so today i'm going to make a layered enchilada dish this is not authentic enchiladas and i'm using one of two sauces that i created earlier in the day i already posted the video for homemade red enchilada sauces i'm using the gravy style one and i'll show you in this video how i did it but i'll also link my enchilada sauce recipe video below i'm going to season the ground beef with taco bell seasoning and i'm going to add some cheese sauce in between the layers it's so good this is not anything traditional or authentic but it's just beefy cheesy goodness so here we go first i'm going to start with the enchilada sauce and i'm taking a page right out of my cookbook here are the ingredients that i will be using for this chili enchilada sauce style gravy and you can also check the description below so what i'm going to do is add a quarter cup of cooking oil to a preheated pan that i have over medium heat and now i'm going to sprinkle in a quarter cup of all-purpose flour i'm just going to take a whisk and combine well next i'm going to add two tablespoons of chili powder and this is not spicy this is actually a chili powder spice blend here i added one teaspoon of garlic powder a teaspoon of onion powder and a quarter teaspoon of ground cumin i'm just going to give that a good mix and combine now i'm going to add one tablespoon of chicken bouillon powder you could also use beef little by little i'm going to add two cups of water you just want to combine to make sure that no lumps are in your sauce and once it's all combined you'll want to bring to a gentle simmer until thickened and turn off the heat and then you can set it aside until you're ready to use it okay so i'm going to be adding ground beef to this layered enchilada dish so i'm starting with a cold pan i'm adding one pound of lean ground beef and now i'm going to turn on the heat to a medium-high heat and start to break apart the meat and cook it now i'm going to add taco seasoning you can season your ground beef however you like i'm going to go with a taco bell style taco seasoning mix i'm just going gonna mix this in combine well and now i'm going to add three quarters of a cup of water give it a mix let it simmer for about 10 to 15 minutes and then it's done turn off the heat and set aside until i'm ready to use it i'm going to be using around a cup and a half of cheese sauce you could use store-bought cheese sauce make it how you like it the other day i posted a video using cheese sauce so i had some left over and that's what i'm using in this recipe today but here are the ingredients and measurements for how i made the entire cheese sauce recipe eight ounce block of velveeta cheese four ounces of sour cream a third cup of whole milk some paprika onion powder i gave it a mix and it was done i'm going to use a cup and a half of that here i have my sauce ready to go and it's easier if you pour it into a measuring cup it makes it easier to just pour and layer as you create this dish i'm also going to be using 12 corn tortillas these are cold i didn't reheat these at all these are just cold corn tortillas i cut some to fit along my baking dish here i have four ounces of shredded cheese use the cheese of your choice today i'm going with mozzarella so i'm going to add a small portion of my sauce to the bottom kind of spread it around and just place your corn tortillas as the first layer if you're using a 9x13 baking dish you're probably going to get around two layers for this recipe i'm using a smaller 2.3 quart baking dish so i can do about three layers of this so i added my sauce corn tortillas part of my ground beef mixture a little bit of my mozzarella cheese i'm going to drizzle on and add the cheese sauce all over the top and then i'm going to go and drizzle some of my enchilada sauce and then you just repeat the process for all of the layers [Music] so [Music] okay so my layered enchiladas are assembled i'm going to cover with foil and bake covered at 375 degrees fahrenheit for 35 to 40 minutes i suggest baking this cupboard because it will dry out if you uncover it and even if you want to get a cheese crust it'll end up drying out so this is why i like to bake it covered so now that my enchilada dish is done i'm going to place it on the counter i'm going to carefully uncover this be careful because steam does escape and i'm going to set and cool for 15 to 20 minutes this is important because if you don't cool it'll slide all over the place when you cut and serve so i'm going to cut into this it's been about 15 minutes it might still need time to set but i want to show you a slice of this and you could also use ground turkey as your ground meat in this or shredded chicken and you definitely can top this with extra sour cream you can do salsa pickled jalapenos it all works and it's so good [Music] i hope you give this recipe a try i hope you like it and thanks for watching [Music] you [Music]
