[Music] well good morning copy people we are here in st. Thomas in the US Virgin Islands as you know we've been staying on this amazing 155 foot super yacht called the Loon got some amazing friends down here and we've just been having the most amazing time of my life going down the slide swimming in the pool tarpon fishing at night and eating amazing dinners with our family but today we have a mission we're gonna go out we're gonna take our spinning rods use a little chicken rig little cubby red we're gonna catch a bunch of little bait and then we're gonna go try to catch yellowtail snapper the chef has some amazing recipe worked up for tonight but you can't do it unless he has fresh yellowtail so that is the order of the day this is my little buddy Carson right here you ready all right [Music] these are the three that we caught we call it the most of these that's called a scaled sardine that is a small goggle eye or bigeye SCAD and that is a Spanish sardine all three of them are great baits work very very well and hopefully we're able to catch some fish with them all right so we're just getting you to spot that Island over there is called cockroach this one's called cricket yesterday when we got in the water I saw a pile of really nice sized yellowtail snapper to come up here and see if we can catch him I've already thought and the ice Brian made up that's just ice in salt water anytime you're gonna catch yellowtail snapper make sure you have a brine that will cool him down super fast it'll make their meat nice and firm that's going to really improve its food quality get blood on the bottom to droppers use a whole circle hooks there's a little clear spark right from the nose that you hook them that's perfect that will allow them to swim freely and you can it right around here is perfect [Music] to beit's good to go I got a yellow Oh strawberry grouper are you kidding me oh not like a pterodactyl [Music] nice fish too I don't know what I got but all I just got eight you just got smoked by something darn it it's really important to use just enough lead to get down there but not too much and if you're doing this it's really important to use braided line so much more sensitive there's a lot of current right here so I keep paying out a little bit of line here we go get bent got it dang it nail I got smoked right there there you go got it little probably you yellow tail right here what are we God yellowtail snapper boys and girls that's what we're after just instantly that just locks him up Oh it'll be nice and cold whoa Oh My gods smoked right there nice fish oh yeah baby look at that nice that's a really nice one now let me show you what we were doing here watch this other fish in just a minute he's absolutely clear eyes nice firm perfect that's what you're looking for we got two yellowtail come on Big Daddy there you go son nice we are gonna eat the most amazing yelling oh good one right here dad coming there just got him [Music] that's what I'm talking about y'all we are what you call yanking and cranking the kids I want to catch enough that everybody me my friends the crew the dadgum chef I want everybody to eat yellowtail snapper for dinner tonight come on boys compare a snapper I don't know it's gonna be a nice fish so [Music] one I don't know I don't even know what it is yet always got me in the rock right there oh so stressful lights mice fish yeah that's good [Music] come here buddy I think it's going to be a big horse hijack I see color and I kept my Kojak there you go what a nice fish man beautiful fish boys on the boat we're gonna eat good tonight y'all mmm-hmm what a nice fish it's calling my Kojak very very very good to eat all right boys we got dinner now so just got back here and how nice and perfect all these fish look now I'll show you the best way to clean these guys take your scissors your shears come along cut them right off get that out of your way now that's nice and clean take a little scaler like this try not to get it all over this boat best night to do this with is the silver stag woods and water works amazingly well I come right through there right up through here cut that off there that in the water now we're going to come right down to the back right to the tail and then just gently fillet this fish but you don't want to go through the backbone turn it over we're gonna do the same thing here [Music] get that out of there now you have your fish we're just gonna use our shears back just like that clear that up now looking good now y'all take your knife cut out your your rib bones and then the last thing make sure you cut out your pin bones but when I do that I try not to cut through the skin I just sort of filet them off that is a beautifully butterflied yellowtail snapper now I'm going to show you how to clean one of these Alma kojak's real quick cut them at the back of the tail [Music] this will fall falling right up you're gonna see some beautiful me now y'all there you go take that knife call that back home all the way down there [Music] take him so now you have that beautiful piece of fish you're gonna come right down that center line that is a gorgeous gorgeous piece of fish all right you guys so check this out this is chef Cornelius amazing show one thing I love about you is your presentation is so spot-on and your knife is clearly nitro sharp yeah I'm going to knock the medium heat to medium high heat and I use Dior clarified butter clarified butter yep and season the skin whole I sometimes [Music] goodbye fish weights but oh I love that just press it down like it on this is a little pet called a coyote black garlic aioli yeah and then this is just some arugula that off dress with a lemon wheel and some flaky salt that I specifically had them cook your yellow tell me oh really yeah we specifically haven't cooked your yellowtail that's my alma Kojak do we have a good time on one yeah I mean I sure do appreciate you and your family inviting us down here it's been
