Cheesy Enchiladas Stuffed with Sausage and Scrambled Eggs

you know cooking off that Chuck Wagon me and Shan have fed a lot of cowboys breakfast in some of the roughest country that I've ever been in but folks we wanted to fix them something hearty something that would last them all day long and what is that breakfast enchiladas good sausage meat seasoned with some poblanos and some chili seasoning topped with two kinds of cheese and then we're gonna crack eggs all over the top and let it bake just right Cowboys will ride back to camp for this they will [Music] well you know people be having enchiladas at noon and enchiladas at night so why not let's not leave breakfast out we need enchiladas anytime we can get them and when you can make a breakfast enchilada with ooh that good Rich Mexican flavor that comes out folks you could have this for brunch now I remember saying that one time on a ranch that was going to have brunch and there was an old cowboy that stood up here it's about 80 years old he said you know what French is Mr Rollins I said what is that he said people that's too lazy to get up for breakfast well got this cast iron heating over here on the Hasty bake we do and folks when we're talking about breakfast and breakfast enchiladas now breakfast on a ranch it might start at 2 45 when me and Shannon have to get up you know because somebody got to make coffee somebody got to make bread and somebody got to get some meat on the frying so let me get this one pound of Potter's packs to flavor sausage in here the night before put it in the fridge and bring it out let it set about 30 minutes before you had to put it in the oven preheat that oven to about 375 and you'd be good to go usually Cowboys start gathering around about four o'clock give them some cups of coffee warm up by old Bertha and uh see what was happening that day but never once did they ask you hey what are we having for breakfast because that's not Cowboy etiquette and y'all tell me what kind of sausage they'll really like to use because there's a feud going on at our house Shan she liked that Jimmy Dean now I like Jimmy Dean he was a great singer yes he was but when it comes to sausage to me it's either blue and gold sausage which is made in Oklahoma or Potters packs of flavors as that's beginning to Brown and I think y'all might have seen me I didn't diced up a white onion and a poblano pepper chopped up well that's close enough really what's the difference chopped is where you'd like to chopping weeds in the garden no diced is when you cut a vegetable up to put in something that's what I'm doing so and there's always dice that you can roll but we ain't rolling these try to get everybody in there if they'll go you need to keep stirring this pretty regular we're going to go ahead and cook this probably I'd say four to five minutes more till the sausage all Browns up really good and them onions get softer and that poblano but uh I don't think the poblanos really got that much heat into it Shannon will beg to differ with me on occasion but they have such a great taste that they bring to this more more so than a jalapeno to me because they're they're giving you that sort of smoky flavor that you get out with it well that sausage has about browned up it got here and look at this truly goodness that I have right here it is called cream cheese you can pinch it off slice it off whatever you want to do but I do like to spread it around there and incorporate it just a little bit to where it's a little easier to stir up that away me like a paper towel no that's what aprons was made for anyway in my line of work there was anything from wiping your nose to Gathering the eggs in so get that cream cheese in there don't get it on yourself you'll get in trouble just get it stirred up really well to where all this gets smooth it's going to give that a rich flavor it is I like that creamy texture that it's going to bring about y'all know what these are everybody raise your hand that knows what they are Duggar's got both hands up right over here out of boy duker he knows that they're cackle berries yes he does and folks I need four of them so oh that one jumped right in there it wanted to be first it did give them a little whip here if you want to make this creamier and richer than what it is do like our scrambled egg video that we have ADD you about two tablespoons of mayonnaise and whip it up really well here you ain't gonna go wrong there so got the fire we're going to crank it down to low stir this cream cheese in this sausage one more time here go the cackle berries we just want to get them in there to where they are cooking and get done half a cup of shredded cheddar because we need some more binding agent to hold all that in there because sometimes when you get after an enchilada all that stuff want to run out the end before you get a bite so we're just going to let this go till it melts in there really well you haven't seen me season this any at all to me sausage is a meat that doesn't ever need any salt on it but we are going to use our chili seasoning folks because it's going to give this more of that rich Mexican flavor that I want give it a good stirring because we don't want none of them eggs to burn make sure you're watching your heat so we're going to take this folks without burning your fingers and we're gonna we're gonna have to run fast to that table soon here we go real fast don't take long look at that when it don't before you go to putting these little enchiladas together make sure that you warm your tortillas now you can do this in the microwave it don't take long but it's so much more flavor if you'll just put it on medium low heat add your little butter just you're not Browning them you're just making them what pliable so they will roll up so to get this process started let's just see they're just good because you try to roll one that ain't warmed up it's just gonna crack and fall apart I would say you probably put about two tablespoons in there and you can see how that rolled up but before we start that process enchiladas have enchilada sauce right now I love to use our salsa because folks it has got such a great dried chili blend in it and it's not really chunky tomato it's all sort of smoothed out you can use enchilada sauce but I would highly recommend child proof labels oh my gosh and just pour you a little bit of this in the bottom now do not do this in a dutch oven that is not seasoned okay because there is some acid in there that's going to eat away at our seasoning so in those contestant number one I have so much good help out here today Cletus is in charge of quality control on tour Tia rolling [Music] now I hope you've seen while we was rolling them up that when we place them in there place them seam side down in that right Cletus Cletus gives his approval he does now the remaining salsa out of that dirt jar I just need you to pour on there evenly just sort of smooth that out to where everybody's got some of that good stuff on it now you notice I didn't use all that meat this makes about 10 and that reason is I like to crumble this what you call leftover Cletus right up here amongst it and y'all be telling yourself Aina enchilada got some cheese on it but it ain't time to put it on there yet and don't think that cheese is the last thing that's going on there that you're going to see you've got to stick around to the end of this to see what happens oh my gosh it is a delectable dish foreign [Music] [Laughter] cooking this preheat that oven to 350 degrees and you're first going to cook it 30 minutes I'm in a dutch oven on a tall trivet I have good hardwood lump colds going pretty light around the bottom about medium on top because folks we just want to cook this on the bottom and let it all really incorporate and Bubble Up through there now if you are cooking this in a dutch oven keep an eye on your heat we want pretty low heat I would say low to medium heat we want just everything to just get really soften them tortillas and let that sauce blend through there but folks I think while I'm standing here too waiting on that 30 minutes to take place out here shake it out right here Charleston that's where it was riding that fish down there just this last weekend we had a book signing down there at Yeti store and to the good Folks at Yeti for hosting all our book tours but don't think it's over we got two this week we'll be in Yukon Oklahoma Atwoods farming Ranch Center there at six o'clock on Thursday but also we'll be at the Tulsa Grill store we're teaming up with the Hasty bake folks to do a book signing nurse so don't quit me on this because we're going to add some magical goodness to it we are foreign [Music] [Music] all right [Music] that'll make you want breakfast any time of the day it will now you've seen me there after y'all been cooking this in the house 30 minutes I need you to pull it out of that oven with some oven mitts okay set it somewhere I want you to take some of that Monterey Jack cheese and just scatter all around the edges leave the middle of the road open that way it is a symbol to where you know the spatula has got a land coming into the landing strip then take that cheddar that you've shredded and just sprinkle it right down the middle that is the runway it is go ahead and get your five or six or 24 however many cackle berries you want up on top make you a little divot that is a golfing term Kent has learned on ESPN yes it is that way you've got something to hold your egg in place crack it crack it crack it crack it however many you want on there put it back in the oven and folks you need to turn your oven up about 375 and for about five minutes I like them to be really really over easy sunny side up but if you want them longer in that just keep eye on it about 10 minutes you can sort of Judge with a fork how springy they are oh I like that hmm Cinco de Mayo I'm so happy oh my gosh this is a great day I'm so sorry puppies everything was pretty spicy in here hang on we could have a corn tortilla now we do have a video to where you can make your own corn tortilla we do Biggie and Cletus is in a coma he is fixing problem that you have in your kitchen I've noticed that probably most people do not have yeah I know what that is what is it well see there's a board that's loose up here and and the birds get up there you know I mean and then the birds leave color on the tile there's bird poop rocks out I think I'm gonna get my Red Rider BB gun and I'm gonna come out here and go hunting tonight and see what I can give a bird dog no bird dogs anybody here no got arrested a rabbit dog a goat dog he's not a mouse dog yeah [Music]
