i love having really fresh bread at dinner time for my family but the days get so busy that i never had time to do it and it just never really happened until i found this method and now i can have dinner with fresh bread every week night even when it's busy let me show you how to do it all right in this method of bread baking we're going to make a big batch of no knead bread that you can pull off of throughout the whole week you're going to pull off one loaf's worth and let it rise and cook it up and it's going to take very little work time but your first day where you're mixing up your bread is going to take a few minutes it's actually pretty surprisingly easy what you're going to want is something that can hold uh four pounds of bread dough which means it needs to hold about two gallons worth of liquid in order for it to be able to hold that much and it needs to be able to be covered and go in your refrigerator and stay there for an extended amount of time so a food grade container like this is a great thing to use when you're working with a project like this the square sides mean it fits into the refrigerator in a pretty space-saving way okay so we're going to start with three cups of warm water and by warm water i mean lukewarm like bath water temperature and you are going to put that right into your food safe container then you're going to add in two tablespoons of active dry yeast make sure you mix it until it's well combined don't use instant yeast for this make sure that you're using the active dry yeast once that's well combined then you're going to add six and a half cups of flour all purpose white flour is great but you can also use a mixture of all purpose white and whole wheat flour and one and a half tablespoons of a good quality salt you don't have to mix all the way until all the lumps are out but make sure it's well combined remember because this is a no-need bread you're going to be looking for a very damp to wet dough you may have to get your hands in the dough to mix it thoroughly but remember this is a no-need bread so all you're doing is mixing the flour with the liquid to make sure it's well mixed but you don't need to knead it once it's well mixed cover it with a piece of plastic wrap and top it with a towel and set it in a warm place for about two hours after the two hours is up it's ready to slide into the refrigerator now your dough is ready to sit in the refrigerator and wait for you to need it on a busy day on baked day about an hour and a half before you want to eat your bread go ahead and pull it out of the refrigerator and remove about a grapefruit size amount of dough from your big batch of dough cover up the remaining dough and put it back in the refrigerator for a different day you can bake this in either a bread pan or in a dutch oven today i'm going to be shaping it in a banaton basket and then baking it in the dutch oven as an artisanal style loaf if you're using a banaton basket make sure that you flour it very generously use rice flour if you have it on hand it'll work really well and then working with your grapefruit size lump of dough you're going to want to stretch all the sides so that it has a smooth outer skin and pinch them together on the bottom side they should go really quickly and make sure you add a little extra flour if you need to so it doesn't stick to your hands now place it nice side or top side down into your banaton basket this will have to rise for about 40 minutes about 20 minutes into the rise time you'll need to turn your oven to 425 degrees fahrenheit if you're using a dutch oven place it in the oven right now to preheat along with your oven now this part can be a little tricky place a piece of parchment paper over the top of your banaton basket and then flip your basket gently onto it releasing the bread dough hopefully nicely shaped now onto the parchment paper use the parchment paper to transfer your bread loaf into the dutch oven put the dutch oven lid on and slide it into the hot oven be careful the dutch oven is hot we're gonna let this cook for about 30 minutes and then we're going to remove the lid of the dutch oven and make sure that it's nice and golden brown if it's not golden brown yet slide it back into the oven for a few more minutes when the bread is done make sure you take it out of the dutch oven and slide it onto a cooling rack just for a few minutes until you're ready to slice it for dinner and there you have it fresh bread on the table in just a few minutes of work time and that's how i get bread on the table for fresh bread at dinner time if you want the written directions for this project along with the written recipe you can check out the link in the description or go to homesteadingfamily.com forward slash easy bread
