Holy Week is fast approaching and I'm
sure that many of you will request that: "Chef, let's also have
fish and seafood recipes." So today, let's prepare
another classic. I usually prepared or cooked
this when it's Christmas Eve. This is the Cheesy Garlic Baked Seafood. It can be milk fish,
it can be salmon, it can be lobster or any seafood or
fish that would make yourself happy. This is very nice because
this is a restaurant style. So they will love you more and your loved ones will be
more amazed with you when you prepare this for them. So let's start first with the topping. First, you will be needing 1 cup of
cream cheese at room temperature. So make sure that your cream
cheese is at room temperature so you won't need to use
mixer or food processor on it. So 1 pack is 1 cup. So you see, it needs
to be smooth like this. Okay. So you can easily mix it. And then you need mayonnaise. This is garlic. Minced garlic. Finely minced garlic. And this is all-purpose flour. So you just beat this together. You can also use a mixer or a food
processor when you are having a hard time but as long as it's room temperature,
you shouldn't have any problem. And you can season it
with salt and pepper. So salt, right? Pepper. "Where might he buy that one?" Actually, I just even use this now. This is a gift from Masflex so I'm sure
that they have it on their Lazada store. So salt and pepper, right? You just mix it like that. And then that's it. See. And I have here- This is ready. So for example that the party is just for tomorrow or you
will serve it during the weekends, on coming Holy week. You may prepare this already before a day or even
two days in advance and just keep it inside the fridge. Okay. Just like that. And then I have here my seafood. I'm going to show you the different options. Let's start first with the milk fish. Okay, so I have here a pan. The reason why it has a little dirt is because I
measure the milk fish a while ago if it fits and it fits. So you put some oil into your
pan and then you put your fish. Skin side down. The reason why you're putting oil is
for the fish not to stick with the pan but you can also use disposable aluminum pans especially
if you are to gift this to someone or you'll accept orders. Season your fish with salt and pepper. Okay. This is fresh milk fish that I
bought in the market a while ago. Just have it on butterfly cut and
let them debone it already. Okay. And it's as simple as this. You put your cheesy garlic toppings
because I have made one already a while ago. So there. And then you just spread
it out evenly and nicely. Okay. Not that too thick because the
one who will eat it might feel fed up. The advantage of putting this kind of topping
on to your seafoods especially for your fish is not only the flavor but also,
it acts as a protective layer so that your fish or whatever
you may cooking will stay moist. Okay. If you want it really restaurant style,
I have here Shiitake Mushrooms. Just put that together along with your
milk fish while roasting it in the oven. And a bit of corn,
so with roasted vegetables. But if you don't like putting it at the
same time then just put it later, okay? I will put it inside the oven. Okay. And then you can
also do it with salmon. So I will only use half of the salmon. You cut. Season it with salt and pepper. And then you put your
cheesy garlic topping. There it is, right? The reason why you're putting flour on to your
cheesy garlic topping is for it to become more stable. So it won't fade away. You may add a bit more. Then that's it! And if you want- This is my lobster, okay? With your lobster,
you can also use prawn. You just spread
it like this on top. And you just bake it. It's very easy to do, right? "Can we do it on chicken?"
Yes, it can really be. You can partner this on pasta or you
may just saute a bit vegetable on the side. Okay. So I'm going to keep on baking this,
it will take around 20 to 25 minutes or until the top is golden brown and
then I'm going to show that to you next. So for our Baked Fish to have a partner,
our Cheesy Garlic Baked Seafood. I'm doing here Buttered Spaghetti. It's very basic. So I have here Spaghetti cooked Al Dente
and then this is the pasta water. The water where you boil your pasta,
you set aside some of it. Just put some pasta water and then I'm just
going to toss it here with some good butter. Okay. Just as simple as that. Very straightforward. And then here, I would be
making buttered vegetables. So you just put some butter. If you don't like butter,
you can use olive oil. You don't need to season the
Spaghetti because when we boil it we really put a lot of salt when
boiling pasta so it would really be tasty. And the butter that
I'm using is also salted. Okay. So you just toss it like that and
then here, I have Shiitake Mushrooms. This one, I need to season
with some salt and pepper. Okay, you just saute it. You don't need to put garlic because your
baked seafood is already heavy with garlic. So you want their flavors to complement
each other rather than overpower, right? It really needs to complement,
not that it overpower. Right? There is harmony. You just saute it like that. And then I also put
the corn on the side. I know you will say: "Oh! He is using the canned one,
he is not using the fresh one." You can also use
fresh if you want. Okay. So this is my pasta, you put some
parsley and some black pepper. This one also. And some salt. That's it. I turn this off already. And of course, I can't wait to partner our cooked
noodles and vegetables with our baked seafood. Okay. So here it is. The reason why I'm sweating and you

the lobster was finished first. The milk fish,
