I worked as a baker for a while and baguettes are SO HARD to make well; this is ridiculously impressive.
It took me months before I could do it consistently. You can barely even pick up the dough without totally ruining the shape and the bubbles (and therefore the crumb). And every time I mention that, someone chimes in that they like to bake at home and can make baguettes as good as Panera's. Yes, I could do that too, on day 1. Then after hundreds of times and thousands of baguettes doing it right I could actually make *good* baguettes. The fact that it seems so effortless in this video just makes it that much more impressive.
fun fact. French word for 'wand' is 'baguette'. The French Harry Potter has him waving his baguette around.
