i think we're calling today roasted jalapeno popper hot dogs in fact i know that that's what we're calling them they're going to be delicious they're going to be simple and a jalapeno poppers often have a cream cheese component so we're not going to skip that but instead of inside it's going to go in the bun and instead of plain cream cheese we're going to make a roasted garlic with lots of black pepper cream cheese now i want that on my bagel in the morning oh and and and don't go away because our second of twenty three million subscriber anniversary winners will be crowned anointed today roasted garlic first all right what's best about this is that it's three ingredients it's garlic it's salt and it's avocado oil chosen of course and super simple to do so here's what you do we're gonna cut about the top inch off this head of garlic right all we want to do is expose all these cloves you can get rid of any of this extra stupid waste of space annoying garlic paper okay now once you've got this get a couple sheets of foil just like this the garlic goes on we give it a good drizz of the avocado oil give it a u we give it some kosher salt and then we seal the kit up like this i like to leave some headroom in there so it kind of steams a bit so i don't pack down tight but i do want it secure and then this end gets closed up and this end gets closed up and this little kid now goes into a 400 degree oven for 40 to 45 minutes now we move on to the poppers here's all you need hot dogs and jalapenos we don't need the hot dogs quite yet so these guys go off to the side but these guys we need so now look you can see could you just chop off the top and cram the hot dog in there you could but you'd be not doing this very nicely so we're going to take a bit off the end and a bit off this end now you want this that goes all the way through and it's hard to get this unless you use a oh a drill get a drill stand by so when i've seen this done they've cut this guy in half and then cleaned out and cleaned up do i want to drill we know what happens when i use a drill awesome if we can keep that hole come on drill drill drill well i don't know if i have a bit okay here's what i have because it's not a drill but it is one of my mom's slicing knives from 2000 years ago i love this when she moved into a home i took a couple things and this was one of them how many inches is that it's it's like a 12-inch blade or something well here that's seven so what is that nine ten there's no numbers on it anymore just words okay so i think i can do this my goal will be not to jack up the hole do you want to come on my side i mean to see in here yes i can't i can't okay with maxie and his camera in place this is what i'm trying to do oh this is no i don't know about this man i mean i get it but you see you got to try and get this out that's the problem is trying to get this crap out so the drill actually would have been really good the drill would have been outstanding but so i'm trying not to break up the pepper too much well you know what would have been perfect that round knife sharpener could have used it to poke this crap out i'm gonna go get the thing before you cry more just do this it's gonna be fine so you were crying but but here's the problem the problem is i don't think this end is big enough to accept all of this dog so now we go like this no it's not going to make it through so i got to now loosen it up a bit put some fingers in no i it's still not going to be your time shut up be gentle it'll get there put some lube on stop it no it's still gonna be so i have to cut it i'm just gonna i don't want to take too much off though come on baby come on there we go oh sorry i don't mean to oh that feels good jesus there we go look at it's starting to split okay how's that perfect good all right one down wow i should have gotten huge ones okay well we'll try this again this do you guys smell weed all of a sudden i started smelling weed okay maybe not so you just want to clean this little guy out make yourself a beautiful spot for your dog to slip into nestle into let's go baby come on come on come on come on they think some lube would help there you go well it is kind of straight mechanics isn't it i mean no it's still there's still a size issue here oh boy this one's really really tight i mean i was worried that these dogs were going to end up being way too loose in this and just sliding out okay we're good there we're good we're good okay i'm going to make one more of these guys and then we can get on to making our roasted garlic cream cheese that's our guy this is what comes out after 45 minutes at 400 degrees oh and it looks like that smells honestly kind of amazing but check this out you can squeeze these cloves out watch you see this do you see what's happening here just like that it's crazy huh so you just want to pop them all in your little bowl here okay but what's amazing about this is that the garlic the harsh garlic taste is gone and it's now just sweet joyful straight deliciousness you know when you caramelize onions and we've done it eight thousand times they go from that harsher oniony flavor to gorgeous sweetness as they caramelize the natural sugars come out that's what's just happened here this is not that harsh garlic vampire breath that you're used to it's nutty it's way sweeter it's not harsh at all and combined with the cream cheese and pepper i'll just show you because it's gonna be great so a little mashing first oh i'm super excited about this and then oh look at i don't really have another spoon here i'll just use this so regular everyday straight cream cheese so let's just give you a measurement on this so that was one whole head of garlic and let's use we want this to be kind of significant about a third of a cup of cream cheese and some pepper so fresh ground black pepper fairly coarse fairly chunky like this and what have we got here maybe a quarter of a teaspoon and let's mix and see how it is oh i'm getting garlic up in my nose i'm getting the pepper okay this with some smoked salmon on a bagel unbelievable and when you've got it where you want it looking like that we start the dogs okay so even though there's some remnant oil left on these from my lubing them i'm just going to put a little bit more on in the pan get everybody covered a little bit get that seed off and then we go directly on all right don't get too bored talk about anti-climax i know there's no flame here i can give you some flame you ready how about just some here here's some flame wait no there you go there's a little flame down there here's flame you ready yeah there we go that's a manly right there now now it's gonna now that i've ruined everything okay but on a serious note you're softening the peppers and you're grilling the dogs sorry here's what i should have done watch let me help you out you ready max yes thank you oh there's nothing like that sizzle okay so this ain't taking long i was watching an old video of mine that we made for the city of tucson yeah on recycling and i'm in this giant recycling yard and there's a massive truck and the truck is backing up and you hear that and the camera pans over to me and it was me doing it and i forgotten it was so many years ago but it was perfect i tricked myself look little nice marks ah cute look at them down here on the end our wieners are cooking so just move them around and use them to rest against one another like puppies sleeping using each other as a head rest kind of thing to keep the right side up oh yeah we slippery little all right we're about what three and a half four minutes in we're getting there they're looking nice remember something folks hot dogs 100 cooked already so you don't have to go no see you're not helping me i want that side done you do want this thing softened up i mean if you could push on it it softens and that's really what you want like the the areas that don't have any color like that put that kid face down right that's all this side this is looking good this guy he's looking good this side needs a bit more and while the dogs are finishing let's just get a little toast on our buns beautiful they're not going to take long because this is hot seconds here's my little spatula i want to wreck anything gorgeous oh it's hot what a surprise and the buns will come off and be ready to accept their roasted garlic and black pepper cream cheese oh it's gonna be good and look at these little guys unbelievable they are so ready to be eaten and watched look at this guy this guy started to split i love that i love this i love this all right so we're there we begin with our cream cheese damn it honestly i'm like sort of in love with this right now perfect the smell honestly is just really kind of wonderful i unintentionally made the perfect amount okay truth be told the perfect amount would have been like two tablespoons more but look at this here we go one they're beautiful two i love you three it's just a little nudge in oh the cream cheese is starting to interact with the hot pepper and the dog and look you guys know i'm all about putting something on top not in this case in this case we're leaving them as is they are so beautiful and they don't need anything green they are green and this is it i mean come on now let's put this guy here this guy here and here's our friend that we will now have a delicious bite of but watch what i'm gonna do i'm gonna cut them in half so you can see that because that's very pretty and now i don't have to eat a quarter of a hot dog to get to that part because that's the part i want yeah so i just think that's cool looking listen that roasted garlic cream cheese is so luxurious the pepper the softened jalapeno around the dog damn it damn it please do this one word of advice either use smaller dogs or get giant jalapenos and i was about to take another bite but two things one max will start crying probably pee himself but two we gotta give away another one of these so let's do that it's giveaway time again the garlic presses this is a number two you remember what happened the other day i mixed these up i reached in they're numbered from one to twenty did it reach around i reached in and i pulled out number one you're kidding number one shut up everybody here max and chance thought i did something sketchy i went home my wife went did you have that planned i go have what plan to pull out number one i went no so to show you that this is all 100 on the up and up not that there's any benefit to me picking the number one one in the beginning i mean what's the point but so you people think that i'm doing this the right way oh there you go all the rest there's 19 in here look this is clear nothing's stuck to the bottom right you can see this i'm looking at you looking away sorry my mic's here and this is gonna not be good for anything i'll mix them up that would you
