today's episode who are making a garlic bread grilled steak sandwich oh boy hello there and yes I still have this actually it was a splint the last time you saw it and now it's an actual cast that I'll have for a few weeks and then I'll get a walking boot and I think I'll be happy about that I'm not sure but it doesn't really matter that it has nothing to do today today is about this this a big-ass steak that we're gonna cook perfectly perfectly and then turn it into an amazing steak sandwich the bread component will be garlic bread there will be onions of the arugula so damn good let's go okay so this is a is it big you can see there's a big thick New York so a little bit of oil and I'm using avocado oil I don't need flavor I just want the moisture of it we're gonna season well and it might look like a lot of salt but look how thick this guy is right think about it when you cut it your own cutting it little pieces like this so the salty parts just gonna be a little bit of the outside so season a big steak really liberal and al pepper flip and repeat oil salt pepper and then don't forget these edges and just use what you've got on the paper your cutting board your counter for that here we go and on we go so look here's what I'm gonna do I've got my grill set up for two zone cooking this is the hot side and this is the not so hot side it's still on but it's not so hot that I can't hold my hand there for a couple seconds we're gonna give this about a minute and a half or so on each side and then we'll move it over here and we're gonna treat it gently but we're gonna turn it a lot because when it sits on top of the heat for a long period of time it cooks the cooks that cooked that's what that gray comes from we don't want that we want the beautiful red all the way so we're gonna try and get that by moving it around a lot and then we'll use a good instant-read thermometer to tell us if we're there okay so it's been 30 seconds or so we've got that no we'll give it that and then the other side okay so we got beautifully marked on either side right we move it over here where it's less hot now I need to attend to it every minute minute and a half or so to turn it so it doesn't go gray I don't want gray let's make some sauce and some onions and come on all right first things first we're making some caramelized onions to go in this sandwich because what steak asks for our beautifully caramelized onions so so here's what we're gonna do we're gonna put them on the flattop of course you could use a pan if you don't have one of these season them in just a tiny bit with salt and pepper and let them do their thing so first we're making a sauce that will go on this sandwich and it will be comprised of mayonnaise a little sriracha but look just a little and then you could use either Wurster Shire or I'm using Maji which is just a really delicious little Wurster Shire but more flavour like good for all kinds of things especially this okay now we make the garlic butter and the garlic butter looks like this as garlic butters name would imply we start with butter and then some garlic what a concept it gets a little salt always tiny bit of pepper I like to give it a little shot of oil it's always a favorite thing for me to do and a little chopped parsley mix and then we smell to make sure it's garlicky enough you're really gonna like this last thing is but some arugula in a bowl and yes it could go on plane but why would you do that so we add a little bit of oil a little salt and a little pepper then we mix and this just sits off to the side now until we're ready and we're getting closer all right let's get our bread ready for the grill we'll cut two nice pieces and of course the garlic butter and these are ready for the grill when the steak comes off the steak is off rest for 10 minutes then the bread goes on beautifully browned on both sides then we build bread goes on oh look what it's doing it's bubbling it's working its magic and here we go see look it's beautiful it's juicy it's gorgeous that comes from just moving it around a lot but now I want thin slices like this okay I decide to put a little extra garlic butter on the second side look how pretty those are and now we bill start with the garlic bread we add the Mayo sriracha Maggi sauce and like a nice amount too now we add the lightly dressed arugula now we add the steak and look at the steak good lord is this gonna be tremendous or what I'm loving myself right now I mean I'm loving this right now onions a little bit crispy and then the final bread that that is a garlic bread steak sandwich you can be proud of all right here we go and Wow look at this what have we done garlic bread caramelized onions beautifully cooked New York arugula underneath and then this this sauce that you see right here and this bite right here it's ridiculous mmm everything and the garlic bread on the outside by the way this was inspired by my youngest son Zaki he actually asked for a garlic bread grilled cheese and I decided to do this with it sake you're gonna be very happy all right tell me you're gonna make this tell me you're gonna make this tell your friends about
