what's going on guys Victor here I got my beautiful fiance Brookie with me good morning and if you guys are new to the channel welcome aboard we are about to head out of Hillsboro Inlet our home Inlet and we're going to be trolling some big baits today for some big fish let's go [Music] [Applause] [Music] mission number one for us is to get some Speedos also known as Fire tail so what we did is we're over here on this Reef line got a chum bag got the chum in the water and uh we actually came here on Friday Brookie filmed the video we went out and Snapper fished and within three minutes we had Speedos all around the boat I get so excited to bait fishing especially for these things but we're just sitting here waiting for him to come by and then uh we'll catch them put them in the live world break off a nice big calamari right there that'll be enough squid to catch all our bait today so these Speeders that we're going after today have really small mouths so you don't need a big piece just about that big this is a little mustad this is a size 10 gold bee cook that is how small the mouths on these things are so we're going to come over here get a little piece of squid and just like that and what I'm doing is I'm trying to trick them into thinking it's just another piece of chum coming out of the bag Speedos have showed up first one in the boat I told you I was gonna get excited okay so we're gonna try to keep these guys as pristine as possible and not let them touch the deck so there's Speedo number one so these Speedos are being super spooky for some reason the other day we caught them they were eating out of the chum bag like if you had a hoop nut you could just hoop them up but um they're being kind of skittish and staying back for some reason ideally you want to just put your squid as close to the chum as possible but there's trigger fishing oh my goodness what did you hook what is going on I just hooked the biggest Speedo ever happened oh there it is you wanna as soon as they eat it basically stick the hook on them so that right there is a speedo also known as a fire tail you guys see these are little rockets and that's the reason so many plagic fish like them because they're so fast they put out these crazy vibrations which you guys will see on the round tip later so this is our D hooker right here you want to avoid touching them as much as possible did I just use it to pop that hook right out you kind of just get it in the bend of the hook and then you pull against the resistance they need a lot of room to swim and you can easily overcrowd them so less is more in this situation I think a dozen for this live rule is just about right I don't think we've used that many if you try to put too many in they're gonna get crowded this is titanium right here you can catch multiple fish on Titanium because this unlike regular wire you can actually tie knots with this it doesn't Kink this is your leader this is single strand wire you guys see it already has a little kink in it and that's because this stuff has memory but it's a lot less expensive I'm gonna take the speedo and I'm gonna hook them right here in the nose there's kind of like a little indentation just like that back treble hook and I make sure that everything is nice and streamlined I'm going to hook them right there in the tail and then this is something my buddy Cody taught me you guys have seen him in past videos it's a sliding treble hook so depending on how big your Speedo is you can kind of hook them wherever you want and this is going to be what we're doing all day long and I'm so excited to do it let's get to it and in we go so the reason these baits work so good is because they're strong and they put out a lot of vibration when you're trolling and you're trying to cover water and you're trying to get Predators around your boat something that's putting out a lot of vibration fish don't just smell they don't just see what they feel they have a vibrations are really important um when it comes to like Predator prey relationships in the ocean so that's why I like these baits so much because they just put out like basically like a dinner bell saying eat meat eat me over and over again and they last a long time we control these things all day long they don't get tired like other baits so what we're doing is bricky just put the boat in gear and we're gonna put out a two Rod spread we're gonna put one far one short so that way they don't get tangled and we're just going to slow troll around Rex we're gonna go deep we're gonna go shallow until we find the fish oh oh this is on come on come back this is getting munched right now oh so is the other one oh this is on this fish was swimming at us this might I think this was on yeah these are long this is long uh yeah if you think it got munched um leave it out for now oh here we go baby well that didn't take long huh I got no idea where we got on but it did not take very long at all did it oh baby all right Brookie doubled up doubled up I knew this thing was getting munched all right this is gonna be a tricky situation huh all right you gotta have some bycatch come here buddy oh that's a stud Cuda too you probably got one on too Brooke you think so yeah mine's bigger than yours Victors didn't really take much drag oh my gosh what is that is that a is that a giant Kobe or is that a shark did you see that something huge came up okay well that is not what we're after that is a barracuda and check this out guys he's got a little Remora on him how cool is that a little bit more on that barracuda um yeah he's uh got quite a few hooks in them so let me see if I can get these out real quick so this Rod went off almost the same time as Victors and we had just came off the edge of a wreck so I'm kind of thinking mine's going to be a barracuda too I'm just now seeing color it's long but that's all I can see so far mine ran pretty good compared to Vicks it's looking like a Cuda as well yeah they got that uh distinct tail there's literally like a school of cudas down there A lot of times when you're doing this kind of fishing like over wrecks it's like the likelihood of catching kudas is really high but you might wanna you might have to feed through some cudas to catch that Wahoo that you're looking for okay here we go so hooks are out not what we're after but still really cool to catch you guys take a look at that mouth what I love about these fish you guys see on his bottom jaw he's got one tooth that fits perfectly in the top of his mouth just like that but it looks like we're gonna have to avoid the wreck today because these guys are probably really prevalent on it so let's let this guy go shoe that's definitely bigger oh he had a remora too huh isn't that wild smallest Remora I've ever seen it's so cute see now there he goes he's stuck on my hand with his little sucker he was stuck on the Barracuda I mean two barracudas in a row I felt like it we kind of knew we were gonna catch some cudas today so fingers crossed that we get some stripes and not some dotted fish exactly all right see ya oh okay let's not troll by the wreck anymore this is probably no if we're gonna troll by the wreck let's troll a good a ways away from it because cudas really likes to hang around the wreck so do Wahoo but I mean if we caught too that fast there's hundreds down there circling like following this one up yeah like a school of them we just made about a three mile run down south back towards Hillsboro man the vibrations that these Bait fish put out are Next Level when I'm letting them out I'm not letting him out and just dumping the line off because you don't want to risk those hooks coming loose you kind of want constant tension on your bait at all time that's another reason you slow troll them and you're always in and out of gear if you give them too much slack he might get tangled in The Wire it's just nice to keep them in a nice straight line with constant tension on them [Music] it's got to be a sailfish it is 2 p.m and it has been quite some time since we've had any action out here we've gone to every single wreck on the GPS marking a fish all day long finally got a bite it could be it could be the fish it could be the fish we're looking for whatever it was it was an aggressive aggressive hit right on top of the water for Speedos when we're slow trolling them they're deep but if a predator comes up it usually pushes these fish up top so we usually see the bite it's so funny because it really depends like what kind of fishing we're doing to what kind of fish you think you have like today we're going out here trying to catch a wahoo and we're like oh it's a wahoo but like if we came out here thinking that we're like trying to catch kingfish it would be like oh it's a gang fish right yeah like if you came out here wanting to catch a sailfish and then you're like oh it's a sailfish but you just like have something set in your mind and you're like that's what it is is it a shark it's a shark a shark I'm not even kidding it's a shark see now if we were shark fishing we would have said it was a shark man we can't catch a break it's a shark I cannot believe it on the speedo I don't know what kind it is but it is definitely a shark I think it's a sandbar shark and there's no way we're getting these hooks back oh no that's a Dusky it's a juvenile Dusky shark really cool fish there is no way to safely get these hooks out I'm not bringing that shark aboard so we're going to cut it as close to the edge of the rig as possible because flying treble hooks and sharks and hands don't mix but still a really cool animal see you buddy [Music] oh my gosh he missed it oh you got it you got it yeah that's gonna be a big thing right there buzzer beater fish [Music] oh my gosh this is a big fish guys big fish he's in the reef I felt him in the reef he's in some type of structure down there that's insane I think it's a grouper oh my God play I'm nice I think it's a grouper I'm not even kidding we're in 70 feet and you went down to 70 feet it's on something that's all I know I can feel my line rubbing on something so I'm gonna be playing them nice and gently I gotta give credit to where credit's due Brooke you said why don't we try going in really shallow go ahead Brook tell them I will tell them so all day long Victor has been wanting to stay like at the shallowest he's gone is like 90 feet and I'm like come on let's go shallower let's go shallower finally I drove the boat into 70 feet here we go buzzer beater fish he wanted to quit and I was like no no wait wait wait let's just go a little bit shallower bam so today has been an absolute grind we got out here basically as the sun was coming up got our baits we went North we went South we tried drifting around wrecks we tried trolling around pretty much everywhere and um we got those three Kudos that shark and now the mystery buzzer beater fish we were about to pull our lines in so if we land this it'll definitely be a miracle and I don't it's got to be a grouper it's got to be a big grouper this is Victor's fish straight under the boat and it's coming up you're in like 50 feet and you're coming up higher oh oh no he's in something did you see that my line is still in some type of structure so many things are going through my head do I have a grouper that's sitting under a rock do I have a kingfish that's wrapped around a cable like this a million times and I'm just pulling on it and it's not doing anything because he's got to unravel the other way the only thing that would save us right now is a a mask and some fins to investigate the situation man that is disheartening because you know whatever that was was a good fish but it was big and it was running it went straight for the bottom come on eat it eat it eat it eat it dude you missed it I'd say there's some fish here we don't let it get in that thing again it's going straight for the bottom oh my God see what we got here that Speedo lasted like I don't know 30 seconds out there that was insane same thing smoking hit on top of the water if it's a barracuda we'll do a barracuda catch and cook but I think it's a Big King nice job babe I mean I got him in the upper back that's all right my father got a fish in the boat so whatever yeah let's go let's get another one out or you want to try and get another one that was like immediately the other one was definitely way bigger so you guys see that these Speedos are way bigger than that kingfish's mouth but what he does is he comes up he slashes it and screams it one time cuts it in half injures it and then comes back for the rest which is exactly what this fish did so the fish that I hooked right before this one must have been four to five times as big because it ripped some drag this guy didn't fight that much but uh we got dinner we salvaged the day and you guys get a catch and cook all right less than the day was we should have listened to Brookie all along and went in shallower I'm glad we finally got something in the cooler we always joke around about taking our ice for uh a ride a boat ride all day when there's nothing in the cooler so we finally put our ice bags to work and we had fun it was a beautiful day out here like perfect it was flat calm skies were nice weather was perfect so we still had fun even I only got the one fish and we didn't catch the species we wanted but that's all right we still got it I'm gonna show you guys my favorite way to fly a kingfish and this method works good for all pelagic fish that don't have thick scales I filet my Kingfish a lot different than I fillet my Snapper and I'll show you why so Kingfish have really thin skin and since they have thin skin I don't outline them like I do my Snapper I'll actually start right here by the tail and I get my knife right on that kingfish's spine and I'll kind of just work my way up just like so I don't know why but I just find it much easier I feel like with uh Kingfish that are kind of on the mushier side the less Cuts you do the better because this meat will tear pretty easily so I really like that method so once I get all the way to the backbone of the kingfish then I'll make my head cut right around here so I'll go around the PEC fin go down to his belly separate that and then I'll flip them around actually and kind of do the exact same thing on the opposite side so right here by the gut cavity and then right here where his anal fin meets the belly I get my knife on the spine once again I get my knife on that hard part pull towards me really trying not to saw but kind of just like really pulling it on the bone okay then once I have that I will meet my uh other half right along his belly here trying to stay above those guts right to that Center Line now you guys see that a little bit of the mat that meat is already falling off because Kingfish I'm telling you man they can be pretty mushy now basically just going slightly above the backbone so now we should have separated it pretty much from both sides scope them around right here so just make sure we're not stuck anywhere and there's a bone right there and look at that that I find to be the best way to fillet Kingfish if you guys look how I approached it from both sides you leave minimal meat on of the spine you just get to that backbone from this side you then you flip it over get to the backbone from the other side and you know this Kingfish has only been sitting in a cooler for a day let's look at the eyes you can always tell to see if a fish is fresh when they don't have cloudy eyes you guys can see his eyes are clear okay now I'm gonna shave away at this belly right here we're gonna get rid of that you guys see I switched my knife to skin the kingfish into do more Precision work I like a longer more flexible knife and all the knives I am using today are by Dexter you guys can find them linked below and you can actually save 20 off you can use my code Lance shark now to skin this thing since these guys have really thin skin I'm gonna skin it in two sections look at that horrible Gap shot that some psychotic girl did flip the camera around let's see that psychotic girl that's me Chelsea is charged and now I'll line our Kingfish right up against the edge of the filet table here okay and I'm gonna push with my right hand away from me and I'm gonna trail with my left hand I'm going to leave a really thin layer of skin so that way we don't have any skin left on our final fillet see you here in a second what I need so look if you leave a really really thin layer you avoid getting less bloodline in your Kingfish fillet as well okay guys so we're gonna do a very simple and quick fish tip with the kingfish Rick said she's in the mood for fish tips so that's what we're gonna have um there's three things you needed about fish dip you need to brine your fish you need to smoke your fish and then you gotta mix your fish so this is step one which is the brine which is just water salt brown sugar and then whatever aromatics you want in there so I put a little soy and Worcestershire in there so the purpose of the brine add moisture to the fish and also season it at the same time so I know this doesn't look good but it's going to do a lot for the flavor of the fish I'm gonna drain the liquid step two gotta smoke the fish out here on the cam chef Apex Grill absolutely love this thing so I'm gonna just set this right on the grill grates and we're gonna smoke this at 200 degrees for about I would say anywhere from an hour and a half to two hours if you guys have seen cam Chef's been a sponsor on the channel for a long time I cannot tell you enough good things about this company first of all where are you going to find a grill that not only smokes has the gas burners on the inside but then this thing right here is a fisherman's best friend if you guys like to fry fish and don't want to stink up your house you've seen me fry so many fish make things on the side burner right here you want a high heat sear for your steaks this guy does it it is literally my favorite thing to cook with is this unit right here [Music] foreign you guys this I like smoked fish dip but this is like my favorite part of the whole process is when you get your smoked fish if you look there's something very unique when you smoke fish I think the proper word is the pellicle it's how do you describe it it's like a it's like the exterior of a candy bar that you just like can't wait to break into it just gets this like tackiness almost like when you glaze something but then when you open it up just nice and juicy on the inside you get all that smoke flavor see what I mean like it almost it's almost like its own layer of skin that pellicle just delicious Smoky flavor so what we're going to do now is as plain as this is when people rat on Kingfish saying that it's not good no and I'll tell you what I think Kingfish is the best fish to use for dip Kingfish gonna go in the food processor I'm gonna do it in two batches I don't want to make a pace I want very small fine pieces of kingfish and if you put too much in it once it's going to have a hard time you're going to have a hard time getting the right consistency we're going to do half and half you can get it into paste like consistency but you still want some texture and crunch and we're going to go straight into our veggie mix when I make fish dip I really like to add a lot of different flavors and then you get that crunch from all those vegetables and it also provides a nice fresh flavor because when you have something as oily as king fish and you're going to put in all your fats like your Mayo sour cream and cream cheese it's nice to have that contrast with those fresh vegetables actually roasted some garlic earlier and that's going to give us a nice rich flavor as well now to tie in our fish dip you need the glue so we're going to add our fats so we're going to go in with mayo I like to do three things I like Mayo for the richness I like cream cheese for more richness and flavor but also for texture sour cream and the reason I'm mixing these is so that way it's going to make it a lot easier to mix in here especially with the sauerkraut or especially with the cream cheese it's gonna get softened up when it mixes with the Mayo see that consistency it's going to be much easier to incorporate into our fish dip and I might need more liquid or more you know cream cheese Mayo sour cream but this is what we're going to start with for now you can take a cracker dip your fish into it bring it across that dip and it doesn't break I think you made a good consistency for your dip texture is good flavor is good but we got to add a few more things it's not really spicy from that jalapeno so I'm going to go in with a little more Cayenne I'm not getting enough garlic flavor and you guys know how much garlic I like so we're gonna go in with a lot of garlic powder as well as paprika and then believe it or not it wasn't that salty even with that Brine and all that Mayo [Music] so after this we should be good mmm what I like is that we turn in that little kingfish into all that right there we haven't made fish dip in a really long time and this morning I was like we should make fish dip with this fish and it really like hit the spot well we filmed an outro for this video but I guess we forgot to press the record
