y'all we're making lasagna come on welcome to highfalutin low-carb the random web series where we find and test the best low carb recipes this crazy internet has to offer today we're tackling low carb lasagna stay tuned alright folks low carb lasagna can it be done well I do have one caveat for this recipe battle and that was that I did not want a recipe that used a zucchini or eggplant as the noodle replacement in the lasagna we've already done that you know I think we've all tried that it works fair you know fair - good honestly I would rather probably just make zucchini noodles it's much easier than building a whole is anja around a zucchini so I wanted some to recipes that would give us something that would actually be a replacement for the noodle and I think that I found that now the first of the recipes is just like the real thing lasagna and this is by Peace Love and low carb calm and this has been sent to me so many times probably more than any other recipe I'm excited to try that because they actually make some noodles kind of almost like a Fathead dough base but a little bit different and the second recipe is keto was on your recipe by try keto with doc meat that's right try keto with dot me and this it is using an odd replacement for the noodle but people swear by it was populated by an old reddit post several years ago and it's using sliced deli chicken as the Skillshare so thanks so much all right now let's talk about lasagna all right so let's get started on this first recipe this is just like the real thing lasagna and again this has been sent to me so many times i'm excited to try this now this was a little bit of work you have to make the noodles you've got to make the shacks that you use her marinara sauce recipe three cheese marinara sauce and then you make the filling and then you assemble it all so I took her advice and made the noodles and the sauce the day prior so last night you'll see here I made the noodles you just creamed together cream cheese and eggs using a hand mixer then you add Parmesan cheese Italian seasoning garlic powder and onion powder and you mix all of that until it's combined and then you gently fold in mozzarella cheese and mix that until it's well incorporated you spread the mixture out into a baking dish that's got lined with parchment paper and then bake that for about 20 to 25 minutes and then when they're done baking you've got to cool that in the fridge for 20 minutes or she said just leave it in the fridge overnight if you're gonna make it the next day so that's what we did now I also need to remind you if you're new here I don't give exact measurements for things this is not my work I did not create these recipes I'm just here to test them and the people that did do the hard work they deserve the traffic so all the ingredients are going to be listed at the link down below here on the screen and in the video description below the people that made these recipes they deserve the traffic so that's why you don't see me give exact measurements for everything but you can easily find that so alright let's get started on this so here are the noodles and this you know this is a pretty interesting texture it kind of looks a lot like you know a Fathead dubidouxs but it's thinner than that and was a more liquidy as well so you cut this this thing is going into a like a bread pan right like a loaf pan and so you make your noodles out of a 9 by 13 and then trim it by three pieces I don't know where that edge went right there I don't must have wrapped my house so I'm going to cut this in 2/3 she said just use with a um use a pizza cutter and these are gonna be what didn't do real great these are gonna be our noodles and let's even that out too so there they are they're ready to go when we get ready to assemble but before we do that okay here's the marinara sauce I made that last night so it's been you know sort of marinating in the fridge all night and I'm sure has got a great taste on that the other recipe uses just a jarred marinara sauce but I wanted to do it as exactly as she said so that's what we're doing so now we are just have to make the filling and then assemble this and bake it and we're gonna start with the filling right now and that starts with browning some ground beef so let's do that so we're gonna just Brown this beef here and to this we are gonna add some spices and the first of those is onion minced onion and then just a various assortment of what you would assume you know Italian spices you got basil oregano garlic powder and Italian seasoning so in all that goes and we're gonna just brown this oops we're just going to brown this and be right back all right so our beef is growing are browned there's just a little bit of fat in the pan she does say to try to drain that off and just you know so you don't have a puddle of grease so I'll be right back all right so we're back and now to this we're gonna add about 3/4 of a cup of the marinara sauce that I've already made right so this is 1/4 cup measure so I'm just gonna roughly eyeball it so 3/4 of a cup now stir this in and then this has to simmer on low for about 20 minutes I think did you say 20 minutes 10 minutes it's gonna simmer for 10 minutes so let's do that and we'll be right back all right so we're back and we're ready to assemble this guy and get him in the oven here so this is the little loaf pan that we're going to use and we start off this is this is um this is simmered for about 10 minutes maybe a little bit less but that didn't have a lot to do there it looked like so we start off now obviously there using pretty small measurements of of the tomato sauce because that's where your carbs are gonna come from right which is why she made her own it's it really you know cuts down on the sugar and added sugars that can be in commercial sauces but we're gonna talk about that in the next recipe so let me get the instructions we start with quarter cup of Perm marinara sauce in the bottom of the pan get out of there and spread that around so you know it's not it's not a whole lot of sauce here but I'm excited to see how this works and if she did not say to um boil the pan I maybe I may regret that but I'm following the directions and then now is our first noodle layer let's start with the smaller ones it's the bottom of the pan the smaller than the top of the so there's our noodle that's cute and it fits right in there nice and then layer a third of the ground beef so we really need to portion this out into thirds just to help so we don't get in trouble all right so a third of this on top of our noodle smells great I'm so excited to see what this quote noodle does so spread that out as best as you can come on now mmm now I got it this is the tiniest little zone you I've ever made in my life you know how I'm used to making one in a big ol premium but this lets you control portion sizes this is four servings you know that's probably a normal-sized serving I have served serving portion control issues as you well know all right now we're going to top with a quarter cup of mozzarella cheese and ricotta cheese now this is a half cup measure it's gonna be about half of it there's a half a cup of cheese so let's use half of that maybe a little bit more okay and then three tablespoons of ricotta cheese and this is some thick ricotta it is whole milk ricotta 3 tbsp I know I said I wouldn't give you ingredients but you see what I'm doing here get over there now somehow we got to figure out how to UM spread this stuff out without messing up everything else hmm now I guess it's probably just an American thing but um a lot of like when I would make regular homemade lasagna just regular high carb lasagna we would add an egg in the ricotta cheese and it sort of made it puff up you know and hold its shape I wonder if you could do something like that here of course we're testing the recipe as it's written and then on top of that goes right your noodle yep and we're just gonna repeat this let's save the biggest noodle for the top there's our noodle and oh I think I'm supposed to add the quarter cup of sauce it's coming together looking pretty pretty good push it out to the ends don't let it all pile in the middle and then never do our noodle boot put him right back on there and then a third of the ground beef [Music] all right that is beautiful Wow all right so this goes in the oven for I believe she say how long 20 minutes look at their cute little cute little lasagna lasagna all right so this is gonna go in the oven for 20 minutes I'm gonna clean up here we're gonna get ready for recipe number two see you in just a second all right guys we're back and I've already set up for the next recipe but I had to show you this it just came out of the oven was in there for about 20 minutes and that looks beautiful I'm just gonna set it on the back burner and let's get started on this new recipe okay so recipe number two this is keto lasagna recipe by try keto with dot me that's not com that's www.rediff.com fusing use the link down below in the video description so let's start this with heating a pan of oil couple teaspoons of oil over medium heat and while that's heating we are gonna tend to the ricotta cheese again the measurements for all the ingredients are in the description down below the links there this is the ricotta cheese we're gonna add some Parmesan cheese to it as well as an array of spices Italian seasoning our I think that's Italian seasoning yep Italian seasoning red pepper flakes garlic powder onion powder and salt so and all that goes we're just going to mix this together and set it to the side [Music] you'll need that there all right so now to our pan of oil we've had a few little red onions now the other recipe you sauce you use the mince minced onions there are carbs in minced onion just because they're you know spices don't have to be labeled they're exempt from labeling laws so if you've never seen my video on hidden carbs go check out I'll leave a link up in this corner there are carbs in in minced onion so what I like to do and clearly what try keto with me likes to do is use a little bit of fresh onion to actually try to build some flavor in your pan you know you can do a lot with the caramelization of an onion to give you some flavor now to that we're going to add Italian seasoning in here and garlic cloves a couple of mints cloves of garlic so let this just work over here and get fragrant and we'll put our meats in and just a moment all right so now once this gets a little bit tender we're gonna start browning our meat do not let this do not burn your garlic if you've earned that garlic and get it too hot you going to start over it will ruin a dish so we're going to add to this to start browning ground beef a pound as well as a pound of Italian sausage get out of there take the paper off right I'll be right back in to watch minions okay so let's just break all this up and brown all this and I'll see you back here in just second this is vile [Music] all right so this is brown this is brown I'm gonna actually drain a little bit of this grease off and I'll be right back okay okay so now to this meat we are going to add a cup and a half of jarred pasta sauce marinara sauce be careful here it has to be preferably one that says no sugar I think it's pretty well you know decided in the Munda low-carbon keto world that Rao's is one of the better ones that's no sugar added has a low carb count also I think Luchini is a brand name that makes that I actually think also Walmart's great value has a no sugar added sauce as well but be what be aware that all the national big brands have sugar in them added sugar so just make sure you're being careful with what you're with what you're on you're buying and - this is something I have never done before you know at all chopped pepperonis an ounce of chopped pepperoni which makes sense like yes you know everyone's got a lot of flavor in it so we just lower this to lows stir this in good lower this to low cover it and let it simmer for 7 to 10 minutes to get thick so I'm gonna do that and we'll meet you right back here alright we are back now and we're ready to assemble this this is the fun part and this is the weird part we're gonna be using deli sliced chicken as our noodles right so in a greased 9 by 13 pan and y'all know this is a purple pan somebody one time of the comments said please watch that built the pan this is not a dirty pan it's purple pan so back off all right so I don't know if I was supposed to do this she did not say to cut it in half but these were round slices of chicken so I just thought I can't put a round edge up against you know what I mean up against a square pan so cover the bottom of a greased pan like this with your chicken this is weird y'all for real this was apparently a popular recipe from an old reddit post back in like 2015 on the keto forums and read it and go Keita with me what's the name of it Oh Wesley you're touching it filthy try keto with me she was the one who sort of pulled this together into her own version of this recipe now this this is um some thinly sliced chicken and it's coming apart in the hands so I don't know if this is the way they're supposed to go but here's what we're doing so this has got almost three pounds of meat in it it's got a pound of beef pound of Italian sausage almost a pound of chicken and it's got um pepperoni in it so this isn't like meat Sam itzรก so after you do this cover it with I gotta get something hold on cover it with a third of the ricotta so let's kind of divide that into thirds maybe I might try to almost kind of portion stuff out before I slap it all in and then regret it okay so this is gonna be hard good Lord whisky that's what I didn't want to do put it all in one spot so um without screwing up your see if this might help without screwing up your chicken layer just try to do your best now this is some flavorful got to be some flavorful ricotta cuz it had all kind of spices in it red pepper flakes that's where your salt in it as well in there he's cumbersome now a third of your ground beef mixture bliss stir that up good I am intrigued by this chicken noodle chicken noodle haha let's just just chicken quote-unquote noodle so spread this out and then top this with a cup of your mozzarella cheese and this is a 2 cup bag so we use about half of it ok now another layer of our chicken [Music] all right so there we have it this one's going in the oven this guy is heavy that is so much meat that's like five pounds of stuff all right this is going in the oven for about 30 to 35 minutes I'm gonna take it out let it cool for just a minute and then come right back here and we're gonna taste all these all right so I'll meet you back here in five four three two one all right we're back and it's time to taste some lasagna guys okay so take a look at this here don't judge this guy here he's been out of the oven for almost an hour right while we made this other one and then while it cooked so it looks a little drier and darker than this one does but that's because this has just come out of the oven it's still actually a little bit warm to the touch so this guy over here is just like the real thing Kito lasagna and that is by Peace Love and low carb calm and this makes four servings and of that one serving is 486 calories 34 grams of fat 57 grams of protein and nine and a half grams of net carbs so it's a little car B but that's coming probably from the the pasta sauce and again we made the pasta sauce for the the marinara sauce we made the noodle quote-unquote and the filling so made all of the parts of that the next one over here this is keto lasagna recipe by wwr Ikeda with me and this makes 12 servings and if you make 12 servings one serving is 380 calories 26 grams of fat 30 grams of protein and 5 grams of net carbs now this we used a jarred marinara sauce so just be sure when you do that you you're taking account the the carb count of that so I would probably say that this is really like if there's something you know I have portion control issues I would say this probably looks like three servings to me and this looks like eight instead of twelve but that's neither here nor there so now the question is how do you get amongst it let's do this one first since it's the the coolest and get okay let me scoot you over get over there all right this is the hard part and I don't want to mess up my pan here with um with a knife cut but mmm it's thick try not to damage my pan okay let's just run a knife around it and you know anything coming out of a loaf pan this size the first one's gonna look like a nightmare when it comes out so don't judge me on my plating skills on this because hello it looks like it's gonna be hard to do so I don't know how to do it let's see spatula Oh Sally Jenkins speed nice get out of there oh all right that actually held together okay a little bit of sauce there on the bottom so let's gonna put this over here looks good look at the layers don't my big fat hand in the way look at the layers on that looks really really delicious all right I'm gonna put that here let's try to cut this other one while we can while we're cutting and I'm just gonna yes to make this was really liquidy I would imagine that deli meat probably has a fair amount of I'm gonna have to get a spoon for this that deli meat probably has a fair amount of water in it and you remember our goal here was not to have my watery lasagna from zucchini noodles so pute okay oh lord please oh it's liquidy okay it looks good no and it's cheesy buddy alright look at that okay so taking to account that this is cool and has been cooled for a little while oh I didn't show you what he looked like there wasn't much this is the thinner layers obviously but it looks good this definitely looks a lot drier but like I said it it has oh it's thick I would imagine if I had eaten this warm it would have been a little easier to eat I mean it wouldn't been quite so it feels a little stiff that is good that is very good I think that I almost feel like the noodles quote-unquote are almost too thick but again it's it's really just basically lukewarm at the moment it's not fully hot and if you ate it a little warmer and a little closer to when it came out of the oven it probably wouldn't be so here's our other one this is the truxedo with dot me and this is the one with daily chicken meat in it that's so weird but it looks it looks like noodles I mean I don't know if you can see that it looks like little tiny thin little delicate noodles and I can see it smoking and y'all know I like to burn my face off when I get it's too hot I should wait it a little bit more but I'm starving okay that is good that's real good actually you know that it's not a noodle you don't know that it's chicken or Chittoor deli chicken breast but you're not really sure exactly what it is it's tasty though I mean it gives you the texture of a thin like no-boil lasagna noodle it really does and I've got to say that the that's good and I gotta say the the jarred sauce as much as doctoring as we did to it really isn't that different from the sauce that I had to make myself which isn't hard and all but it was just another step making noodles making sauce making filling um I'm not sure I don't know I wish that the noodle wasn't as thick as it feels but it feels like bread that's what it feels like it's almost like like you made lasagna with layers of like garlic and bread the kind of right that's what it feels like to me and that's not a bad thing but if I were making this again for the amount of effort that it took I would probably make this one just because it was easier and the payoff is just as good I think so there you have it folks low carb lasagna apparently it can be done and without zucchini no less so both of these are worth trying just to look which your family may prefer but try both of these and see what you do what you think let me know in the comments down
