here's a better way to get a thick dark crust on a t-bone steak using the gas grill without charring it start by rubbing the steaks on all sides with salt then let them sit at room temperature for one hour in this time the salt will draw out some of the steaks moisture then the meat will reabsorb the salted juices bringing seasoning to the fixed steaks interior Pat the steaks dry with paper towels and sprinkle each one with pepper on all sides then turn all of your grill burners to high and heat with the lid down until very hot about 15 minutes scrape the great clean with a grill brush leaving the primary burner on high in this case the front one turn the other burners to low then place the steaks over the primary burner with the Tenderloin facing the cooler side of the grill cover and cook the steaks for 6 minutes without touching them until a dark brown crust forms then flip the steaks still keeping the tenderloin towards the cooler side grill the steaks for another 6 minutes then transfer them to the cooler side of the grill with the bone side facing the hotter side this position allows the meat next to the bone to finish cooking and prevents the narrow end of the steaks from drying out cover the grill and cook the steaks until an instant-read thermometer inserted into the center of the state registers 125 degrees for medium-rare about 2 minutes then transfer the steaks to a cutting board and let them rest for 10 minutes to carve the steaks use the tip of your knife and follow along the edge of the bone to remove the strip and tenderloin pieces cut each piece crosswise into quarter-inch slices and serve
