all right y'all it is time to get serious now it's about 1 45 on day two and this is almost the exact same rig you see me using catch mutton snappers back home that's our lead on a slider swivel then we've got a big old fat gamakatsu j-hook [Music] there's one of those steelhead he's gonna gut it now sturgeon or bottom feeders everything that dies and sinks down to the bottom they eat and this would be a natural forage for them just a piece of a steelhead gills guts that's like flaming yawn to them drop it right here got an avid reel on a big heavy rod dropper on down you know what they say down down down she goes where she goes no one knows there's the bottom just speed out just enough line to get the bottom so i'm on bottom and i'm paying it out [Music] we're just leaving it out there [Music] so now i'm just going to sit here let that bait sit there now all that scent is going downstream all of a sudden mr uh sturgeon's gonna smell it he'll come up gobble it up earlier today ole miss or hot shoes back there he had a big old sturgeon on but he had him on a on a light rod now we broke out the big guns time to catch him [Music] [Applause] [Music] [Applause] he chased it down because it's still eating it right there there he is there he is got him yeah baby we got a sturgeon on oh yeah look at this boys oh look at that pretty fish just down and tight [Applause] look at this i mean i've got a lot of drag on this fish last thing in the world i thought i was going to be fighting on this trip was a huge sturgeon well guess what i'm tight [Music] well we're backing down on them y'all this is a giant i can probably muscle us to him hey do you want to borrow my wife's fighting belt hey hey hey hey i hit him with my purse first you feel anything weird just kind of go easy tell y'all right now if you don't want to have a good time don't call this character we're going to catch this fish right here it's going to come up [Music] tell you've caught big fish before putting a lot of pressure on them that's what you want to do you're going to pull back with that rod get the fish coming to you and then reel the bend in the rod you don't want to go down slack gonna get her head right here [Applause] what an amazing experience we gotta head here [Music] [Music] that's a river donkey i got his head coming uh rolling on me [Music] yeah there is right there right on the surface hey y'all we got a real one on here yes right on the surface look at that [Music] are you kidding me can we ease this fish over to the bank yeah they're just as strong come here girl come here girl we're gonna leave her back there try to ease ourselves over to the bank on reel probably about a five footer six footer oh that's about seven and a half we'll get bigger and get it up there yeah oh come here girl come here bought a lost right there look at this look at that oh hold on [Applause] come here come here big mama [Music] hold on i got i got [Music] unbelievable what a fish what a magnificent oh they're like they almost feel like uh almost have like a sharp shark type come here girl let me see there's the hook right here i can get it out hooked right up in the top okay i got the hook out wow what a fish wow wow this is not hurting the fish at all she's sitting there working the working the water through her gills she's got a really unique back structure there it feels like uh like there should be spines there like a cobia on the side there's a really hard lateral line and then she's got these big pec fins that she uses just to lay on the bottom definitely one of the highlights of my fishing career catching a giant seven and a half foot 200 pound sturgeon here on the the snake river in idaho got wonderful friends with me we just got done filming catching unbelievable steelhead salmon we've caught everything and we've done it as friends with one of the best guides there are captain jason with hells canyon sport fishing they've got a lodge they've got temperature's dropping and i am absolutely soaking wet but bro we got it done gabe was on the drone kelly's on the camera captain jason's running the boat brad smith is moral support hey boys what do y'all think oh my gosh i literally thought i was gonna get frostbite going home but this is what we're gonna do it's illegal to keep these fish here in idaho and washington oregon but what i will do is i'm going to find wild sturgeon somewhere i'm going to order it i'm going to have it shipped to my house and we're going to cook it because i do want to see what it tastes like hey we'll see you in the kitchen unfortunately i can't clean it just when you think the video is over i couldn't let it go you guys there on the snake river we had to turn that huge sturgeon loose but i was like what the heck so i looked all over there's a place down in miami called marquis marquis gourmet and they specialize in everything sturgeon i mean they've got it all and so today austin ran down there he was telling me there's like live sturgeon swimming around and they've got pretty much everything so he picked up a whole sturgeon i think that's a beluga sturgeon but if it's not and you know what it is let me know more importantly i want to eat it and the reason is that sturgeon that i caught was one of the most epic fish i've ever done battle with and i really wanted to taste what sturgeon tastes like so let's do it got our silver stag bona filet and i've never done this before i've never i mean that was the first sturgeon i've ever seen so of course i've never cleaned one before meat looks beautiful aria what do you think looks good you ready for some fish what are you eating there dry cereal that child loves dry cereal now just like the one i caught the skin kind of feels like a shark skin i have no idea what the structure of this fish is almost like it's got alligator scoots all right oh that that kind of look at that that looks like a shark i'm just gonna gently come down here oh the meat looks kind of weird i mean i cut right straight through the spine if you were just to hand this to me and say cook it i would go maybe not but and it's got a very weird smell oh goodness gracious it's got a very weird smell to it i don't have high hopes for this fish i hope we didn't pay too much money for it how much was it 46 this is a 47 46 fish y'all i'm gonna cut that off cut this off i'm sure if you're used to cleaning caviar you're probably screaming at me right now and um sturgeon that's where caviar comes from caviar is sturgeon eggs here this is what we're gonna do gabe and kelly are actually coming over tonight they do not know that i'm cooking sturgeon so what i'm going to do is i'm just going to anonymously clean and cook this and let them taste it and see what they think but i'm not going to tell them what it is i was actually expecting it to look a lot better like this is really really weird looking [Music] as usual gabe and kelly are running late and if you see all this right here this is like our life charging batteries getting stuff right it's just it never ends but i'm going to let you in on a little secret tomorrow morning me gabe kelly austin we are going down to magdalena bay mexico that's down in baja california and sarah believe it or not is going to stay here and start building our barn build a barn back on that side of the property and she said look i'm building the barn so if your wife says she's building a barn you let her build a barn now whenever i cleaned that fish i wasn't really impressed with it when i cleaned it it had like a funky little color to it but i just trim it off like that and hey looks pretty good now if you i've i've never cleaned it oh it's got a kind of a oily fatty look to it that's not too promising i'm just trying to get off some of that some of that darker color but there you go take it we'll put it over here portion it out and try it off i am a big firm believer in drying this meat off see how that goes take some pepper a little bit of salt and then just a touch of everglades that's what we're talking about right there [Music] talk about a flame already put a little bit of olive oil in there all right let's get this party started y'all take this fish heck yeah we're just going to season this side a little bit [Music] all right you guys jordy just came over he needed a drone case and he is going to be the taste tester then we're going to let him guess what fish it is got a nice sear on it all right y'all so let's get the party started here take our fish off that just looks gorgeous now we're going to reduce our heat about like that put in some lemongrass some ginger i love this stuff take this off the heat it's almost like we're deglazing the pan with the herbs just like that you're gonna start just infusing this all with that loving goodness right there throwing a pallet of butter man the smell of this is phenomenal throwing another one and you see how it's off the heat i'm just letting this cool down now just to give it a little tart we're going to add just a little bit of meyer lemon [Music] i know that doesn't look like much but you've got the lemongrass the meyer lemon the ginger the sweet cream butter and that's going to be delightful on top of that fish so now all we're going to do we'll put a little sauce on one of them and leave the other one regular okay jordy here we go [Music] fork thank you and i'm gonna have a fork because i'm gonna clean up after you go ahead try and this is the same type of fishes yup same fish 1 million times better than i expected it's quite fun huh very good the sauce is amazing on it [Music] but in surprisingly [Music] it tastes totally different like with the sauce it has this wonderful like aromatic flavor without it it just has a really nice wonderful i don't even know how to explain it i would tell you right now this is the most surprising fish i've ever cooked when we fellated on the dock i thought this is gonna be disgusting i still don't know what it is by the way i have no clue tell them it's sturgeon this is stood sturdy it did not come from miami it came from miami are you serious yes it did now i wouldn't guess that he didn't even know this i caught a seven and a half foot sturgeon on the snake river and uh we had to turn it loose but we found a place down in miami that had whole sturgeon austin drove down there today you're too late winner winner we just ate us a sturgeon for dinner there you go love you guys i hope you enjoy this we got a whole series from baja
