quite how it would sound phonetically because it's b-r-a-c-i-o-l-e and it can either be pork or beef we're making beef and it's a beef we'll be using top round because it's cheap and it's amazing in the end of this you pound it out thin and then you put things in it and you roll it up and you braise it slowly cook it in a rich tomato sauce and when it's done it's fork tender it's Rich it's delicious it's a Brazil you know what I mean a Brazil so with the Jewish kids in Canada on the west coast had all the time on Sundays it's not hey Petey check the Brazil but it is Peter they're all Peter Peter and Paul Peter and Paul from movie ever but it's delicious it's a little time consuming to make just a little bit infinitisimo small amount but the result in the end is all good here's what we do we kind of make a little stuffing for it we cut our beef we pound it flat we fill it we roll it and then you know hell so close to eating first in for our stuffing we'll go I don't know about five cloves of nicely chopped garlic and then some bread crumbs maybe three or four tablespoons good now some cheese parmigiano reggiano what was that about a third of a cup followed by some chopped curly or Italian parsley chance there's a little difference which one did I use Italian because we're making of course it is salt and pepper a squeeze of olive oil and we'll mix now I'm kind of putting together three or four different Brazil recipes that I've seen so if it ain't right don't have your Nona come after me no no please okay nice no no perfect let's cut our meat top round this is about the 7.99 a pound or something it's not that expensive here's what we need we need to take it off of here for like 10 bucks for this yeah I got enough or so this is probably a couple of pounds let's let me get this off so here's what we're gonna do we're gonna cut these fairly thin if I can and then you'll see what happens like this beautiful just give ourselves six or eight of these things I think we can do Fantastico all right just cut away and last there we go beautiful all right now we need to flatten them so remove all these guys up here go like this cling film give me an hour I'll figure it out there's really got to be a better system right so we take one of these guys we go like this like this and like this okay get them all done then we're going to cut them a bit see what we've got oh beautiful oh these are going to be fabulous fabulous fabulous right so here's what we can do we can just lay them all out all your shoes and glasses just lay them all out if any if any can tell me what that's from oh free bag of BFF for sure first person I said so we're just going to lay these all out and Max said all your shoes and glasses all your shoes and glasses do you know that reference if you do the first one time stamped in the comments below we'll get three bags of BFF three one for you and another two for you all your shoes and glasses some of these are going to look that up probably ah hope you're whatever and here we go everybody gets a little of your BFF you don't need a lot because we've already seasoned the stuffing a bit but you get it you know we like to season all the layers next up we're going to put some stuffing on each one like this I just want to make sure I have enough here and then I'll come back a couple tablespoons on each this is not meant to inundate this is not like a turkey this is just a nice little beautiful coating and so then you can just give it a little spread out boys you have no idea how much you're going to love these okay good now we come in with some provolone and you see how thin that is that's what you want you don't want a big honking quarter inch slice of this okay last provolone one more thing piece of sausage just like this spicy Italian sausage I'm gonna put like a little nub right there in the middle these are sausages I've cut the casing obviously they're not cooked and we just do this so there's another Italian thing called Sunday gravy and Sunday gravy is pork neck and sometimes Brazil and sometimes uh other cuts of beef poor dick not pork dick there's no pork dick in that and it Cooks slowly and the whole thing becomes this just big thick beautiful tomato sauce based gravy deliciousness so this is using the sausage in here in the middle is a little bit like that okay and now we're gonna go like this just like you can imagine you just roll these little kids up okay so let's roll everybody then we'll come back and we'll tie them oh Mama Mia is this gonna be good mod on me okay now we're gonna tie them we tie like this I'm not a good Tire I was not a good boy scout in fact I wasn't a Boy Scout I was in something called Indian guides that isn't anymore because it's cultural appropriation and that's bad so we take our piece of string we're going to go like this that way flip the kid over give it a quick little end to end turn here look at this and look at this it's all it needs to be right and you cut this off not very tight it's not very tight is it oh it's not tight at all you might need a finger hold on Boy Scout is not kidding there we go got it no you could figure it out a better way for tying a knot than somebody putting their finger they're okay all right these guys doing put them on here carry on what happened I forgot the prosciutto which means now I gotta unroll all these I got one tied so mad it was right there it was right there right there literally the first thing Max goes the prosciutto goes on the outside listen if there's a sand the cooking Guy drinking game when I said and we mix you could take a shot and when I forget things like this this should be like you do six Quaaludes they don't do Quaaludes anymore all right so here's what we're gonna do we're gonna unroll this guy look it doesn't matter in the end because it's all going to be you know inside so get yourself a piece of pursuit it's just not even coming it's prosciutto's not even cooperating put yourself a nice piece of prosciutto like this and then you go again and tuck your little ends in along the way okay good there's a perfect one carry on with your stringing and I'll show you what happens after and when you got them all like this all beautifully rolled up with prosciutto inside it's time to sear them and with the olive oil in our pot just starting to smoke in go our little friends that's what you want we want to sear these guys we want some beautiful color all the way around maybe I made too many all right we're just looking for good color a couple minutes aside like this so what we're doing right now is we're just searing them to get some color on the outside which ultimately will become flavor when we add everything else then they'll go into the oven for a slow braise we'll just do the top and the bottom come on you beautiful all right a little bit more on this side then they come out and out we come aren't they beautiful okay touch more oil in here and then in go some onions we'll get these guys Browning next up in a little more garlic beautiful we come along with a cup of red wine does it look like a cup that's a cup the wine is going to help get anything stuck on the bottom off because we want what's stuck on the bottom next in 28 ounce can of crushed tomatoes beautiful cup of beef broth stock broth whatever we're mixing we want this to come to a little simmer and while we're waiting for it to we'll add nice pinch of salt and pepper some dried oregano dried basil a little red pepper flake we do some of this and when it comes to a simmer now we're little bundles of Joy come back in aren't they cute bundles of joy for some people might be babies but for us it's food Brazil all right I got a couple uh leaves fresh basil there you go we're good comes back to a simmer I put the lid on goes into a 350 oven for about an hour and a half to two hours until super tender here we go one two and three oh shh [ __ ] yeah look at that we made freaking Brazil hey Maria wow okay but wait we're gonna make it prettier let me real real Purdy real pretty so the sauce look how beautiful the sauce is you know what makes it so good is the fact that the beef and the prosciutto and everything is cooked in it it's just been flavored amazingly so I'm just gonna steal myself one I'll put this guy here but here's how you want to make these look a little bit prettier for your guests let's scatter them about a little extra sauce here and there just a little bit more of the cheese because you've got to and then just a little hit more Italian parsley oh ladies and gentlemen bruh freaking Joel so don't forget you got string right let's get the string off okay it's see what it did it tore through do you know why because it's so tender look the sausage in there oh oh my God oh my God oh my God wait I need a little more sauce and then the cheese okay now a bite oh cheese there oh sausage oh I'm in love Brazil you are mine this has been uh two and a half hours the richness of the sauce is the first thing that gets you the second thing is how a tough cut of meat has just turned into melting in my mouth-ness oh damn this this is what it's all about some good bread crispy crusty bread to dip into the sauce a little green salad on the side a glass of wine God only mother of God the Brazil gods have smiled
