So to make our dining table special
and colorful this coming holiday season and for us to have a partner
with the foods we cooked, let's make a special but easy
Filipino Style Paella. You heard it right. It is pronounced as 'Paea', silent L. Right? It sounds so fancy, right? But it's very easy to make and the
ingredients are accessible, as usual. So first, you choose a pan- I'm using a non-stick pan. That is a bit big, this is
approximately about 12 inches. Can you pass on the ruler?
I think we have a ruler over that. It's about 12 inches long. So I am gonna ruler it because
I don't want to make a mistake. So it's diameter is 11 1/2, right? So it's a bit deep. Because this is a cook and serve, you're
also gonna serve it here using this pan and it should be covered and if it can't
be covered, you can use aluminum foil. You put a bit of olive
oil on to your pan. And you're going to saute your onions, I'm
using fine chopped red onions and bell pepper. Spanish called this as 'Sofrito'. Season it with salt generously
to bring out the flavor. Okay, this is your Sofrito. So you just saute it for a bit. I'm using this nice non-stick pan and thank
you so much Masflex for this very nice pan. Okay, and then
you put a bit of garlic. Minced garlic. This Paella- I pronounced it as Paella again. Pa-ea, right? This Paella, okay? Filipino style because we are using
ingredients that you can easily find. We are not using expensive
ingredients like saffron but if you want to put some,
then you have the freedom to put. So there. When your onions already became a bit
translucent and you can already smell your saute, you put your turmeric powder,
this is your tomato sauce. You put your tomato sauce. And I have 1 cup of rice here
and 1 cup of glutinous rice. You just saute it for a bit. Look at the nice color. After that, I have water here. This is 4 1/2 cups of water. You just pour
it over there. You mix it for a bit. And then you put 1 pc
of chicken broth cube. "Can I use the vegetable broth cube?" Yes, you can. "I have stock in my house, can I use
that one instead of putting broth cube?" Yes, you can. "Can I use chicken powder?" Yes, you can. You put what is available and
what would make you happy. So after this, you will
bring it into a boil, right? When it boiled already or even
smoked, you weaken the fire and you're gonna put your
rice and glutinous rice until it's consistency is almost cooked
before we put our toppings. So that would take approximately
around 7 to 10 minutes. What I will do is
I will weaken the fire. You just weaken it and
then you cover it. This one is nearly simmering,
it is already smoking. You cover it and you leave it
there until the rice is cooked or almost cooked before
you put your toppings. So it's been around 10 minutes and
we can already go back to our Paella. So I will show it to you, okay? Look. It's still wet and when you taste it,
the rice is almost cooked. It's still hard but
it's nearly cooked. You may put your sea food already
if you are gonna put sea foods. So I'm putting shrimps. This is just an easy version, the traditional
Spanish Paella is made differently. It's process is different. "Can we do that on
the rice cooker, chef?" It can also be, sure. It's a lot, right? It seems like I don't know anymore. That's just okay. So until now,
it's really full. It's like love that when it's really full,
you don't know where to put it anymore but at the end, it will
just go back on you. That's the nice part, right? And let's also put it sausage. Put some sausage. We are gonna cover it again. And I will also put that mushrooms
so that there is a vegetable. You put it on the cavities
so it would look more festive. And for added flavor, because
of course, mushroom is Umami. Can it be if there's no shrimps
so that it's more budget-friendly? Yes, it can really be. When there are no shrimps- Actually if there are shrimps since
it's just few, we just put about 1/4 kilo and for the mushrooms, you
can just put the small ones. To be honest, the budget of that is
just P400.00 to P500.00 with the shrimps. If there are no shrimps,
it's only P300.00 And look how a lot of people can
eat this because rice is just affordable. And green peas. And you can also put Pimientos. These are the recipes that- This is red Pimientos,
it's whole, I just cut it. These are the recipes that adds color, texture,
and of course, what makes our dining table festive but it's not that too expensive. Well except, if you
put a lot of sea foods But just like this one, we only
put on top but it's really special. For added color. And then I also have some boiled eggs,
I will just put the boiled eggs later. You cover it again for around 3 to 5 minutes
until your shrimps are totally cooked. So after 3 to 5 minutes of it
cooking it covered, this is it already. Now, I'm gonna put boiled eggs. Other chefs said that Paella
should not have boiled eggs but I am happy when
it has boiled eggs so we put what we makes
us happy on that, right? You put some boiled eggs. I still haven't turn the fire off. Actually, I will turn the flame higher
so that the excess liquid would get dry and for the crust to have
a bit of toasted effect. Okay. And then you season it a little bit of
salt so that the top would also be tasty. And then you put parsley. You look at it, it's so pretty, right? And you can hear
that it's sizzling, right? So when it already sizzle it
like that, right? It's already okay. You're gonna turn
the fire off already. Now, this is my problem
on this Paella. I felt bad damaging it, I want
to have it like this until dinner. So I will teach you a tip
if you want to do it. So here. You push the shrimp and
then you get a bit on this side for your tasting part then
you return it like this again. So there it is, right? It's not too obvious that
you get from that side. We would be tasting it,
look how nice the rice is. How nicely colored. On five minutes that the
topping is already here, right? That really makes the difference
because I can taste the shrimp. So the flavors really boiled down
up to the rice on the bottom and that's the nice
part on this recipe. And of course.. That's why I have a calculator here. Because I'm estimating how expensive What is it? Because the word
expensive is too subjective. On how expensive the recipe is,
not how loved I am. On how expensive
the recipe is, right? And you know, around P300.00 to P400.00
only with the shrimps and sausage already. If there's no shrimp or sausage, the cost
of our recipe is only P250.00 to P300.00. So what are you waiting for? Buy your ingredients already. The reason why I'm holding it
