hahaha [Music] thank you [Music] r d day so we're doing um you said seven grams we're doing uh oh we don't know what we're doing um actually we're r d so if you're watching this then it worked out otherwise we probably won't let it see the light of day but it's June and we have um the wagyu beef the tajimi wagyu the bourbon Mash fed that we just butchered and so we have some fat from it and some deer trim from Seth's deer and we're doing Dan's doing math you guys know I love math because you always tear me up because I get a little bit off and you have plenty of time to get your calculator out figure that out so let me play a sad song for you I'm the world's smallest violin we're gonna make 10 pound batch no 15 pound batch 14 pound batch well no that's a that's for next time I have a good one right here 15 pound batch of maple bourbon five of that's going to be plain five that's gonna have it's gonna be bourbon Peach five it's going to be bourbon Apple we're gonna make five pounds of hickory smoke broth and five pounds of a different rendition of the bourbon So the plan is at the end of the day we're gonna have a bourbon bratwurst or maybe a maple bourbon bratwurst um a bourbon bratwurst with Peach and a bourbon bratwurst with Apple and a Hickory Barbecue brat which we already make but we're making it in deer so we know what it'll be like with wagyu fats and we'll know what it'll be like for wagyu a lot we're learning today we've got a bunch of different baggies we got to grind this stuff out stuff it give it a whirl the blands it smells like this oh man you want some get her get her saying that I'm gonna do that what it smells like he's like dude dude am I gonna have to clean that smells pretty good real thing is Bigfoot a monkey or a human see is he a monkey or human Seth's ripping open a package of our tajimi wagyu beef fat trimmings these are the ones that have been fed to the bourbon Mash so we're going to start out Seth we need to do um 15 pounds Dan well we have 15 pound batch a five pound batch and a five pound batch we only have 24 pounds he's put you on the spot because that way you get rattled in the comments so this first part is going to be 15 pounds five pounds of fat yeah and you're doing a 15 a five and a five yeah so you want three one one fat so how many pounds of meat and how many pounds of fat in our 15 pound batch meat's gonna be 10 12. 12 and 3. lock it in [Applause] [Music] okay [Music] there's the three perfect okay so now we just need to do 12 . for four quick math there got it four pounds please Disney trimmed up at all nope nope this is as long as the boys did their job I don't know there's a leg right there who cut this up it's a little shank meat you will never know in the bourbon brought there we shouldn't have to go through it once it's in a bag of trims as long as the boning table did their job some of these pieces will make smaller to go through the grinder now I will say I have pretty high expectations for these bourbon brats because this was the trim that I had saved out to make some deer bacon so if this doesn't turn out I'm going to shoot another deer well I'll do it in season in season plan on doing that regardless but I was looking forward to some deer bacon because I'm out so we are doing not that one not yet not yet want me to sprinkle while you mix sure there's the whiskey flavor and there's the maple this is the wrong one no that's more than five pounds I forgot to put the one on it I had it previously mixed up that says five and that's more than five I was testing you I passed right man for those of you that have have experienced our Maple seasoning you know the feelings I'm getting right now as I'm dumping this in here my mouth's watering ready I have a feeling that if I dumped us too heavy it would all wind up in one spot because it's how powdery it is now you may be wondering why don't we just use bourbon pour it in here some of you might do that at home which you can do obviously the alcohol may or may not cook out and if you feed the kids you have all that but we want to be able to bring this to you commercially if it's a success and so a bourbon flavoring which is dried bourbon allows us to then either provide that as a separate packet to mix in or mix it into one of our seasonings it's already available as a packet just makes it a lot more sense for us than plus pouring actual bourbon right into the we can legally sell it right smells just like just like a bourbon yeah that's right this is the one that has the pre-mixed bourbon flavoring I don't think I need you on this one good you need to chase it it's hard that's tearing me it's like a it's like a it's like uh strong mustard on a pretzel that one's done now we can do Hickory Barbecue this is our Hickory Barbecue that I just made up for five pounds the cheese will go in after we grind it and it's got um our barbecue sauce and hickory smoke powder and our brat base this is gonna really tickle your nostrils in a good way we'll add the barbecue and cheese after we grind it oh yeah now I feel like I'm in the barn my childhood around Thanksgiving stirring up some thanks Spencer some Thanksgiving hickory smoked products okay everything's Blended now we grind started grinding this is the the Dual grind so we're just gonna need one pass [Applause] to get the right consistency it's got two grinder heads going in there at the same time or plates stuffer plates if you want to feed me yep [Applause] [Music] all right now all this is our Kentucky bourbon blend [Music] well it does smell good and now the Hickory Barbecue brought you don't even have to put a label on this one because the smoke powder will tell you which one it is foreign looking mix [Music] that's the plain maple bourbon 32 millimeter collagen two pack on our website if I can get it open this we'll do 25 pounds five pounds of dried peaches going in this batch I think we just leveled up still maple bourbon still maple bourbon now it's just maple bourbon with dried peaches added since we're doing r d I can do whatever I want so I'm going to plop it on his head big meatball [Music] dried apples now join the delicious bourbon party [Music] we got a little distracted because Browns guard white teller was spotted in the store so we got our camera up there and we can keep an eye on everybody so he's up here said he'd be stopping by today so we're gonna go out and say hi here in a little bit you'll note note on the face Spencer zooming on the face note we're working with tajimi tajama wagyu fat which has a very low melting point like your own body temperature will melt it like you put a piece of fat in your hand and you so you can see on these brats they have a little bit of that creamy texture that's because of the Tajima fat that we put in these see those apples in there trying to figure out if I want to try to separate out of this batch a pound for peaches and a pound for Apple I don't know if it'll make it out here we can try let me just pull a pound out [Music] oh [Music] we're gonna have some Airy brats over here hey you need Old Uncle Seth to start stuffing again I'm working with the small samples here [Music] this is Hickory Barbecue so it's got mozzarella cheese Hickory Barbecue sauce sauce oh man it smells like a backyard barbecue and we ain't even were able to successfully nail down just how much of the bourbon flavoring that you'll want to add to 25 pounds of your favorite protein whether it be pork beef uh of course Wild game venison elk all that if you are using Wild game we strongly encourage you to use some of the the fats that we have available you can do pork fat you could do the Tajima wagyu fat you can do the grain fed fat trimmings that's if you're using a lean wow game we like to pair the bourbon with our Maple base you can of course add the bourbon flavoring to just about any base season that you like the maple base with the bourbon makes a great maple bourbon bratwurst you can add of course the dried peaches now you've got maple bourbon dried Peach bratwurst or you could do dried apples and then you've got maple bourbon dried apple bratwurst stuff them in some casings throw some of our labels on them to identify them pass them out to friends and family and you've got super tasty bourbon flavored products Chucky bourbon these are going to the grill and then Kentucky bourbon Apple Brady earlier son let me help you this is a elderly abuse [Laughter] [Music] 83 hours a day I've been walking all of my life bourbon yes the Kentucky bourbon right there the plane almost more got a little bit more a bit too much of a bite it's a little little little heat in the back of my throat yeah I don't like that it's hot yeah I like that one better sweetness let's go Apple maple bourbon Apple thank you this came off last so they're gonna be a little bit hotter so be careful maple bourbon is going to be where it's at I think maybe we dialed the bourbon flavor back just a little bit it's a tiny Bitcoin pretty good though yeah pretty darn good um let's do peach I love Peach we got peaches that's addicting extremely good yeah we could we could dial The Bourbon back just maybe just a little bit but here's the thing you are saying we are saying bourbon so you would expect it to taste like bourbon yeah pretty good I almost don't like that I still like the maple foreign with peach you can have the middle on that one the hungry barbecue and the maple Bourbons for me yeah and then the fruit so when you think about building a kit we can those are gonna be pretty easy for Daniel on the website because we can just add the bourbon and add yeah add the apples teach people add the apples add the peach teach people how to make them we are we already have basically we already have the ingredients to make the kids so delicious a little more tweaking um so maple bourbon it is um in Hickory Barbecue r d fun way to use the meat in your freezer this deer meat was in there from last season um yeah now we have some packs of these in the freezer we get to pull out and make dinner and you get to buy some
