hi guys and welcome back to my channel and this week we are doing something pretty special with the fact that 4th of July is coming up I am with the sorted food guide and we are going to be making some chicken-fried steak and I know that sounds really weird but Lance makes this kind of food all the time because he grew up in Texas and when you hear chicken-fried steak there's no chicken involved okay now look at your beef steak look at that don't think apparently it's the Sun thing I mean that looks appetizing just flip and we're gonna come up with a recipe that hopefully will challenge I'm not going to make it that's all I'm not going to say it's better than a delay but we're going to give it a good try you won't you won't tell me the recipe because he says he just adds a bit here a bit there and he doesn't actually know the recipe other than to taste so I have to make something to rival that really what are we gonna give you the recipe yes I came with you and get it go I do all we need to do is basically coat our stakes of this is like stewing steak in frying steak it's a fairly thin what would you later especially our even thinner but we want to do first it made us clothing for our steak you want one fall just corn flour that will stick to the state and will enable us to stick wet stuff once with the wet stuff is buttermilk Oh two eggs whisked interest so grab that bowl as it is and crack two eggs into it right who takes control in the kitchen me most of the time it's to do with barbecuing Lance's always on the grill because he's text them and he can't have anyone else be on the grill you know this guy okay so yeah I think these part textures and yeah not Texan I wanted to be quick yeah exactly but in terms of everything else I like to cook we've got some pretty set prices here we think we'll play up for the Southern Fried mix excellent about you can mix and match at home so plain flour this as we start the call brown and that will enable our wet stuff to sit to the steak and the wet stuff for enable our flavored flour just this so plain flour in here and then all of these spices in roughly these ratios so two teaspoons for dried oregano and two teaspoons of paprika 1 teaspoon of garlic powder and 1 onion powder and then as much k in as we dare we don't wanna make a super spicy but it's nice to have a bit of a heat serve a kick right nope so they're all going in here so that we can get it coated right yeah we mix it into the flour and then that flour becomes it's called chicken-fried steak and I think that's because it resembles fried chicken yeah however obviously we're using beef steak we're going to make the same sort of crumb that looks like fried chicken YUM I'm actually pretty judgmental if I'm fried chicken bowl I'm very happy to this baking book I thought that tomb would be put together in it and they'll be like chicken and steak yeah you can make your contribute steak sandwiches if you had chicken on the outside bake in the middle that's what I thought this is I thought but I do chicken fried bacon in Texas as well they do everything fried in America everything everything is fine we we are these guys alone they turn everything fried and make sure we serve the gods potato yeah and gravy so how does this fit in with your regime in terms of hips diet it doesn't does it but I think the only thing stopping us to from being an intern at least is the diet not the ability you know not the difficulty they get I thought okay we just won't be able to do what you do with you know with the diet yes as literally as the only reason all it is and I mean I showed with a dialog that juice from Earth seriously right time to be so we're gonna do is going to season the safe but first off you want to bash it out because it's quite a tough cut of beef and it's actually kind of a cut we used leftovers it's a cheaper cut however it's great if you tenderize it so just between two sheets of cling film you're basically going to hit the handout it this is going to be fun stress management clear country fried steak so a couple of options some people says you can kind of walk it you've actually actually stabbed me with a fork otherwise put the cling film over the top and then dip it with the rolling pin rather I want to get it super thin and I tenderize it so that it's not only cooks quicker it doesn't overcook pretty much or no I've topped a bit well and everyone knows all the flavors on the big craft coke thing so the medium or taking like rock ideal and then fill it back and at this point we can seize an hour at stake with a pinch of salt and pepper and then it couldn't be easier you're going to pass stake through flour our buttermilk egg and then into our flavorful flour coating so it's dusting for that and that will enable those little just it take corn flour on dip in that or superior and at home you can mix and match the spices do it however you want but with the combination for over the onion the garlic and the paprika and a little bit of cayenne all good coaching young and different to bread crumbs this is what's going to give you that almost southern fried chicken pre oh yeah do the same yo on I do these so easy they bashed out and then basically dusted what we've got means a fry knows lots of conversation about whether you cook this in a skillet in America we call it frying pan we accept the fact yeah or when you deep fryer and then from what we're being told online a difference between chicken-fried steak and country for I stayed cool so chicken-fried steak we're going to deep fry like chicken so whatever I comes up to temperature we need to do this thing we're going to serve with it which is our sauce or gravy white lady white crazy not the stuff we have in the UK yeah very different about because when Lance first came over and I said how we got joints and gravy for the road inner one he was surprised that we ate what he called Thanksgiving or Christmas dinner every Sunday and the fact that the gravy was brown he was baffled so white gravy then white gravy which is basically a fish meal within a flavour so what is and he were basically and flour in the pan until it cooks out and we slowly add in the milk a little bit of time until it's thickened into a lovely white gravy and we're going to flavor ours with smoked paprika not just give it you're making Kings but obviously an incredible smokiness flavor that kind of emulates the Texan food and the Southern Fried flavors why I really like is that Rachel's filming this is from the north and the fact that you're calling this craving is making her grimace it is it is only used to putting gravy on she's actually bleeding from you know in a pan you've gotta grab the butter butter and tablespoon of butter about the same of flour and as soon as that butters melted you can go in with the flour and then mix it up if you agree little spoon he's only got they were happy can't say I've ever made white gravy because Lance makes the white gravy and I've never something I learnt to cook so I was only introduced to it when I went to Texas for the first time and I was like but when they have biscuits and gravy for breakfast Thank You doc yeah it's a savory scone it's a savory to going and although every American that's watching now it's probably going to freak out am I on in a little bit for this yeah a little bit of time and first of all it will thicken up okay means it we're done in liquids but then basically keep adding a little bit of time keep stirring and don't add more until the last knocking completely absorbed it's nice this movie and that's pretty much your source so it thickens up the kind of us bean custard consistency and you want to let it bubble now for a minute or two to cook any raw flour but we're not going to leave it there we're going to add some flavor smoked paprika now half of teaspoon I reckon yeah and some chili flakes if you like it will you know you enjoy about yeah I do like a bit something up well mines in the gutter I say over me to don't let me get away with anything they quick everywhere they say oh I do as much chili if you dare and quite a lot you can put a pinch or half of that or all the baby like kick half of that go on top oh no leis let's pick God just slings and it just all right a little pinch of salt and pepper and again it's all in if this blows our socks off what you can see now it gives it a wonderful color and tinge yeah in other films Tom Ben once asked me if if I'd like him to walk me up like oh my oh yeah we miss it's a context I wouldn't Harvey a glazed ham and you had an empty plate yeah he did say we could force a peg to see to deter so I think about being in the kitchen there to cook medium medium rare all the way through but three minutes should do it so if you want to just lay it into our and Laurel excited anything I've ever used a deep fat fryer before so you can do in a pan and but you'll need enough oil sort cover at least half of it actually will do to stuff without moving the fryer and then just the black button look we just lower God what is it a minor cut in there oh you pull the handle down - doctors very clear and project I was trying to pull it old about to break the handle off anyway so shall I shut the lid and only stays open okay mentally seem out but it will go nice and really ideal now that sauce is done but you mentioned earlier that lawns like to stuff butter he put online joking when he made his thing is like three sticks of butter and a stick is a foul with the gun in it yeah well half I don't know it's a funny American measure but it's a lot three six is a lot it's in America it's been fixing cut we're on the British side but we're cooking for an American yeah six and cups is usually the first impressions but are we going in with the extra buffer then yeah so you reckon a large knob and then perfect example where did it go - I'm reloading we have to solve it everyday so you got C large knobs in there the last excellent this is oh dear okay Tom this is what we're looking for yeah so I will be golden crispy on the outside the state cook through how the tip from you guys at home just leave it resting on a grill pan on a grill tray we just get rid of excess three hot Wednesday they can win it they are very hard every time it puts fun in puffle that was that I get cooking and now we can plate up gonna put a dollop of your mash on there yeah I will dollop flash get one of those credible steaks like that and then if you want to fill that with our gravy yes I do or cousin valid good here we go fresh parsley little pinch of sea salt just finish in fact right there hopefully is something Ballack so enjoy it good I'm not going to say many for him anyway so enjoy yes let's show so that's the finished chicken-fried steak and I actually sent along the picture of it and I'll read you what he actually said he said YUM OMG YUM but the sauce has to be white angry face emoji WTF I told him we put paprika it only said we will have to chat about that so I'm going to really should taste it and actually so I could actually give him a verdicts right you think right everyone dig in you did you get better neighbors mash a lot of the I'm going to put a big bite I'm not going to apologize about that we're going to mash their sauce oh my god up a day's bike oh my gosh more red red right here we go right right for me last night one of the most delicious things other pieces that is so good I think Lance is right though it needs the buffer yeah the battle makes me right the buffer makes it and I'm going to carry on going because why not what if you happen to okay don't worry about that I'm good it deliciously doing it why have we never done this before I'm not sure you can call that gravy so that's also fantastic clearly Americans out there let us know what you think is that that's you know chicken-fried steaks at
