hi I'm Sebastian and you're watching the fogger life I'm uploading weekly episodes of barbecue how-tos and recipes don't miss another episode subscribe down below in today's episode I want to show you how to do pork belly burnt ends [Music] the original burnt ends are from brisket actually from brisket point and are some of the tastiest pieces of barbecue you can have today I'm going to use a 16 pound pork belly to also make kind of like fake burn ends but they're in many ways they're even better than real brisket burnt ends basically the pork belly is the same kind of meat that bacon is from so it's super fatty and super tasty first we're going to smoke it for a couple of hours and render down that fat and then toss it in barbecue sauce and throw it back on the grill to really kind of caramelize all that sauce and all that taste and it's gonna come out absolutely amazing let me show you how to do it [Music] for today's coke I'm going to use a five pound slab of pork belly where the skin removed you can remove it yourself or ask your butcher to do it for you [Music] I'm cutting the pork belly into one to one and a half inch cubes unlike any other meat that I would usually smoke oh I want to get a ton of amazing bark on every single piece and get that smoky flavor all over it pork belly is also so fatty that it will remain moist during smoking I'm really generously applying my favorite barbecue rub and don't forget to toss the pieces in the wrap to coat the meat today I'm using meat Rogers honey ha [Music] I'm using a wire rack because it makes it a lot easier to move so many pieces on and off the smoker [Music] today we're going to be cooking low and slow so set your smoker to smoke a 225 to 250 degrees I will also add a couple of chunks of cherry wood because they will give us some amazing smokin color and smoky pork belly for about three hours until you're happy for the parking color of the pieces [Music] move the pork belly into disposable aluminum pan and add some apple juice sugar honey and your favorite barbecue sauce generously coat and toss all the pieces so that they are completely covered in sauce then I put the entire pan back on the smoker for another 30 to 45 minutes to brace the pork rib every 15 minutes or so toss the pork belly to coated completely and so that no side is drying out the sauce will start to reduce making every piece into a super decadent super tangy barbecue candy [Music] you [Music] all right guys pork belly burnt ends are finally done and it looks absolutely amazing and Ronnie's here again to taste the food with us let me know if I did a good job doesn't it look absolutely amazing look how tangy that sauces color is amazing Wow it's like super squishy too huh go for it go for it I want it I want to see your reaction is it good yeah it's meat candy man it's meat candy this is good so tangy all right look you know because we used a good barbecue sauce it's not like overly sweet I mean we put a little bit of sugar a little bit of honey but I love that it's not like overpowering like sweet yeah that's nice I've had them before where the rub is sweet sugar to it you put a sweet barbecue sauce on it gets too much you know this is really good this is amazing like how do I describe it so basically the meat is just like really nice like really perfect like really nice consistency has like a nice chew to it and the fat it's just rendered down to like squishy or succulent yes tasty awesomeness like kind of combined with the sauce it is candy this is like me can you look at this I mean nobody will believe this to explain a little bit I'm so in talking all about this because this the first time I have I've done and ever had these like pork belly burnt ends and I mean I've read about it but you know it's not the same you read about on forums you read about it in recipes you watch videos on it and it's like okay cool you know but really it's a thing you know it's crazy tell you what you can keep your brisket burnt ends I'll take pork I'll take these pork belly burnt ends every day it makes more sense to me for some reason I don't want to cut up a point brisket No Oh brisket point is the best part mm-hmm like marbled with fat he gets nice and squishy and and you know I love that awesome flavor I personally I love the the point much better than the flat you know the fat gets that kind of dry and kind of weird well oh my drive all the flavors yeah I love that I wouldn't I wouldn't make burned instead of that oh I'd make burn guns out of this every day though this is crazy we don't stop eating now Gilly is amazing I think my doctor's my doctor's bawling he says better stop see if we can capture this with a camera check this out it's so squishy squishy and extremely sticky but it's just it's just delicious it's like a morsel of joy the insides crazy just like me mmm I can't stop eating it so good and it didn't take long what you think it's two and a half maybe three hours now you start to finish that's amazing goes on the brisket how long you're waiting on the brisket for all day yeah oh yeah this wasn't bad and he didn't have to do anything it was easy like just chop it up marinate it throw it on the grill two hours fussing and sauce another hour on the grill yeah good to go that sauce just caramelizing on yeah I just really finishes off beautifully so good yeah absolutely amazing yeah guys today's recipe might not be the healthiest in the world might not be the lowest cholesterol recipe in the world but it is something special this is this is something different you know like for sure you can impress your friends you know do like a nice little barbecue at your house have this ready for when they come and then throw a bunch of steaks on the grill they'll go crazy for this they'll be like how did you do this I want to do this teach me in the recipe this is crazy I've made him a bunch of times before I'm impressed yeah yeah this is this is the
