How to make Mexican Rice

hi everybody I'm back and today I'm gonna show you all how to make Mexican rice here's what you will need you will need 1 cup of long grain rice you will need 1 garlic clove chopped you will need 1 medium onion chopped 2 cups of chicken broth and I have 2 tablespoons of crushed tomatoes you will need cilantro onion powder salt and pepper garlic powder and cumin and you will need a Boyan cube this is a boy young-kyu and it's tomato Boyan with chicken flavor okay it's made by Knorr now the first thing that we need to do let me show you my pan let's come over this way and so I have a skillet and I have some oil in this skillet here see that okay so what I need to do right now I'm gonna go ahead and start browning up a beautiful long grain rice just like so this recipe is so easy and it is so tasty it has so much flavor for so little ingredients now when I'm making Mexican rice I don't choose to use a lot of because a lot of people use a lot of tomato sauce or crushed tomatoes I'm only using two tablespoons because I feel like when you are making rice you want to limit the amount of tomato sauce that you put in because the more tomato sauce or crushed tomatoes that you put in the more smushy your rice will be and I like from my rice to be nice and separate and fluffy and that's what we're going to achieve today so our rice is well coated with the oil I'm gonna turn that up a little bit on to a medium-high heat okay we're gonna get that rice nice and golden brown color and it's going to give off a very nutty flavor I have an onion here this is the same onion that I was using for my chicken enchiladas earlier so there's a little bit of enchilada sauce on my onion but that's just fine okay so I'm putting the onions in because we want to saute up our onions with the rice I have the meat the meat I have the heat on medium-high we're just gonna let this get nice and golden brown and take your time any time you all are in this kitchen take your time patience is the key to good cooking I always like to say it because it's so true take your time and let this don't rush to food and it'll turn out just perfect so we're doing the to the 1 ratio with our rice so if you have 1 cup of rice you want to use 2 cups of water or your 2 cups of chicken broth like I'm using okay if you want it to you absolutely can use a vegetable stock or a beef stock it's really up to your discretion okay what I'm going to do here I have my chicken broth and I'm gonna break up my tomato chicken based Boyan cube I'm gonna use the whole thing and you can see me over here I'm just breaking up the little pieces into the chicken broth and i'ma give it a nice stir that way it can be well incorporated when we mix this okay and we won't have to worry about any lumps okay if this gets stuck to your finger just put your fingers down in there rinse them off okay just like so so I'm gonna grab a fork I'm gonna give this a nice girl to get what I can well incorporate it and what lumps that doesn't come out by me doing this right now will definitely come out during the cooking process okay because that'll dissolve it with no problem you always anytime you're making Mexican rice you always have to have cumin definitely put you some cumin in there absolutely and when you use that fresh garlic along with the garlic powder boy does it give a good flavor you hear me so there's our boy young cube well distribute it into our 2 cups of chicken broth now I did just a little over two puffs just a little tad bit over I always do not too much over just a little tiny bit not this much over okay because I like to be a short that my rice is done and it had enough liquid absolutely oh so this rice is starting to get nice and golden brown and you want to get that oil all throughout this rice and you'll see when it gets the golden brown color that we're looking for it gives it a nutty fun nuttier flavor and it gives the rice a better texture absolutely it does when you're making this what I want you all to do is make sure that you have a lid a nice tight lid okay and once this comes up to a boil after we have all of our liquid in we are going to turn it down on low and let it simmer for 20 minutes without opening the lid if you open the lid it won't turn out right all right so we're just gonna keep on with this rice I'll put the video on pause and once it starts to get that golden brown color that I'm looking for I'll be back everyone okay everyone as you can see our rice is starting to get nice and golden brown and I wanted to get one more step browner so I wanted to get even browner than this I want that nice nutty flavor that this can be if you brown it the right way I love rice rice is one of my favorite side dishes absolutely especially Mexican rice like it doesn't get any better than this it's so tasty mmm especially you put you some chicken beside this you can eat this with the earlier I made the chicken enchiladas they turned out beautifully they were so tasty and this rice can go right alongside that after I get done with this video I'm going to make the refried beans and show you all how to make those which is very simple okay our rice is nice and golden brown what I'm gonna do at this point I'm gonna go ahead and put that garlic clove in just like so get it all in there we need that fresh garlic even though we're using garlic powder you want that fresh garlic because that fresh garlic gives off a whole nother Ajo it brings a whole nother world to this rice believe me trust me when I tell you this get you some fresh garlic in there absolutely and so over here you can see that I pulled the pico de gallo out of my refrigerator I'm gonna use 2 tablespoons of pico de gallo in just only 2 tablespoons and I'm gonna put that in my rice how come you're gonna do that Gina because I want to because I want to and I know it's gonna be delicious with little chunks of the tomato and the cilantro and the onions in the jalapeno in there oh absolutely it's gonna be delicious so now our garlic you're starting to smell the garlic right now the garlic is starting to get very prevalent you can smell it very well before the garlic gets too dark what we'll do is we'll start adding everything else in so we can get our water in or our chicken broth that has the Boyan cube mixed in it okay so we're just gonna put everything flat and even in our pan all right just like that you're gonna go ahead and add your pico de gallo and that's just a little tiny bit right but it's gonna give off a lot of flavor okay I want to reach this way for the fresh cilantro and we're gonna do a tablespoon of cumin a tablespoon of garlic and then we'll put our onion powder and salt and pepper okay all right let's come over this way and go ahead and put and I'm sorry I said a tablespoon but I meant to say a teaspoon teaspoon of that garlic beautiful and a teaspoon of cumin you have to put cumin there's a lot of people that doesn't prefer human but if you're making Mexican rice all you gotta have some cumin in there you hear me all right put that cumin in there and then we're gonna let these spices cook up just for a little while we don't want them to burn but we want those natural oils to come out of those spices to come out of the cumin in the garlic all right beautiful it smells so good mmm I hope you all can see down in there beautiful yeah let's put some onion powder it's just some onion powder in there onion powder will make this taste so beautiful and I like to put a nice amount in we're gonna we don't need any salt because we have that chicken Boyan cube if we taste it when it's done and it needs salt we can put some in then this is black pepper we're gonna put the crushed tomatoes very tiny bit then we're gonna go in with our chicken broth and our bullion cubes put it right on there okay and be assured that you give that chicken that chicken and tomato glue young cube out of there what you need to do is go ahead and stir this up well in that beautiful it's beautiful already stir it up well once this comes up to a boil we're gonna put a lid on it and when we put our lid on it we're gonna turn it down on low and cook this for 20 minutes with the lid on not pulling the lid off at any time until that 20 minute mark okay what I like to do is go in and taste it and see if I'm happy with the way the juice tastes taste that guys look at all that flavor in there let's see mmm oh that's beautiful okay well soon as this I'm turning it up on high as soon as I start to see put my lid on and we're gonna let this cook on low for 20 minutes it smells so good like this perfume my house in no time as soon as we put that that onion in that garlic boy does it really smell delicious it'll come to a boil very quickly so keep an eye on it don't walk away from it mm-hmm [Music] I'm gonna wipe up I got some spices on my stove I'd like to wipe that up I love to clean as I go it's like I have to if I don't clean as I go I lose my mind I love from my work area to be nice and clean absolutely so my husband came home and he tried the chicken enchiladas and he's like oh my word these things are so good and he musta ate three or four of them yes yet he loved them so much and then later I was in the living room and I was messaging you all back and I could hear him telling someone on the phone I think he was talking to his cousin and he was talking about how he really enjoyed the chicken enchiladas and I'm thinking yes I was like honestly I'll have to make it more often because it was so easy and it fills you up it's and tasty okay this is coming to a boil all right can you see where the bubbles are we're gonna put our lid nice and tightly we're gonna turn this on low we're gonna let it go for 20 minutes you all see me in 20 minutes I'm gonna taste this I'm gonna let y'all know what it tastes like be right back okay everybody it's been 20 minutes let's check our beautiful rice my house is smelling so good I'm so excited okay first thing that we want to do we need to see if there's any water there's no water at the bottom which I'm happy with oh and it just fluffs up so easy let me get a good picture I'm gonna put my camera down in there so you all can see this look at this would you look at this guys this is what you call Mexican rice oh my word you hear me this right here yes and make you want to smack somebody and let's say Gina how come you smack me and I'm going to say because the food is so dadgum good woah this right here look how fluffy and that's because we were able to achieve this being nice and fluffy and not smushy because we did not put a whole lot of tomato sauce and we did not put a lot of crushed tomatoes in there we only put a little bit a tiny bit of crushed tomatoes and then we put the pico de gallo in so we can have little pieces of tomato going all throughout we have that cilantro and that fresh garlic oh my word in the cumin oh I gotta taste this right now like I don't know if I can wait I can't even wait to put this into a bowl guys look at this wait let's get a fork and we're going to taste this right out of the pan oh god bless want to burn the roof of my mouth but what you all look at this look just how beautiful this is what Mexican rice should look like nice and fluffy with so much flavor look at that there we go oh yeah all right put this spoon in the sink grabbing the fork here and I'm going in again boy this is beautiful oh thank you Lord for this recipe so delicious look at that oh my word oh my goodness all we need is some steak or some poyo on the side oh yeah with some refried beans my goodness look at this so delicious taste that I gotta go in again guys oh my word mmm so delicious mmm if you all enjoyed
