[Music] hello and welcome to the views kitchen today we're going to be making menudo rojo now let's go over the ingredients you're going to need some beef foot and if you're not too sure what kind of bones you need for your menudo you do need it to be b foot okay and you want to pick the pieces that are from here down from the leg not my hand don't be playing friends you want to pick it to where it's from the foot and down and that's going to give you uh the broth that you need for your menudo i had adjusted to see if you're going to put your leg up but that didn't work out for us sorry guys and this right here is beef honeycomb it's the pancetta from your beef this one is just fresh you see all this fat you're going to want to get all this fat off and i'm going to show you how to do that in just a moment okay you can either pick the big big piece if this is all you can get a hold of or you can you know pick this one sustito i really like this one it just depends on what your family likes so this one's the casita casita and surtido and even this one you're still going to have to clean up some of the fat that you find in there you must know a butcher you got the good cuts girl i did get good cuts today friends this is optional this is how i make it comfortable for my home i'm going to be using beef tendon my family loves tendon the gelatinous you know flavors that you get from it and it's actually good for your body so i'm going to be adding some tendon to our menudo but if you guys want to keep this traditional skip on it okay this is purely optional but i want to share my secrets with you for the manulo itself you're going to need garlic onion green onion and salt and this is not the last time you're going to see salt we're going to use salt in this dish friends please make sure to look in the description area for more details okay bay leaves you'll also need some guajillos ancho chiles and this is optional if you do not have access to aja santa you can use a passote and if you don't have access to either or you can skip them out this is just to give you guys more of a traditional flavor for the mexican menu rojo when you would get it outside of sorona because you know and oregano a lot of you asked what's an alternative to wajiyo chili as far as i would go with new mexico but then you're gonna change the spice to it so if you like spicy go ahead and switch to a new mexico now if you don't have a preference for the spice go with the pastilla chili it's slightly different but it's pretty close and the spice levels are pretty similar okay and sometimes you're gonna find that the ancho chile is labeled as pasilla don't confuse it do the work friends do your research and remember this is an ancho chile make sure you clean your sink fill it up with a little bit of water and add some salt and the water is room temperature add your patitas your beef feet or foot i don't know you guys like correcting my english go for it so just get in and wash with that salt water okay for those of you that your mom's or your family members taught you how to do this different go for it okay there's a variety of ways of doing this you just have to find your comfort zone i just uh let the water drip or you can go like this but i like engaging with the water and i like the sounds i like connecting with my food and i'm grateful for the water so [Music] do you add salt directly to the meat like if you see that something really needs to be cleaned i added two for the beef feet they're usually pretty clean you you would think that they're disgusting or something because it's the feet but girls you know you pamper yourself and get pedicures hey these animals are no different they just graze over grass pretty much it they're healthy little fellas they get the organic they're healthy sisters okay so once you do that you're just gonna um let them strain over here and i give them a quick rinse with water i'm going to clean up here and then we're going to clean our pancetta our beef ballet take your lime and slice it make sure that you're using limes and you're gonna squeeze it into your water that's my son he's got a deep voice i was like who is that you're sounding hunky babe all right and for those of you that are scared of using your sink use a bull just know that my sink gets used often and we clean and clean and clean all day we cook all day and that's the kind of dynamic we have in this household if you guys don't have limes you can use 1 4 of vinegar and i'll make sure to leave a suggestion in the description area now go ahead and add your salt add your pancetta the belly and while it's soaking here for about 10 minutes i'm going to start cleaning and let me show you how i clean we're going to start with the big big one that you're gonna see at most of your uh butchers okay not a lot of places will have it nice and clean so you just want to get all the fat and cut it out you have a teenager that wasn't listening to you make them do this part if they're good with knives yeah they'll they'll entertain themselves cooking is very therapeutic and they're apparently you guys have my accent going crazy but it's very therapeutic and it's going to help you connect with yourself it's kind of like meditation you have to focus it's not a punishment or a restriction or anything it's just you know giving you time to gather your thoughts teenagers sometimes the fat is so close that i can scrape it but you want to take out as much of the fat as you can if you don't like a dirty menudo you have to remove as much of this as you can friends okay so take your time during this step is you're doing yes it is it is the prep time for this is time consuming but it's so worth it the payoff is amazing you see your family just so happy those of us that like menudo so i'm going to continue with this one and i'll show you guys in just a moment what it looks like when it's nice and clean nobody wants to watch anybody clean anything [Laughter] i do okay but i'll turn off the camera and watch and help kyle's going to help guys we have the fat off of most of it well you have the ones that's really sticky but you're fine with that and now it's time for us to chop it up so when you have the big big piece like this you have to do the chopping yourself i find that children and people that are not familiar with this dish prefer it with smaller pieces now if you have those gluttonous folks that just feed me you chop it how you need to chop it so i'm just gonna do little pieces because they're gonna get really small it's also easier for me to chew because i have these invisaligns so it's becoming difficult but i'm gonna get them nice and small the invisalign or the fancy thing well the invisalign so that i can chew because i have the invisalign it was going to take eight months is going on two years if you're wondering how are you chopping that so nice these knives are amazing you guys can find them on our amazon store link and if you can find them somewhere else more affordable go for it okay i'm gonna do is i'm gonna throw these back in let them soak up now for the menudo surtido you're gonna love it it's already cut out for you it's done all you have to do is go in for those little fatty pieces and remove the fat that's the only work you have to do like i said be friendly with your butcher it's not so much the flirting it's the respect but please don't show up like half done okay give him a show because even our ladies that work at the at the butchers they look at meat all day give them something shiny something like you know even if you just took a shower so these are so sweet they are so sweet so just look good when you head over to your butchers okay i'm going to continue to do that with the rest of our uh sultido and then we're going to do the same thing just rinse it but make sure that you're soaking it there for about 10 10 15 minutes should do the work and when you're lucky you get a piece just like this very few but take it take your wins friends my mom would have been like take that little piece out and you can use it or repurpose it to make furniture and i'm just kidding all right this looks pretty good my stomach is forever growing i always laugh at the people that think i don't eat throughout the day or when i'm recording you um that's not the case people that know me know that i stay hydrated and uh fed i thought she's gonna say fatty and also say yeah this is my section over here guys just in case you don't think that i'm doing anything let me see if i can get to focus that's not it yep this is stuff this is cloud's location that's that's me i'll get back to it you heard the boss after 15 minutes and you've cleaned the fat off of all your pancetta gonna strain no you're not going to keep your lemons for a while don't play friends those are going to go straight in the trash or your compost or whatever you do whatever you decide to do just you cannot no you can't anymore okay let them go say thank you next and that's how i keep fun i'm over here you know playing in the water that's how i keep it fun friends or at least my kind of fun i love the kitchen [Music] yep rinse rinse rinse and now we're going to just rinse our tendons sprinkle a little bit of salt you can do it with water too this is just quicker for me right when i get to the end because the tendon's always pretty clean for me when i purchase it it doesn't require a lot and no i'm not spreading bacterias in germ anywhere for those that get the heebie-jeebies look away this is how we do it i'm an indigenous woman and this is how i roll okay so much all right we're ready to start our pot of water is almost at a boil you want to add your beef beet you also want to add your tendon and friends i know this is the tedious steps to get to these parts and to get to the minuto but i'm gonna have you out of here in about four to four and a half hours okay so we're just gonna wait here until this comes to a complete boil and we're going to allow it to boil like fully for 10 minutes what is that it's because it's hot and sometimes i might drop i don't want to leave it here and it's just easier for me to until you're right above the heat okay [Laughter] steamy steamy okay after 10 minutes you're gonna see everything come up to a boil and all the impurities that you could possibly find and the ingredients that we've added are gonna float to the top and this is your time to skim if you can see it it's steamy in here now what am i scraping off anything that's stuck that i can't see that i want to get out do you need my help no there's a lot stuck on this side you probably want to grab a tortilla no not these i'm gross but not that gross i take that back if i was starving i'd do it i'm i'll eat food is food and i'm grateful now don't get me started on liver we haven't given that a try in recent years we don't want to talk about liver i love liver i know you do remember those that have not had menudo ever are more likely to eat it if it's nice and clean if there's nothing scarier than the pancetta the bowl is covering our view we can't really see i'm sorry those are not the views you guys want to see you want to keep it nice and clean look at that beautiful beautiful good to me after you've cleaned all the impurities and it has been boiling for a minimum of 10 minutes you're going to add your salt quesadilla [Music] add your garlic your onion and your bunch of green onions you can use anywhere from three to five to six and this is just purely for flavor just throw them in whole and this is our family secret to you you can use a stone river rock but for our family we tend to use the stone the volcanic rock from the molcajete it helps soften up all of your proteins in your broth and it also retains the heat and it just keeps it burning like hot fire and hot lava so we're going to add it in here where can you get one of these your mulcajete cloud a lincoln in the description area for our amazon storefront and the one that i've been using is pretty large so that's the one for the surpass and i like it to go all the way to the bottom but if you have a clean river rock same thing friends that's like super indigenous girl i'm not even embarrassed [Laughter] we're gonna seal the deal and we're gonna continue to boil our menudo for two and a half hours i'll see you in two and a half hours friends we're gonna roast our chiles okay as soon as you start seeing that your chiles especially the wahio they get done faster you're gonna start taking them out and you're gonna put them in your pot of boiling water how do you know when they're done i'll show you in just a moment okay we're also going to roast our ancho cheetos and once these puff up you know that those are ready you have to remove the seeds before we put it into uh the pot of boiling water okay yep you'll notice that your wajio will get soft especially if they were nice and crispy and dry now if you have soft ones it's going to change you know the texture of them so once you see them turn in a little bit of a darker shade you're going to pick them up and you're going to put them in your pot of boiling i'm water with you we gotta go back though and i'm coming back just pick them up and drop them like they're hot okay hot now we're just waiting for our little ancho chilis to puff up our ancho chilies don't want to show off today so they're pretty much soft enough for us to cut them open and take out whatever seeds are in there and prop them into that pot of boiling water it's probably because of the trunk that it's attached to it you're really you're still at it with that it's in all its natural state i love it ready to follow you and your trees okay let's go over your collection of spoons here yes i love spoons as much as i love pillows and cutting boards and pans and for those of you that are buying your bags of chiles and you know that they're moist they're nice and soft make sure you keep them out over your counter and if you have a safe place outside that the animals aren't going to come and get excited with some mexican food you can keep them out and let the sun dry them out for a few hours by the end of the day they're going to be dry enough and then just place them into a bag just somewhere that's you know breathable and just keep them nice and dry that prevents you from getting any molding inside because when they're fresh those are the best but you do want them nice and dry okay okay and that's mostly for the wakiyo chile and if you're experiencing any kind of bitterness in your food should we taste the chili before or just assume that it's not bitter um i think you can taste the chile right where the stem and the vine is that's gonna help you out a lot but honestly my problem with the bitter chilis are usually the california dried chilies and your favorite brand so far currently worldwide would be el wapo because it's the one that you all have access to and that's the one that i've been using just so that we're all cooking and using the same product but my favorite chili would probably be in mexico okay we're gonna continue to boil these chilis for about eight minutes just until they're nice and soft and then we're gonna blend them with a little bit of our menudo broth okay i already added about three cups of the menudo broth that we're going to be blending our chili with some chilis [Laughter] and now we're just going to blend until it's nice and smooth here you hear ye yes friends thank you for the tip my scraper finally came in and you asked me is the vitamix worth it i'm going to show you in just a moment if it's worth it you're going to know what i'm talking about if you've made chile and you've had to strain it before and you've had to struggle you're going to see what's up in just a moment after two and a half hours you're going to start getting excited you're going to be like oh yeah it's almost ready no friends your thea your mom your ancestors were right this does take time so two and a half hours is not enough to soften up your tendon and it's definitely not enough for you to enjoy that hoof you can still get excited guys but you're not ready keep going we got to keep going now we're going to add our chile your favorite part no this is the one i love chile but i don't love straightening this is usually my job but i'm holding the cameras when we were growing up we had the cheetahs that were super cascarudos that have the thick peel oh no more that's why you guys see our enchilada method our mexican food method is going with the chili powder oh that chili is so beautiful it is great my friends from sonora look away look away this is not for you it's not for you and sonora it's for our other friends just just kidding guys we know you love this red uh it's okay you guys know it's all fun and games and that's where we leave it okay nothing extra no but seriously our favorite manila is a white one the white one is my favorite this is although i love chile it's i'm not gonna like say no it's food i'm gonna get out of like my mom beyonce crazy you guys really want to see the whole thing of me pressing this chile that's therapeutic okay and the reason i'm straining the menudo is because the menudo if i were to serve menudo with any of this chile cascada or the peel my mom would not eat it guys and she's not going to eat it anyway but this is going to get stuck in people's teeth in your throat it just doesn't make it what do you mean i'm gonna give her some of the caldito i don't think she's gonna want that why because i made it no because it's not white [Laughter] she wants that white she does love my cooking okay here we go you see all that gasket well i thought i thought the vitamix was gonna show up a little bit stronger right now i thought i was gonna be like look guys there's only about three things in here no that's a good flex it's nice it strains a lot smoother but if you were to put this into your menudo like you can't tell like when i do it then she does it just disappears in there it doesn't really get stuck in your teeth like you say but in your fancy teeth it does [Laughter] my gummy teeth hey i'm gummy too not you're really not i am and i don't mind it oh i don't care either but i think it's funny how these memes go wrong about women with gummy teeth yep i'm one of them guys thank you thank you i'm a nice gummy lady hello and i'm still loved what's up you woke up spicy today no like it if you want your manila to be the best you have to be at the best mood it's like three liches girl mm-hmm okay now we're set that's my signal to skedaddle friends it's going to be up to you what blender you want to use but you guys want to know if it's worth it i personally think it's worth it i thought it was going to be a lot less but you still have it we're back for more behind the scenes type looks i can't leave that chile behind i have to use all of it friends it's going to be up to you i'm going to shake it up and then i'm going to restrain this sounds good run it through the strainer and get all the chile all of it friends we need all that flavor all right now time to add the pancetta that's the stomach and now your stomach going off real funny okay go ahead and pour it in and we're going to continue to cook our menudo for another hour and a half that's how long it's going to take for our pancita our beef stomach to get soft and for our beef bones to continue to cook and get soft like we like them along with our tendon for those of you that chose to go with the tendon this is what we have going on right now but it's not ready after you add your chile and mix it around nicely you're gonna add your bay leaves and now it's time to continue and let's seal it again i'll see you guys in an hour and a half so after about four and a half hours total you're gonna notice that your tendon is nice and soft nice and soft fall apart that's exactly how you want it and our menudo is nice and soft and ready to serve now for all of our friends that love the hominy this is the part where we're going to add our harmony okay everybody else that loves just these pieces you can serve it just like this that's a lot of harmony yes i have how many lovers in my house it's gonna fill your tummy it's gonna make you feel nice and happy and if you're using the canned hominy you're gonna continue to boil your menudo for another 20 to 30 minutes until your kernels are nice and soft and while our kernels are becoming nice and soft i'm going to show you guys how to make the delicious manola bread bolio with butter yeah friends you're going to need some bolillo or delete bread and if you don't have access to this kind of bread use a hoagie roll just something um uh what is it the keiser rolls use any kind of use any kind of rolled bread some something delicious that's gonna make you happy okay and all we're gonna do is we're gonna slice them down the middle i do have a recipe on the channel which is my bootleg version of bolio but i've updated that recipe along with a few of my other recipes all you're going to do is slice it down the middle and be careful with your hands friends especially when you're slicing bread i think some of us get too confident and by some of us i mean me i was going to say follow my eyes but you're using a knife so don't follow them you can use butter or margarine our family i make this version and i don't use margarine nobody's going to eat it except me except cloud i'll eat it too but the kids they like it grandma's style so we try to keep that traditional for them hey man when you're working on a budget sometimes all you can afford is your margarine well i had to explain uh margarine to my to my nephew recently and he was like oh okay i get it i'm like yeah when that's all you can get that's all you get and look at me i can get it and i love margarine i don't know what to say i like it you want to use a light hand you don't want to put too much of your butter or margarine it has to be light on the top okay because if you're going to be adding too much butter you're going to make this steam your your buns and you don't want to steam your buns you want them nice and crispy stop laughing cloud what i love real butter she was giggling who else got a giggle throw your hands up in the air in the comments if you got a giggle out of that one oh i thought you said me i was like how am i gonna hold this camera it's getting complicated for me you see i have that butter and you just scrape it through the top i see despacito just just like do it just like so don't do what don't make it look beautiful oh i can just eat this like that who else can do that oh that's a trap guys don't do it you put butter on just sandwich bread by itself cold those that have done it we're on the same team and we are so naughty for doing that and we can only do that twice a year for the holidays we do that half a year for the holidays just like around christmas time for breakfast i have a cherry cordial with my coffee oh only that time out of the year okay friends i'm going to continue with the rest of the breads that i have to prepare and i already have our um i have our little skillet over there warming up are you at a loss for words i am because i can smell your bread girl it smells like a bakery yummy what are you doing like i said don't do this often but right now cement the whole is just a craving oh my goodness i gotta get more hurry up i don't know this leo's kind of big it's not going to work out gotta do it right now in order to get a nice flat delicious olio for your menudo you want to apply a little bit of pressure so i'm gonna place something heavy on top of here what do you guys think i'm gonna use oh me a cast iron that's right okay i'll place it there about a minute while i toast and then i'm gonna switch it over here so that we can apply pressure on this side bring it over and lay it flat about another minute or so okay and then when you see them nice and toasty you want to flip them over and all you got to do is flip them over on that other side to toast for like a minute and a half but when you see them this toasty you're good now you guys ready for a taste we're ready wait girl we forgot one thing in our posole what let me show you last but not least you're going to add your pasote or your oja santa at this moment okay and that's just gonna give it a subtle subtle difference of flavor it's not a deal breaker but if you have access to it definitely use it you're only gonna let it steep in here no more than three minutes so after three minutes take it out and then begin serving okay i'm digging in oh that this was going to be your plate look at it's just falling off the bone that's why i don't want to move it that much okay it fell right off you guys are going to have to dig in or chop it up into pieces on how you like it stewie stew let me get some tendon in here you see what i just scored you did oh my goodness it's just perfect and that's how you know your patita is great because it just falls apart i'm going to add a little bit more tendon in here now for those of you that love the tendon you're gonna have to put it on your chopping block and slice it up however you like look at that nice and soft let me set this one to the side i'm gonna for those of you that love oregano as much as i do go ahead and sprinkle some on the top do you like yours with oregano i love it i said amiko okay because i kind of think great i'm okay with that masculine nikon nicole bonita some onions cilantro if you like lime go ahead and squeeze a little bit of lime and for those of you that like spicy you can add some chili peanuts that's if you chose not to go with spicy peppers in your manure i know how some of you get los angeles that's awesome who's ready to say yeah me okay and get some of that panzita because you know how i am granny those for you guys don't look away let me let all these other deliciousness soak in there say ah ah as always views club and the combinations in here are amazing whether you have it with just tripe on its own you can pull this dish off and as far as the the beef like honeycomb guys don't overthink it you're overthinking it
