[Music] to start this off with one brown onion slice off the end opposite the root slice it in half through the root and remove the skin and if you've been keeping up with the videos you'll know that I'm going to say you can save this for a stock but then going to make thin slices stopping at the root slice it through the center stopping at the root again and finally dice make sure to trim any excess flesh from the route to avoid wastage we can then save the roots for a stock and set this aside with three cloves of garlic slice them in half lay them down flat and thinly slice and once sliced set them aside here is four grams of flat leaf parsley we're going to scrunch it into a tight ball give it a rough chop and set it aside then to finish the prep with three grams or four sprigs of time run your fingers down the stems to remove the leaves and we can save the stems for a stock give it a rough chop it doesn't have to be perfect cuz it's already quite small and set it aside place a large heavy-based skillet onto your stovetop over a high heat and allow it to get nice and hot once hot pour in one tablespoon of olive oil along with two tablespoons or 28 grams of clarified butter break up the butter and allow it to melt and the olive oil will prevent the butter from burning quickly as it has a high temperature smoking point once melted add in the diced onions we're then going to sweat these off which means cooking without color and to do this we're going to stir the onions frequently for three minutes or until they're very lightly golden and translucent after three minutes add in the sliced garlic mix it through and saute for forty-five seconds to release those flavors making sure that we stare frequently after 45 seconds pour in two tablespoons or 30 milliliters of white wine to deglaze the pan and be careful as it may flambe this can also be substituted for vegetable or chicken stock mix that all through and continue to saute for one minute to cook the alcohol out making sure to stir it frequently after one minute pour in 400 milliliters of heavy thickened cream the chopped parsley the chopped thyme one and a half teaspoons of sea salt flakes and 1 teaspoon of cracked black pepper equivalent to ten cracks on a pepper grinder and always remembered as seasonings to your taste you can always add but you can't take out mix all of that together and bring the sauce to a boil once at a boil reduce the heat to low and allowed a sauce to simmer for eight minutes making sure to stir it frequently during this time the source will really thicken up and it will allow all of the flavors to get to know each other and fully enhance then after eight minutes you can see that the sauce is really thickened up and it looks really really nice with some great color on to it but I'm going to test it for seasoning I'm personally going to add in another 1 teaspoon or 10 cracks of black pepper and half a teaspoon of sea salt flakes if he did season the sauce mix it through and simmer for a further two minutes after 10 minutes remove the sauce from the stovetop and this looks and smell so good now let's give this a try the flavor in this sauce is absolutely incredible its rich its creamy and smooth the garlic and onion create the most amazing flavors the wine adds sweetness and the herbs create a really fantastic background flavor this recipe serves for but can easily be doubled tripled and so on it can be kept in the fridge for up to three days and to reheat just place it into a pot or a pan over a low heat and stir it until it's nice and hot I wouldn't recommend reheating it in a microwave as the inconsistent heat could possibly colonel it I really hope you enjoyed this video and I was able to teach you something if you did enjoy this video be sure to smash that like button and consider subscribing to stay up to date with more fantastic recipes thanks for watching stay safe and enjoy [Music]
