Introduction to No-Knead “Turbo” Bread (updated)… ready to bake in 2-1/2 hours (super easy)

hi I'm Steve and welcome to my kitchen I have two methods for making noni bread traditional proofs for ages 24 hours and turbo ready to bake and two and a half hours today I would like to show you how to make no need turbo bread like these but before we start I'd like to make one point because of the shorter proofing time it's important to use a warm bowl and warm water turn the hot water on when the water gets warm rinse the bowl in the water and dry the outside then fill the measuring cup and you're ready to start I have the warm bowl I pretty much dried it off 14 ounces warm tap water if you ever wonder if it's too hot or something if you could put your finger in it it's just fine one of the quarter teaspoons instant yeast I sprinkle it when I put it in rather than dropping it into one cloth one and a half teaspoon salt you notice I just use a teaspoon and I make it rounded give it a quick stir to combine three and 1/2 cups bread flour you can use all-purpose but bread flour is better bread flour was specifically designed for breads there's one half I dropped it on the side it doesn't splash as much when I do that there's one too three now I'll give it a stir to combine now it looks silly to use a spoon use the handle them but it will actually put the flour together better than if you use the round in my recipes are designed to be as easy as possible I have seven-year-old kids who are subscribers and use these recipes this is something though the young can use and anybody who has any problems with their hands or their wrists look at how easy this is to do now I'm kind of scraping the side right now to bring it in and then I'll use a spatula to finish off to bring any dry flour back into it this point I kind of tumblin that takes the wet dough on the top and it introduces it to the dry flour and there you are I have my shaggy ball it's all set to go all I need to do now is cover it with plastic wrap now the reason I use plastic wrap is that if you put it in the sunlight it'll trap the heat because sunlight can go through it if you use the oven light method it will still trap the heat on the inside turbo dough should be proofed for one hour and thirty minutes in a warm draft-free environment the ideal temperature for proofing is 78 85 degrees but the typical home is 68 to 72 so on warm summer days I proof in direct sunlight non cool days I use the oven light method of proofing turn the oven light on put the dough in the oven close the door and the oven light will warm the oven to a little over 80 degrees which will give me a warm draft-free environment for proofing the dough is proofed for an hour and a half it's time to make the bread the dough is proofed in the oven and more than doubled in size now we'll start by sprayed the pan with no-stick spray watch how easy this is I just use the handling of the spoon this is called D gas hold and stretch and now I have it down into a ball I scrape the side you get any of the remainder in take it over pop it in the pan and it's that easy don't worry about shaping it because as it rises it'll fill the pan let's try something new I developed the poor man's Dutch oven to shape dough into sandwich bread used in the principles of the Dutch oven a poor man's Dutch oven is nothing more than to bread pans one on top of the others secured with metal binder clips the poor man's Dutch oven will trap the steam and develop the crust just like a Dutch oven then you can control the color hardness of the crust by the amount of time you bake the poor man's Dutch oven with the top off just like the Dutch oven I'd like to show you one more do you gasps pull and stretch scrape the side of the bowl sprayed the pan with no-stick spray [Music] now before I put it in the pan what I'm gonna do is I'm gonna garnish it with sesame seed this is really gonna do you see right now this dough is real sticky these seeds will stick very well you can use as many seeds as you like I find that around two tablespoons is what works this is a dupe okay now I dumped some on the side there so I'm just taking the ball of dough rolling it in the sesame seeds okay now that I've done that I take the pan roll the dough out into the pan if I've got a spot that doesn't have sesame seeds I just might sprinkle a little bit on it so it's a little more generous on the top now here's another little thing that I do I'm gonna take this pan put it on top of that pan I'm gonna take a binder clip I'm gonna close it another binder clip I call this a poor man's Dutch oven what it does it'll emulate a cast iron or not oven born it see it's sealed so the bread will bake in there it'll lock the moisture red it'll steam up real well very nice way to make bread proof dough for 30 to 60 minutes before the bill was fully proved move the oven rack to the lower third of the oven and preheat to 400 degrees after proofing bake the loaf pan for 40 minutes at 400 degrees and it's done the poor man's Dutch oven should we bake for 40 minutes at 400 degrees with the top on and 3 to 15 minutes with the top off to finish the crust the bread is ready let's take a look and here's the results
