When you're finished making your dough, you will never use it straight away... you will always put it away to rise. So if you just leave it like this it will expand and relax to the sides making one big puddle of dough that's why you need to shape it. Shape it into a ball and when you do this correctly the ball will be under tension all the gluten will be tight and the dough will rise up instead of sideways You do this by grabbing the dough and folding the sides in and over... now turn it around, cup your hands and pull the dough towards you do this about four times and you see the gluten will start to tighten and the ball is shaping itself now you can put it away and it will have a beautiful upwards rise For a medium-sized pizza you would want to make a dough ball of around 220 grams so when you have weighed down your dough, you will start to make a little ball the way you do this is fold it in, fold it in, fold it in and fold it in again now you can repeat the process. Fold it in, fold it in until you see that the gluten is starting to tighten. When this happens you turn the ball around and you pinch the seams and you put it away.
