welcome back to sns grills i'm russ jones with the youtube channel smokey ribs barbecue and we got smoke in the air i've got some charcoal over here heating up getting ready to do some bone in skin on chicken thighs gonna show you how to do some extremely juicy extremely crispy chicken thighs we're going to be doing it on the s s kettle the slow and sear kettle gonna get started right after this so the first thing to get started with this we got to have charcoal right i've got i start off with a full chimney load of charcoal by time it gets stuff heating up and settling in it's somewhere around three quarters to almost full somewhere in there but what we're looking for is three quarters full of a basket here on the slow and sear so let's put this in and i didn't let it come completely you know up the temp it's not completely ready i did that purposely to give it time to kind of get going while we prep this chicken now i've got just a few chunks of pecan wood you don't want to add too much chicken absorb smoke very easily we're going to close this now if you look at my setup right here i've got the slow and sear basket i removed the slow and sear reservoir because water is not needed in this we're trying to keep high temps not low temps for like a low and slow i've also got my my dripping griddle in place and the dripping griddle really serves two functions not only is it going to make for easier cleanup as the chicken grease and everything drips down but it also helps direct air through the charcoal and it keeps and maintains a hot fire i want to adjust this vent away from the fire we want this fully open and we want this bottom vent fully open i'm bringing the temperature up in this kettle got the lid on it and we're shooting for somewhere between 375 no more than four or 425 i would rather hang around that 375 and i'm pretty sure we can dial that in with this slow and sear it really reacts well to the vent adjustments and once we get close to that 375 i will be adjusting the lower vent in the upper vent to maintain what i'm looking for here so right now follow me over here to my table i'm going to show you how to prep these chicken pieces here the thighs very easy very simple let's do it so i've got eight thighs i'm just going to show you one i'll be doing all these identical and basically what i do is get rid of any loose flaps little hanging meat like this we do want a crispy skin but a lot of this is really not necessary that's actually looking pretty good just tuck it in like that so i'm just going to take a little olive oil this is a really good olive oil and all this is for basically is just for the seasonings to adhere to now i have found in my experience that the best chicken seasoning to use is the one you like best and that's exactly what i'm doing i'm going to apply that on this side apply it on this side flip it over i'm going to go ahead and get the rest of these done i'll meet you back at the grill here momentarily all right i'm at 400 degrees over shot my target just a little bit but 400 is acceptable so i've adjusted this top dent as you can see a little over halfway got the bottom vent probably about one quarter of the way open and uh i'll adjust it from there once the chicken gets on the chicken is actually going to lower the temperature now i'll dial in the temps use an upper and lower vents so let's open the lid and what you want to do is simply place these on indirect heat going to go skin side up and the reason for that being if you go skin side down in the indirect mode as we are out here then you're going to be rendering fat onto the skin and our whole point here is to draw out the skin to where we can get a crispy skin so you don't want to go skin side down not yet so as you can see here i have a great thermometer measuring the great temperature here and i also have my of course reliable s s analog thermometer on the lid but i thought i would do both in this case and also i have a meat probe i'm just going in with one chicken thigh about dead center just to monitor that we're shooting for around 175 degrees chicken thighs are very forgiving now it's true that chicken is actually done at 165 but it's been my experience if you bring chicken thighs up to 185 they are not only juicy tender they're just they're so much better than just barely hitting that that safe target you know that's been my experience with it so at 175 and these will get more or less a reverse sear towards the end which is probably going to finish them off around 180 185 so let's put the lid on and so you know the thermometer i'm using is the new sns 500 wilder thermometer it's four probe and that's what i'm using to monitor the great temp and the chicken temp all right i have reached 177 degrees and what we're going to do is turn these chicken pieces skin side down now i'm going to take i want to spin this grate right over the charcoal we're going to go roughly whatever it takes maybe 30 seconds i'm going to be looking at them when i get the color i'm looking for get that crispy skin then we'll rotate it and uh do these right here so now i'm flipping these on the meat side let those sear just a minute there [Music] [Music] [Music] [Music] so this is gonna be a hot bite y'all here we go oh that's got a nice crisp to it if you want crispy chicken then do this i promise you that's almost like fried chicken without the batter that's really good look at this skin they don't get no crispier than that well fried chicken maybe a bit on a grill come on here we go this is a great method for doing chicken just indirect heat more of a reverse sear sit right there at the end to get a little color on your skin crisp it up and it worked out fantastic i hope you all enjoyed
