[Music] believe it or not i say i have a lot of girlfriends yeah we're standing behind all of them right now [Music] cole lowry here we are at uh ranger cattle in austin texas i'm located roughly seven miles from downtown so yeah out here we uh we raised wagyu cattle we simply call it badass beef [Music] we supply roughly 30 austin area restaurants there's only myself and the owner josh eilers that kind of run the show josh focuses more on the sales side of things while myself can stay out here and make sure everything you know has water feed you know our daily chores are done use some cattle terminology for y'all is uh so a heifer is a female never had a calf um of course the bull is an intact male um and of course from there once you castrate a bowl becomes a steer and you know of course a cow is a um animal that's had a female that's had multiple calves what we can call heifers sometimes is uh first calf heifer you know it's our first calf and those are kind of it can be a tricky situation because those sometimes those animals tend to you know not take a calf when i'd say take a calf hey that's your calf that's your responsibility let's let's do our job here you're not the one coming out here with me every morning giving that thing a bottle you know it's um it's all for the better reason but at the same time you know it's we'd like the animals to you know do their own thing without as least assistance as possible so uh yeah out here we have some of our bulls over here behind you guys and then over here some of the uh we've got some cows that we use the term recep cows and that's a recipient so we have these animals just received embryos um so nine months is a gestation length of an animal a bovine cow um so in nine months from now these things will have calves on the ground and from then on we uh you know let the animal you know do its do let mother nature do her course but the with the calf grow up on the mom you know after so many days you wean them and you know that's how you grow your herd that's how you know a uh small time operation becomes a dynasty [Music] yeah so uh here at ranger cattle we're different we're different than other operations especially because most of the time in the beef industry you have the guys that raise the mama cows that calve and then they sell those calves to another guy who just kind of raise them out on grasses called a stalker and then that guy will sell them to a feed yard which will then sell them to a beef company which then will distribute the meat and everything else well here at ranger cattle we're vertically integrated so we'll do everything from breeding cattle like what we're doing right now this time of year to you know calving them out raising them up and finishing them off all ourselves so from the day we breed until the day we deliver that finished steak is about a three year timeline so this is just our stud barn essentially what these guys do is they're just in here to gain weight for the most part what happens is when a bull goes out and breeds a herd of cows they'll lose a bunch of weight like we're talking about 300 pounds or so so they'll work for about 90 days covering a herd and then come back in here for about 90 days just to try to gain that weight back so we'll feed them a high energy diet right here as much as they want so just like some grain in there some brewers grain corn some hay just roughage that's real easy on their rumen and we'll try to get about three pounds of growth out of them every day just recovering so that they can breed more cows because essentially their only job in this world is to breed cows they can produce a lot of semen that's it other than that like they're a headache to work with because they have a lot of testosterone they're always breaking stuff they're they're actually a major challenge and you have to have as you can see major infrastructure to house them because they do weigh you know anywhere from 16 to 200 pounds and they they can be aggressive at times so they're almost a liability so luckily we have this big heavy duty barn here we're able to house them and and do everything safe so the biggest difference between wagyu and another type of breed such as an angus or one people are more familiar with is the inner muscular fat so they have genetic predisposition to instead of depositing that fat on the outside of the steak they'll deposit intermuscularly so it's very well marbled anytime you have marbling more fat you have more flavor and that turns into a better eating experience for the end consumer sometimes these things just look like i'm going to walmart you buy that [Music] so it's like let's say one i'm not even gonna say what this thing is that's the difference right there in genetics yeah so the reason we specialize in wagus for a pure economical standpoint so our idea is if we're gonna raise a hundred head of cows let's raise the best hundred we can at the end of the day you can only make so much money off of one carcass but if you have a really good carcass you can make more money off of it so we we like the added value of the wagyu breed better quality without the quantity we do here at ranger cattles we identify with on our own herd who are the top performers and who are the bottom performers and you always want to make sure that every year you're breeding a better animal and we're able to see that because we collect carcass data by being vertically integrated so we have that strategic advantage over any one of our competitors so we'll essentially take the best bull we have every year and cross it with the best female we have every year and build a herd off of that through some modern day reproductive technologies such as like embryonic transfers and whatnot and essentially what we're doing there is just using our bottom level of cows out on a pasture using them as just surrogates holding embryos of our best animals so we're able to grow herds overnight and get better every year [Music] we have one female who is genetically profound to [Music] just succeed in every category that you know waiku is kind of looked at for this girl right here so 52 would be her vid her permanent ear tag will never be removed and the other hair in her right ear is c55 on the top of that reads k-i-m-i the name of our bowl back at the headquarters specifically kikamichi this guy's name is actually kikamichi so wagu's a japanese breed so we stay pretty traditional on the japanese names and the reason we like him so much because we ran his dna and some real smart scientist somewhere has been able to identify certain genes in the genome of a cow that will enhance the beef quality and essentially you know if he has it he's going to pass it on well there's five major traits that we've identified in wagyu and he's got all five about a one in two hundred thousand chance that you'll have those genetic markers and he does he has them all so he's my favorite he's probably our most valuable bull i know we created him so he's actually the only one alive that we know of [Music] you can purchase ranger cattle beef at any of the farmers markets that we supply in downtown austin or as well about 30 different restaurants we do so much like outdoors like our fire truck with our cooking yeah it's a 1985 fish he's bad ass man we got a smoker on the back and then like two grills and a rotisserie up top you see that camera up there that's to do a live feed on a flat screen tv on the other side we've got two kegerators so it's like for tailgating or anything just to promote our brand because that's what we're really interested in like we'll go do a big like cooking competitions with it which is kind of funny because we don't actually know how to cook we raise cows but yeah yeah so we'll just use good beef and then hopefully the product speaks for itself when we just try not to screw it up people at the farmer's market get a pretty good kick out of when they say oh uh so where's y'all's ranch located like we drove three hours to come to this market i don't know anybody that does that but anyway um so yeah we're seven miles from downtown austin people farmers markets really don't grasp the whole concept of we like four wheelers a lot better than horses we can uh turn a key and you know shake a bag cubes and i can like if these were to get out right now i just shake bag cubes they followed me right back in you know for us and efficiency and you know getting the job done quick i don't have time to go deal with a horse temper you know we got to get stuff done so so we are roughly i'd say two and a half three miles from where we uh where ranger cattle's headquarters is located this is one of the pastures we just kind of refer to it as the big ranch the creek relief pasture everybody kind of generally knows what we're talking about um so yeah i'm out here just feeding cows how we use you know pretty common term is uh breeders cubes um they're really 20 protein you know it's like so when i compare it to individuals is like you eat a salad all week and you know you have that protein shake waiting for you to end the week so we try and supplement that protein shake within uh you know a couple times within that week and you know it uh just gives us also an opportunity to get out here looking cows [Music] in total ranger cattle controls about 3 000 acres on the outside of austin and we'll run anywhere between 500 and 600 animals on it any given time the land isn't really our limiting factor it's mostly you know the animals are our highest concern so the health and well-being of them and so that's as many as our staff can really handle and do it in the right way land acquisition is definitely the most difficult challenge and as far as agriculture goes uh the biggest barrier of entry so we do a lot of partnerships with commercial land developers and the reason we do that so those guys are interested in purchasing land that's close to the populace around major cities and we also want to be close to major cities because we want distribution of our product to be cheaper you know the closer we can get to our consumers the better it is for us so our partnership with them allows them to get a agriculture exemption on that land and it'll it gives us access to land well i gotta testify in front of congress about it and i was nervous because you can't really lie to congress you go to jail so uh but it seems like textbook like tax fraud to me like hey we're gonna take this kid that we don't even know have him throw some cows on some land and then uh we're not gonna pay taxes on it that seems like it should be against the law but um they were actually really happy to hear that because they said it's actually the intent of the law yeah because at the end of the day like you could never make enough off of agriculture to pay for this land because it's worked 12 dollars a foot put that into like terms that everyone understands there's 30 acres worth about 30 million wow oh yeah [Music] so the number one thing we look for in land is that it can grow grass because at the end of the day cows turn grass into steaks and we sell steaks so the more grass we can find the better so you need water absolutely and one of the things about our land that a lot of people don't really understand is that a lot of it's in flood plains which deters traditional developers well we really like it because twice a year or so it floods and that's bringing in fresh sediment and it's fertilizing our fields and washing away whatever we don't want on there so it enables us to always have fresh soil to grow you know bright green grass and the cows really enjoy [Music] i feel like with the big companies big beef companies you know they're so out of touch with their consumer and that's one that's another advantage ranger cattle has here in austin texas is being located seven miles from downtown i mean everybody can roll up out here and we can we can learn we can learn together hey i think we need to do a better job in this industry of educating consumers on hey what is nature and what can nature do for us because everyone's real worried about protecting nature and it's like well you need to know why you are and at the end of the day when you get hungry you're very concerned on your next meal but in america we we've been so long away from we have the most reliable cheapest food source in the world so i think we sometimes take advantage of nature's providing capabilities and we got to remember that hey we're only about three days away from a famine any given time when we do tours you know it's like the chefs aren't the ones selling it the waiter and waitresses you know that's their responsibility and that then gets related to the chef who then cooks it so we want like that i mean it goes back to the transparency we want everybody to be on the same page no questions you know everything's just we're pretty well wide open um so we have our tours now we're like we've had groups of like 25 to 30 people out here and uh that's pretty entertaining but uh you know that's some people never like they serve beef at a restaurant and they've never they never seen a cow you know let alone like all these would eat right out of your hand i want us to like be you know like brothers with every chef we work with which is one advantage we do have compared to other beef suppliers within the community is not only do we you know we're vertically integrated we cut out the middleman and everything we don't pay someone to do something that we are perfectly capable of doing but on top of that we have probably the best relationships with all the chefs in austin you know they can probably this afternoon one might roll out here and be like hey man like what do you need help with you know i'm just you want to shoot some clay pigeons like of course you know that is that is you know well you don't have to ask permission to come out we feel like the gate should always be open you know unless we have cattle out there then you know the gates
