you're on buddy all right so the first thing we do is take the dough out of the tray and we put it into a flour bowl and be sure to press the dough down nice and firm into that flour and you repeat the step by flipping it over and pressing it down as well and you can spin the flower bowl around like this and then you're pressing down the crust after that you'll take your dough and place it on the table using your left if you're a righty you'll be guiding the crust and with your right hand you're basically taking your index finger and your middle finger and making a crust or a lip and this hand is always the guide and you press down firmly and as you get down to the end of your palm you'll move the door the dough clockwise and pull it back to the 12 o'clock position and press down again to the nine and constantly repeat the steps until you get that nice crust or lip as we call it after you do this you'll have a nice outer circle so what you're going to do is you're going to work the middle of the dough and you're going to press it outwards okay and once you get to that crust you work the edge out and you come back down and don't worry about pressing the dough too hard you're gonna you're almost mad at this though okay you're gonna be pressing it down constantly and same thing you're gonna constantly be repeating that step and pressing the dough down okay after this step you'll sprinkle a little more flour on this dough and you're going to flip it over and repeat the same step that you did on the other side and press the dough down okay once you do this step you're going to flour the dough a little bit you're gonna flip it over to this side and you're gonna do a tight pull basically you press your palms on the dough you keep your hands very close together with your index fingers almost touching and this hand is more of a glider and this hand is a puller keeping it close and tight you pull clockwise and be sure that you're stretching the crust and not the middle of the dough your palms are never pressed down against the stove you're only stretching with your fingertips for the crust so you have a nice thin consistent crust after you do this you can look at your toe and you'll have an even playing field everything's nice and even perfect then with your left hand you're going to toss this dough onto your right fist you're going to have a close grip shoulder length apart and you're gonna flare your hands out with a small little skip this hand is a skipper your left is a skipper and your right is the flarer you're gonna slowly jump and pull the dough outwards with a flare with your thumbs as a guider for your crust and you're going to constantly repeat this step as the dough gets bigger your shoulder length of your hands are going to get wider this way you you have more control of the dough once you're a certain distance away from your table which you'll get used to your dough will be stretched out completely you'll have a peel and all you'll do is lay the dough down once you have it down all you have to do is just lift it up and pull the dough outwards and you'll have a perfect stretch though nice it's good right great
