenly now we go in with our Chinese broccoli [Applause] and this is going to shrink a lot I'm also going to add a little water to kind of help this Steam I swear I was born into the wrong family I should have been born into a Latin family or an Asian family because I love Asian and Latin flavors it's like my two favorite Cuisines I'm from Slovakia which is a very meat and potato type of country not a whole lot of herbs and stuff like that very heavy dishes I love basil and cilantro and chilies and stuff like that so but now I get to share it with you guys okay so let's do a little first review of our steamed fish and oh baby it smells good I'll tell you that our fish is done for sure that's a really thick piece look at that look at how flaky and juicy that fish is right there I I gotta try this real quick I'm gonna say one thing I don't know why I've never steamed fish before that's how good it is the texture you get when you steam fish is exactly what you would expect moist and just fluffy man I'm actually going to turn the heat off we're gonna go check on our Chinese broccoli outside but cover that should be good wow dude that's good oh my gosh guys the smell I just had the the steamed fish and now the smell of this Chinese broccoli is just look at how bright and green that is and I just smell that ginger and garlic and you saw I didn't really season this broccoli it's just the uh the oil a little bit of water the ginger the garlic because that's just permeating through there and I'm gonna let this go a little bit longer but I am someone who likes my vegetables crispy I don't like overcooked vegetables I'd rather eat the crunch you know okay this is done here's our cauliflower rice and that parchment paper worked great nothing seeped through oh that's hot ready flaky flaky fish okay so now fish is in there I'm going to take a little bit more scallion so this is going to be fresh scallion lay it right on top of our fish a bunch of fresh cilantro [Music] okay now we're going to go in with some sesame oil until a little saute pan and we want to heat this up and we're going to dump that sesame oil right on top of that fish okay that hot sesame oil ready for this [Music] okay all right and here's our Chinese broccoli all right we're going to go down with our cauliflowered rice right here and then we got our Chinese steamed broccoli steamed golden tile fish we get all that so flaky and then we're going to finish it off with all that soy dripping a delicious and healthy dish camera always eats first you know the rules right it has grape flavor it is fall apart I mean granite tile fish is up there on quality of fish but I've had tile fish in the past and it's never been as flaky as it is now with the uh with the steam it's amazing because it has all was cooked in juices but this is a great way to cook fish I'm actually really excited about this one by the way my girlfriend Angela here trying it as well hello so I'm the horrible host I never made the introduction shower okay I think he might be onto something Jerry the steamed fish is where it's at I'm telling you like if you think about the ways to cook fish off the top of your head you're gonna Grill it fry it you know maybe season it with blackened season whatever but this is different it is different for sure um first time for me having to have a golden tile fish so definitely one on the books and if you guys don't know who this lovely couple is this is Dennis our new cameraman very excited to have him on he has made my life a whole lot easier and I hope you guys notice there's a
