hey guys today we're going to make rotisserie chicken on the Komodo Joe and I'm gonna show you five ways to use it let's go so right sensory chickens a bit of a staple in our house either cooked on the Komodo Joe or bought from the supermarket like many of us I guess but sometimes you can get stuck on how you're going to use the leftovers or even how you're going to use it in the main meal so today I thought I'd give you some ideas on how I use it at home I'm known as the bit of a leftover king at home I absolutely hate waste and I use it on absolutely anything I mean really anything's breakfast with a fried egg on top right so I'll call it I'll throw some ideas that you show you a few ways that I use it show you how to use the rotisserie touch run on the Camaro Joe and what that's all about and how to stack the coals and all that stuff so to start off with we need to fire up the kimono Joe and set up the Joe to Suri let's head outside and show us done [Music] [Music] so as you can see I've got a decent amount of coal left over from my law school come on out a couple of lumps in but I think that's pretty much gonna be okay as you can see I've kind of stuck the coal to the back is as the chicken rotates it's going to drip a lot of fat onto the hot coals and if you don't stick it to the back you get a lot of flare-up a lot of smoke and it goes just crazy out of control so putting it towards the back is definitely the way to go here [Music] I like to start the chicken cook low and slow at about 125 degrees Celsius as we get closer to that you can being cooked through I increase the temperature at about 250 degrees to crisp up the skin and give us a nice golden brown finish all right we're ready to close this down now so just close the lid like that I'll leave the top vent fully open like that until we get closer to temperature and with the bottom like that as you can hear the workman in the background will leave the bottom bed fully opening like that and where as we get closer to temp I'll close it down to keep it the temperature lower at around about 125 degrees sources for the first part of the cooker all right next job let's prep the chicken okay so the first thing we need to do is just trust it I'm no knots me I'll give you the tip so don't hate on me for shitty not so one thing I do know is if you tuck this under like this a couple of times and not holds a little bit up so just why they've got like that and that way it doesn't flop around all over the place when we put it on the rotisserie because it's the last night Chuck you are very meaty go and play with your toys alright so the last part we need to do is just tie these legs up so they don't flop around everywhere as well again I'm no knots Minh don't hate on me the next thing you want to do is just draw this guy off all over make sure the skins and ice and dry right next a bit of olive oil for blind Oh get that rubbed Unilever so I've made up my own seasoning blend here I'll put the recipe on the screen and into the description using an old our butts of smoking container I used to buy this stuff's pretty good to be honest I used to buy these things and I just prefer to make my own these days to be honest so some what we're going to do is be pretty liberal and we get this as good as we can now and then when we get it rotating on the Jo will sprinkle a bit more on for any gaps that we've missed so threading this guy on is pretty easy I've already kind of have this measured out to be in the center already so basically what we do just that's better I don't do them up too tight just in case I need to adjust it a little bit but that's that's basically it one rotisserie chicken ready to go okay so we're just about at a hundred degrees close this and then as we said before just close that down to about there all right so we're up to beautiful and that's all she wrote we'll check back in about 20 minutes so we'll check this every 20 minutes or so how but until then there's really only one thing left to do right [Music] [Music] so it's pretty much anyone who knows me will tell you this is one of my favorite wines this is Fox Creek from McLaren Vale in South Australia this one's a 2001 this is their flagship reserve Shiraz absolutely beautiful wine I've been drinking this for way too long and drunk hundreds of them these are magnificent wines definitely recommend you checking out [Music] [Music] so I'm just gonna open it up a little bit and start to increase this temperature yeah we'll get it up started getting it up towards two hundred two hundred fifty degrees Celsius as you can see at the moment we're about a hundred and fifty it's crept up a little bit but now we want to start increasing it a bit more all right so this guy's probe does ready I'm just gonna roll it open for a little bit crispy skin a bit more and we'll take it off all right so we're done here I'm gonna get this guy off and we'll get him inside [Music] [Applause] [Music]
